Maida biscuits or spicy diamond cuts is one of the popular Diwali snack recipe in India. Its a easy & quick to make snack recipe that tastes absolute divine. Ingredients

Wheat flour - 1 cup

Maida flour - 1 cup

Ghee or butter - 2 tbsp

Cumin seeds - 1/2 tsp

Red chilli pwd - 3/4 tsp

Chat masala pwd - 1/4 tsp (optional)

Sesame seeds - 1/2 tsp

Hing or asafoetida pwd - a generous pinch

Salt to taste

Oil to deep fry

Instructions

1.

Add wheat flour, maida flour, red chilli pwd, salt, asafoetida pwd, sesame seeds, cumin seeds in a mixing bowl.

2.

Mix well.

3.

Add water little by little and knead to smooth dough as shown in video.

4.

Add ghee or butter and knead.

5.

Let the soft dough rest for 5 mins.

6.

Make small balls out of the dough.

7.

Take one ball and pat it flat.

8.

Dust with flour and roll to thin round disc.

9.

Now slice it to perfect diamond or square shapes with a pizza cutter or knife (refer above video)

10.

Separate them and take the slices aside and set ready.

11.

Heat oil in frypan.

12.

Once the oil is hot, add the slices in hot oil.

13.

Deep fry in medium flame, until the spicy diamond cuts are crispy & golden on both sides.

14.

Drain from oil in kitchen tissue.

15.

Crispy, spicy delicious snack is ready to munch on with steaming hot cup of coffee/tea!
