Crispy Medu Vada

Medu Vada is one of the traditional healthy food of South India, quite popular for its crispy deliciousness. Its one of everyone's favorite snack and most of us consider breakfast not fullfilling without medu vada along with pongal, idli, dosa, etc. It tastes irresistable with soft interior and crispy exterior texture. It isn't hard to prepare this healthy delicacy at home. Here is the easy video recipe, enjoy!!

Ingredients

To make Vada

  • Urad dal - 150 g
  • Sliced onions - 1/2 cup
  • Sliced green chilli - 1 tsp
  • Grated ginger - 1 tsp
  • Hing / asafoetida pwd - 1/2 tsp
  • Salt to taste
  • Oil to deep fry
  • Curry & coriander leaves

Method

           Wash and soak urad dal in 3 cups of water for 1 hour.
  1. Drain water from the soaked urad dal.
  2. Add to blender.
  3. Add salt and grind to coarse paste.
  4. Add few tsps of water and grind to smooth & fluffy paste. (take care not to add more water while grinding, else the batter becomes watery)
  5. Add the smooth batter to mixing bowl.
  6. Add chopped curry and coriander leaves, sliced onions, green chilli, ginger, hing and combine.
  7. Heat oil in frypan.
  8. Wet your hands with water and take a small portion of the batter.
  9. Pat it flat and make a small dent at the centre as shown in video.
  10. Drop it carefully in hot oil.
  11. Deep fry in medium flame.
  12. Flip to other side and deep fry until the vadas are crispy and golden in both sides.
  13. Drain in kitchen tissue.
  14. Crispy delicious vadas are ready.

Onion Chutney Recipe 

A very famous spicy tangy onion chutney recipe from Andhra cuisine. This lovely chutney makes a divine combo with idli, dosa, uttapam, pongal, chapati, upma, kichdi, etc. For preparing this chutney, coconut is not required and tastes great with tempting onion aroma. Ingredients

  • Gingely oil - 1 tbsp
  • Urad dal - 1 tbsp
  • Chana dal - 1 tbsp
  • Red chilli - 3 to 4
  • Onions - 2 to 3
  • Tomato - 1 big
  • Cioriander leaves
  • Salt to taste

To temper

  • Oil - 1 tsp
  • Mustard - 1/4 tsp
  • Cumin - 1/4 tsp
  • Split urad dal - 1/2 tsp
  • Hing or asafoetida pwd - a generous pinch
  • Salt to taste
  • Curry leaves

Method

  1. Heat gingely oil in frypan.
  2. Add urad dal and chana dal.
  3. Saute until golden.
  4. Add red chilli, sliced onions, tomato, coriander leaves, salt and saute.
  5. Cover and cook for a minute.
  6. Turn off flame and allow to cool.
  7. Add to blender and grind to smooth paste.
  8. Transfer to serving bowl.
  9. To temper, heat 1 tsp of oil in small frying pan.
  10. Add mustard, cumin, split urad dal, curry leaves, hing and saute.
  11. Once it starts spluttering, turn off flame.
  12. Add the tempering to chutney and mix.
  13. Healthy, spicy hot onion chutney is ready.
  14. It serves great along with idli, dosa, chapati, paratha, snacks, etc.

Ingredients

  • Basmati rice - 1 & 1/2 cups
  • Olive oil or any cooking oil - 2 tbsp
  • Grated garlic - 1 tsp
  • Sliced vegetables (carrot, onion, cabbage, beans, spring onions, etc) - 1 bowl
  • Schezwan sauce - 2 tbsp
  • Soya sauce - 1 tsp
  • Vinegar - 1/2 tsp
  • Tomato ketchup - 1 tbsp
  • Salt to taste

Method

  1. Wash & soak basmati rice for 5 mins.
  2. Cook the basmati rice and set aside.
  3. In a frypan, heat oil.
  4. Add grated garlic and saute.
  5. Add sliced onions, cabbage, carrots, spring onions, beans and saute. (you can add any vegetables of your choice)
  6. Toss in high flame.
  7. Add schezwan sauce and toss. (click here to view how to prepare schezwan sauce at home)
  8. Add soya sauce, vinegar, salt and tomato ketchup.
  9. Mix and allow to cook.
  10. Add cooked basmati rice and toss in high flame for 2 mins.
  11. Garnish with sliced spring onions and turn off flame.
  12. Flavorful, spicy hot and delicious restaurant style schezwan fried rice is ready!
  13. Enjoy hot with any curry of your choice.
