Today am sharing the video recipe which explains how to prepare restaurant style flavorful vegetable kurma at home.This quick & easy main course recipe is a stew of assorted veggies cooked in a thick spicy flavorful coconut based gravy. It makes a great side dish for chapati, roti, idiyappam, etc. This Indian dish is loved all over the world and make sure you prepare plenty of this mild, creamy flavorful kurma, so as to relish with the dinner breads like chapati, roti, etc!

Ingredients

  • Vegetables (carrot, beans, drumstick, cauliflower, peas, potato, etc)
  • Onion - 2
  • Tomato - 1
  • Green chilli - 3
  • Grated coconut - 1/2 cup
  • Cashewnuts - 6
  • Ginger garlic paste - 1 tbsp
  • Oil - 1 tbsp
  • Bay leaf - 1
  • Cumin seeds - 1/2 tsp
  • Cinnamon - 1
  • Cardamom - 2
  • Cloves - 3
  • Marathi moggu - 1
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Coriander pwd - 1 tsp
  • Saunf pwd - 1/2 tsp
  • Salt to taste
  • Fresh coriander leaves

Method

  1. Wash and slice all the vegetables.
  2. Slice onions, tomato, green chilli and keep ready.
  3. In a blender, add grated coconut, cashewnuts and green chilli.
  4. Add 1/4 cup of water and grind to smooth paste.
  5. Heat oil in frypan.
  6. Add cumin seeds, bay leaf, cinnamon, cardamom, marathi moggu and cloves.
  7. Wait to splutter.
  8. Add sliced onions and toss until light brown.
  9. Add ginger garlic paste and toss.
  10. Add sliced tomato and cook until soft.
  11. Add turmeric pwd, red chilli pwd, salt, coriander pwd, saunf pwd and saute the masala.
  12. Add the sliced vegetables.
  13. Add 1 cup of hot water and cook covered.
  14. Once the veggies are done, add the freshly ground coconut paste.
  15. Mix well and let it boil for few minutes.
  16. Taste and adjust salt and seasonings.
  17. Turn off flame.
  18. Garnish with freshly chopped coriander leaves.
  19. Delicious restaurant style vegetable kurma is ready.
  20. It makes a healthy combo with roti, chapati, paratha, idli, dosa or even with rice dishes.

Coriander Chicken Recipe / Dhaniya Chicken - Easy Video Recipe

Here comes the simple, aromatic, coriander chicken recipe that makes a divine combo with dinner roti, paratha, etc. This dish is extremely flavorful loaded with the goodness from fresh coriander leaves. This can be made extra hot with a sprinkling of red chilli flakes in addition to the green chillies added. Try this inviting chicken curry with coriander leaves as the star ingredient.

Ingredients

To marinate:

  • Chicken - 1/2 kg
  • Turmeric pwd - 1/4 tsp
  • Ginger garlic paste - 1 tbsp
  • Salt to taste

To cook curry:

  • Oil - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Bay leaf - 2
  • Cinnamon - 1
  • Cardamom - 2
  • Cloves - 4
  • Onion - 2
  • Coriander leaves - a bunch
  • Green chilli - 4 to 5
  • Cashewnuts - 8
  • Salt to taste

Method

  1. Clean and wash chicken.
  2. Drain water completely.
  3. Take chicken in a bowl.
  4. Add turmeric pwd, ginger garlic paste, salt, yoghurt and mix.
  5. Let the chicken marinate for 30 mins.
  6. Meanwhile soak cashewnuts in 1/4 cup of water for 10 mins.
  7. Add to blender.
  8. Grind to smooth paste by adding few tsps of milk.
  9. Set the cashewnuts paste aside.
  10. Now add green chilli and coriander leaves to blender.
  11. Add 2 tbsp of water and grind to smooth paste.
  12. Set it aside.
  13. Heat oil in frypan.
  14. Add cumin seeds, bay leaf, cinnamon, cardamon and cloves.
  15. Wait to splutter.
  16. Add sliced onions and saute until light brown by adding 1/2 tsp of salt.
  17. Add marinated chicken and cook covered in medium flame.
  18. If required add 1/4 cup of water for cooking chicken.
  19. Once the chicken is done, add the coriander paste and saute.
  20. Cover and cook in low flame for 5 mins.
  21. Now add cashewnuts paste and cook for few more mins.
  22. Taste and adjust salt and seasonings.
  23. Turn off flame.
  24. Creamy delicious Coriander chicken with irresistable aroma is ready.
  25. Enjoy hot with roti, paratha, naan, etc.

How to clean Prawns properly before cooking :

Prawns are one of the healthy delicious seafood which is a favorite of all non veg lovers. Even though cleaning prawn is a time consuming process, its a must to devein the prawns before cooking. Today, I am here with a easy to follow  video tutorial of how to clean the prawns quickly & perfectly.

Ingredients

  • Prawns - as required

Method

  1. Clean and wash prawns thoroughly.
  2. Take prawn and twist & pull the head from the prawn body. (as shown in video)
  3. Now gently squeeze the prawn body and peel the shell from the base to the tail.
  4. Next to remove the veins, make a slit on the upper flesh of the prawn with a sharp knife.
  5. Remove the dark colored vein completely. ( also you can scrape the flesh lightly & pull off the vein)
  6. Wash the prawn and set aside.
  7. Repeat the same for all prawns.
  8. Now prawns are ready to cook for curry, fry, barbique, salad or for seafood platter.
  9. Enjoy!

Note:

  • To take off the fish smell & clean hands, dip it in a bowl of water with few drops of fresh lemon juice.
