Ingredients

  • Chicken pieces - 300 g
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1 tsp
  • Coriander pwd - 2 tsp
  • Cumin pwd - 1/2 tsp
  • Pepper pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Lemon juice - few drops
  • Ginger garlic paste - 1 tbsp
  • Besan flour - 4 to 5 tbsp
  • Rice flour - 1 tbsp
  • Corn flour - 1 tbsp
  • Fresh curry & coriander leaves
  • Oil to deep fry
  • Salt to taste

Method

  1. Clean and wash chicken pieces.
  2. Drain water thoroughly.
  3. Take chicken pieces in a mixing bowl.
  4. Add turmeric pwd, red chilli pwd, salt, coriander pwd, cumin pwd, pepper pwd, garam masala pwd, 1 tsp of oil and lemon juice.
  5. Mix completely and allow the chicken to marinate for 30 mins.
  6. Its time to add ginger galic paste, besan flour, rice flour, corn flour and finely chopped curry and coriander leaves.
  7. Coat the chicken well with spicy masala.
  8. Heat oil in frypan.
  9. Drop the chicken carefully in hot oil.
  10. Deep fry the chicken in batches and dont overcrowd the oil.
  11. Deep fry in medium flame until the chicken is crispy and golden brown.
  12. Add some curry leaves and slit green chilli to hot oil and fry for few seconds.
  13. Now drain the chicken along with curry leaves and green chilli in kitchen tissue.
  14. Crispy delicious restaurant style spicy chicken pakora is ready.
  15. Enjoy hot with any dip of your choice.

Ingredients

  • Eggs - 3 to 4
  • Oil - 1 to 2 tsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Pepper pwd - 1/4 tsp
  • Cumin pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Sliced onions -  1/4 cup
  • Sliced tomato - 2 tbsp
  • Sliced capsicum - 1 tbsp
  • Green chilli - 1
  • Chopped mint & coriander leaves - 1/2 cup
  • Salt to taste

Method

  1. In a mixing bowl, add turmeric pwd, red chilli pwd, pepper pwd, cumin pwd, salt, garam masala pwd and 1/4 cup of water or milk.
  2. Stir well to mix.
  3. Beat eggs directly into the bowl.
  4. Whisk to smooth mixture.
  5. Add sliced onions, tomato, capsicum, green chilli, mint and coriander leaves.
  6. Add a tsp of oil and combine well.
  7. Heat 1 tsp of oil in frypan.
  8. Add 2 to 3 ladles full of spicy egg mixture to the hot pan and spread to dosa shape.
  9. Keep flame in low and cook for 2 to 3 minutes.
  10. Drizzle oil to sides and flip the omelette to other side carefully.
  11. Cook for a minute and turn off flame.
  12. Take it in serving plate and garnish with finely chopped coriander leaves.
  13. Healthy flavorful delicious masala omelette is ready.

Ingredients

  • Olive oil - 1 tbsp
  • Grated garlic - 1 tsp
  • Grated ginger - 1 tsp
  • Chopped spring onions - 1/2 cup
  • Onions sliced - 1/4 cup
  • Sliced vegetables (carrot, beans, cabbage, capsicum, peas, cauliflower, sweetcorn, etc) - 1 big cup
  • Black pepper pwd - 1/4 tsp
  • Red chilli flakes - 1/4 tsp
  • Soya sauce - 1 tbsp
  • Vinegar - 1 tbsp
  • Red chilli sauce - 1 tsp
  • White pepper pwd - 1/2 tsp
  • Sugar - 1/2 tsp
  • Corn flour - 1 tbsp
  • Salt to taste

Method

  1. Heat olive oil in frypan.
  2. Add grated garlic and saute till light brown.
  3. Add grated ginger and toss for few seconds.
  4. Add finely chopped spring onions and toss.
  5. Add sliced onions and saute in medium flame until transculent.
  6. Add finely chopped veggies like cabbage, beans, carrot (you can add any veggies of your choice) and sweet corn & peas.
  7. Saute well.
  8. Add salt, red chilli flakes and pepper pwd.
  9. Stir well.
  10. Add 3 cups of hot water and cook the vegetables in pan covered for 2 minutes.
  11. Take care not to overcook the vegetables.
  12. Now add sliced capsicum and cook for a minute.
  13. Add soya sauce, vinegar, red chilli sauce, sugar and white pepper pwd.
  14. Mix well.
  15. Make a thin paste of 1 tbsp of corn flour with 1/2 cup of water.
  16. Add corn flour paste to the soup and stir good.
  17. Allow to cook for 2 more minutes and turn off flame.
  18. Sprinkle freshly chopped spring onions.
  19. Transfer to serving bowl.
  20. Garnish with fried noodles.
  21. Flavorful delicious healthy restaurant style veg manchow soup is ready.

Here comes the healthy delicious breakfast recipe Wheat puttu. This Gothambu puttu or soft wheat puttu is a steamed non-fat dish and made with whole wheat flour and shredded coconuts. Everyone in my family loves puttu and its a regular weekend breakfast with a combo of kadala curry or any spicy chicken curry. This traditional kerala dish can also be made with rice flour. So, lets see how to prepare this healthy dish with simple video recipe!

Ingredients

  • Wheat flour - 200 g
  • Grated coconut - 1 cup
  • Water - as required
  • Salt to taste

Method

  1. Take wheat flour in a mixing bowl.
  2. Add salt and mix.
  3. Spriinkle water little by little and knead to sticky consistency.
  4. The batter consistency should be moist as shown in video.
  5. Cover and let it sit for 5 minutes.
  6. Grate fresh coconut to fine shreds.
  7. Now take the puttu maker mould, add 1 to 2 tbsp of grated coconut.
  8. Then add 3 tbsp of wet wheat flour on top of it.
  9. Add alternatively grated coconut and wheat flour until the mould is filled.
  10. Now close the lid of mould.
  11. Meanwhile heat water in pressure cooker.
  12. Place the puttu maker on the pressure cooker nozzle or vent.
  13. Let the puttu steam cook for 10 to 12 minutes.
  14. Turn off flame and let it cool.
  15. Open the lid and insert a skewer from the backside of the puttu maker slowly.
  16. Flavorful, healthy and delicious wheat puttu is ready.
  17. It makes an excellent combo with kadala curry, pappad and ripe bananas.

Ingredients

To Marinate:

  • Chicken legs - 6
  • Red chilli pwd - 1/2 tsp
  • Pepper pwd - 1/2 tsp
  • Fresh lemon juice - 1 tsp
  • Salt to taste

To Fry Chicken

  • Egg - 1
  • Milk - 1/4 cup
  • All purpose flour - 3 tbsp
  • Garlic pwd - 1 tbsp
  • Onion pwd - 1 tbsp
  • Red chilli pwd - 1/2 tsp
  • Bread crumbs - 2 tbsp
  • Oats - 1 tbsp
  • Salt to taste

Method

To marinate

  1. Clean and wash the chicken legs.
  2. Dont remove the skin of the chicken (for fried chicken recipe, the skin enhances the crisp texture)
  3. Sprinkle salt, red chilli pwd and pepper pwd.
  4. Squeeze few drops of fresh lemon juice and mix completely.
  5. Let the chicken legs marinate for 2 hours.

Lets prepare 2 bowls of ingredients:

1 bowl:
  • Beat an egg. Add milk and whisk to smooth mixture.
  • Set it aside.
2 bowl:
  • Add all purpose flour, garlic pwd, onion pwd, salt, red chilli pwd, bread crumbs & oats.
  • Mix completely and set aside.

To coat the Marinated Chicken

  1. Now take the marinated chicken, roll in flour mixture (bowl 2)
  2. Dip in egg mixture (bowl 1)
  3. Again roll in flour mixture and set aside as shown in video
  4. Repeat the same for all the marinated chicken leg pieces.

To Fry Chicken

  1. Heat oil in frypan.
  2. Once the oil is hot, add the coated chicken pieces.
  3. Fry the pieces in batches and take care not to over crowd the oil.
  4. Deep fry until the chicken is crispy and golden on both sides.
  5. Drain in kitchen tissue.
  6. Crispy delicious homemade kfc style fried chicken is ready.
  7. Enjoy hot with garlic sauce or any dip of your choice.

  • Beetroot - 2 to 3
  • Ghee - 4 to 5 tbsp
  • Milk - 1 cup

  • Cardamom pwd - 1/2 tsp
  • Cashewnuts - 8 to 10

Method

  1. Clean and peel off the skin of beetroot
  2. Grate to fine shreds.
  3. Heat ghee in pan.
  4. Add cashewnuts and saute to golden.
  5. Drain and set aside.
  6. Add 2 tbsps of ghee to same pan.
  7. Add the grated beetroot and saute in low flame.
  8. Cover and cook for 10 mins.
  9. Stir and add milk.
  10. Cover and cook for another 10 mins.
  11. Now you can see the beetroot is completely cooked and soft.
  12. Add cardamom pwd and sugar.
  13. Stir well.
  14. The sugar dissolves and the mixture starts thickening.
  15. Stir once in a while until the halwa starts leaving the sides of the pan and reaches rolling consistency as shown in video.

This makes a divine recipe during hot summer days. I used to prepare at home frequently as its a favorite dish of everyone. In this recipe, the deep fried crispy vadai are immersed in warm water and then soaked in spicy flavored thick curd and garnished with grated carrot and boondhi. Ingredients

To make Vada:

  • Urad dal - 1 & 1/2 cups
  • Green chilli - 1 or 2
  • Grated ginger - 1 tsp
  • Onion - 1
  • Curry & coriander leaves 
  • Salt to taste
  • Oil to deep fry

To make Spiced curd:

  • Thick curd or yoghurt - 2 cups
  • Green chilli - 1
  • Grated ginger - 1 tsp
  • Cumin - 1/2 tsp
  • Salt to taste

Method

To Make Vada

  1. Wash & soak urad dal in water for minimum 1 hour.
  2. Drain water completely.
  3. Add to blender and add salt.
  4. Sprinkle few tsps of water and grind completely to smooth batter.
  5. Transfer to bowl.
  6. Add finely sliced onions, green chilli, coriander and curry leaves.
  7. Mix well.
  8. Vada batter is ready.
  9. Heat oil in fry pan.
  10. Wet your hands in water.
  11. Take a small ball of batter and pat it flat.
  12. Make a small dent in the centre as shown in video.
  13. Drop them carefully in hot oil.
  14. Deep fry in medium flame.
  15. Fry until the vadas are crispy and golden on both the sides.
  16. Drain from oil.
  17. Crispy delicious vadais are ready.
  18. In a small bowl, add warm water.
  19. Add the crispy vadas to the water and let them soak in water for 5 mins.(this enhances the vada to turn spongy and soft)
  20. Squeeze the excess water and set the vadais in serving plate.

To prepare Spicy Curd:

  1. In a blender, add green chilli, grated ginger and cumin.
  2. Add thick yoghurt or curd, salt to blender.
  3. Grind to smooth consistency.
  4. In a small pan, add 1 tsp of oil.
  5. Add mustard, cumin, split urad dal, hing/asafoetida pwd, curry leaves and wait to splutter.
  6. Add this to curd and mix.
  7. Spicy Curd is ready.

To make Thayir Vadai:

  1. Take the soaked soft vadais in serving plate.
  2. Add spiced curd over the vadas.
  3. Add enough curd so that the vadas are soaked completely.
  4. Sprinkle finely chopped coriander leaves.
  5. Garnish with grated carrots and karaboondhi snack.
  6. Colourful, yummy delicious homemade traditional Thayir Vadai is ready.
  7. Enjoy chilled or as you like.
  8. It makes a filling & healthy snack for kids as well as adults.

Ingredients

To Marinate:

  • Mutton pieces - 1/2 kg
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Ginger garlic paste - 1 tsp
  • Garam masala pwd - 1/2 tsp
  • Yoghurt - 1 tbsp
  • Salt - 1/2 tsp

To make Mutton Curry:

  • Oil - 2 tbsp
  • Cumin - 1/2 tsp
  • Pepper - 1/2 tsp
  • Bay leaf - 1
  • Cinnamon - small stick
  • Cloves - 4
  • Green chilli - 1
  • Red chillil - 2
  • Onion - 2
  • Tomato - 2
  • Ginger garlic paste - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1 tsp
  • Coriander pwd - 2 tsp
  • Pepper pwd - 1/2 tsp
  • Saunf pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Mutton masala pwd (optional) - 1/2 tsp
  • Dried fenugreek leaves - 1/2 tsp
  • Fresh coriander leaves
  • Fresh curry leaves
  • Salt to taste

Method

  1. Clean and wash mutton pieces.
  2. Drain water thoroughly.
  3. Marinate with turmeric pwd, salt, red chilli pwd, ginger garlic paste, garam masala pwd and yoghurt.
  4. Mix well and allow to marinate for 30 mins minimum.
  5. Heat cooker pan.
  6. Add oil and heat it.
  7. Add cumin, pepper, bay leaf, cinnamon and cloves.
  8. Wait to splutter.
  9. Add curry leaves, red chilli, green chilli and toss.
  10. Add sliced onions, salt and toss until light brown.
  11. Add ginger garlic paste and saute further.
  12. Add sliced tomatoes and cook till soft.
  13. Add marinated mutton and mix well with masala.
  14. Allow to cook for 5 mins in low medium flame.
  15. Add turmeric pwd, red chilli pwd, coriander pwd, pepper pwd and saunf pwd.
  16. Combine the masala well.
  17. Add finely sliced mint & coriander leaves.
  18. Add 1/2 cup of water and mix.
  19. Close the cooker and cook until the mutton is tender and done. (I usually cook for 4 whistles in high flame and simmer flame for 10 more mins)
  20. Once the pressure goes off, open the lid and stir the mutton curry.
  21. Add garam masala pwd, mutton masala pwd and dried fenugreek leaves.
  22. Taste and adjust salt.
  23. Allow the curry to cook until it reaches thick desired consistency.
  24. Turn off flame.
  25. Sprinkle curry and coriander leaves.
  26. That's it flavorful delicious mutton curry is ready.
  27. Transfer to serving bowl.
  28. Enjoy hot with idli, dosa, chapati, roti or with biryani and other rice dishes.

The word "Mysore Pak" makes everyone with sweet tooth go crazy about it. Its a very popular, rich, melt-in-mouth dessert from South Indian cuisine. Just it requires more attention and patience to prepare this traditional sweet at home with only three ingredients besan flour, sugar and ghee. Trust me its quite tricky but simple to prepare it. Here am sharing the easy video version of Mysore pak recipe, that tastes super soft and just melts in mouth.

Ingredients

  • Besan flour - 1 cup
  • Sugar - 1 & 1/4 cup
  • Ghee - 3/4 to 1 cup 

Method

  1. Heat a tsp of ghee in frypan.
  2. Add besan flour and roast in low flame until nice, rich aroma arises from besan flour. (approx 5 mins)
  3. Turn off flame.
  4. Seive the besan flour to remove the lumps.
  5. Take it in a mixing bowl.
  6. Add ghee little by little and mix to smooth paste. ( the batter should be in pouring consistency like shown in video)
  7. Take a tray and grease it with oil or ghee and keep ready.
  8. Now lets start preparing sugar syrup.
  9. Add sugar to frypan.
  10. Add just enough water to immerse the sugar.
  11. Heat it in low flame with continous stirring.
  12. Keep stirring until the sugar syrup reaches one-strand consistency.
  13. Now add the besan flour paste and continue stirring in low flame.
  14. Add the remaining ghee little by little and stir.
  15. Once the mixture reaches rolling consistency, turn off flame.
  16. Add the besan mixture to greased tray.
  17. Flatten it on top.
  18. Allow to cool for 5 minutes or until firm.
  19. Now slice to square or rectangle pieces.
  20. Let it cool for another 10 minutes.
  21. Lipsmacking delicious homemade ghee mysore pak is ready.

Curry Leaves Chutney Recipe 

Today's recipe is one of the delicious & healthy chutney recipe from one of the staple herb (curry leaves) of Indian cuisine. This chutney is very popular as it imparts special flavor and highly nutritious. We know curry leaves are loaded with carbohydrates, fibre, calcium, phosphorous, iron, and vitamins. It is very helpful to increase metabolism, digestion and good functioning of heart. It fights infection and enlivens your hair and skin vitality. So its highly beneficial to make this curry leaves chutney often at home and it pairs up excellent with breakfasts like idli, dosa, upma, pongal, kichdi, paratha etc. Lets see how to make curry leaves chutney with this easy video recipe!

Ingredients

  • Curry leaves - 1 cup
  • Oil - 2 tbsp
  • Urad dal - 2 tbsp
  • Cumin - 1/2 tsp
  • Toor dal - 1 tsp
  • Gram dal - 2 tsp
  • Grated ginger - 1 tsp
  • Red chilli - 3 to 4
  • Tamarind - a small piece
  • Grated coconut - 1/2 cup
  • Salt to taste

To temper:

  • Oil - 1 tsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Hing - a pinch
  • Red chilli - 1
  • Curry leaves - a few

Method

  1. Clean and wash curry leaves.
  2. Heat oil in frypan.
  3. Add urad dal and saute till light brown.
  4. Add cumin, toor dal and gram dal.
  5. Saute for a minute.
  6. Add grated ginger, red chilli and tamarind.
  7. Toss good.
  8. Add curry leaves and salt.
  9. Saute in medium flame until the curry leaves shrinks.
  10. Turn off flame and allow to cool.
  11. Meanwhile grate coconut to fine pieces.
  12. Add to blender and grind to shreds.
  13. Add the curry leaves mixture to the blender.
  14. Grind to coarse mixture.
  15. Now add enough water (approx 1/2 cup) to blender and grind to smooth paste.
  16. Transfer to serving bowl.

To temper:

  1. Heat oil in small frypan.
  2. Add mustard, cumin, split urad dal, curry leaves, hing and red chilli.
  3. Wait to splutter and turn off flame.
  4. Add to chutney and mix.
  5. Yummy, healthy & flavorful curry leaves chutney is ready.
  6. It makes a delicious combo with idli, dosa, pongal, kichdi or even as a dip for snacks and spread for sandwiches.
