Veppam Poo Rasam / Neem Flower Rasam Recipe:

Veppam poo rasam is one of the healthy & famous Rasam recipe of Indian cuisine. Its extremely easy to prepare and I learnt it from my MIL. Usually the neem tree flowers during April month. We used to collect and dry it to crisp. It can be powdered and used in various dishes like pachadi, rasam etc. We know Veppam poo is loaded with healthy nutrients & medicinal properties. It is very good for digestion and stomach cleaning. Try to include this healthy soup in your diet atleast once in a week. Since the dried neem flowers are fried in ghee/ oil, you wont feel the bitterness and the rasam tastes absolutely addictive!

Ingredients


  • Neem flowers dried - handful
  • Thick tamarind juice - 1 cup
  • Tomato - 1
  • Garlic - 4
  • Red chilli - 1 or 2
  • Pepper - 1/2 tsp
  • Cumin - 1/2 tsp
  • Curry leaves - a few
  • Jaggery - 1 tsp
  • Hing / asafetida pwd - 1/2 tsp
  • Ghee - 1 tsp
  • Fresh coriander leaves
  • Salt to taste

To temper:

  • Oil - 1/2 tsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Curry leaves - a few
Health Benefits of Neem Flower:
  • Helps in improving digestive health.
  • Dried flowers are very good for eyes and used to treat eye problems.
  • It is very good for liver health.
  • It removes the unwanted toxins from the body.
  • It acts as a purifier.
  • It is very helpful in curing skin problems.
  • It is used in natural beauty creams and aromatherapy.

Method

  1. Clean and dry the neem flowers until they're crispy and done.
  2. You can store this dried neem flowers in air tight container. It has a long shelf life.
  3. To start with, soak a ball of tamarind in warm water for 20 mins and extract thick tamarind juice out of it.
  4. In a blender, add tomato, garlic, red chilli, pepper, cumin and curry leaves.
  5. Grind to coarse paste.
  6. Transfer to mixing bowl.
  7. Add tamarind juice and 3 cups of water.
  8. Add turmeric pwd, hing, jaggery and salt.
  9. Stir well.
  10. Keep in flame and allow to boil.
  11. Meanwhile heat ghee in small frypan.
  12. Add dried neem flowers and saute in low flame until golden. (be careful not to burn it)
  13. Turn off flame.
  14. Wait for the rasam to boil. (stop the flame, once the first bubble appears. If its overboiled the rasam turns bitter)
  15. Now add the ghee fried neem flowers to hot rasam and turn off flame. Enjoy the visual treat of neem flowers floats beautifully on top of the rasam & its tempting aroma.
  16. Heat 1 tsp of oil in small frypan.
  17. Temper with mustard, cumin, split urad dal and curry leaves.
  18. Pour it over hot rasam.
  19. Sprinkle freshly chopped coriander leaves.
  20. Healthy flavorful delicious Veppam poo rasam is ready.
  21. Enjoy hot with steamed rice or serves best as healthy soup.

Ingredients

  • Chickpeas / kondakadalai / garbanzo bean / chana - 1 cup
  • Cumin pwd - 1/2 tsp
  • Baking soda - 1/4 tsp
  • Garlic - 4
  • Sliced onions - 1/2 cup
  • Sliced coriander leaves - 1/4 cup
  • Salt to taste
  • Oil to deep fry

Method

  1. Wash and soak chickpeas for 5 to 6 hours.
  2. Drain water completely through a colander.
  3. Add it to blender. Add salt, cumin pwd, baking soda, garlic, sliced onions and coriander leaves.
  4. Grind to coarse paste without adding water.
  5. Transfer to mixing bowl.
  6. Heat oil in frypan.
  7. Take a small lemon sized ball out of it as shown in above video.
  8. Pat it flat.
  9. Drop in hot oil gently.
  10. Dont overcrowd the oil.
  11. Deep fry in medium flame.
  12. Once the falafel turns crispy & golden, drain from oil.
  13. Crispy delicious homemade falafel is ready.
  14. It makes an excellent combo with evening coffee or tea.

Ingredients

  • Sliced mint & coriander leaves - 1 cup
  • Sliced ginger - 1 tsp
  • Green chilli - 1 or 2
  • Cumin pwd - 1/2 tsp 
  • Chat masala pwd - 1/2 tsp
  • Oil - 1 tsp
  • Lemon juice - few drops
  • Yoghurt - 2 tbsp
  • Salt to taste

Method

  1. Wash and slice coriander leaves and mint leaves.
  2. In a blender, add mint leaves, coriander leaves, sliced ginger, green chilli, salt, cumin pwd, chat masala pwd, oil, lemon juice and yoghurt.
  3. Mix well without adding water.
  4. Blend it to smooth paste.
  5. That's it...flavorful vibrant delicious homemade green chutney is ready.
  6. It makes an excellent spread for sandwiches, dip for snacks & tandoori dishes.

Ingredients

  • Pasta or macroni - 200 g
  • Olive oil or cooking oil - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Green chilli - 1
  • Onion sliced - 1/2 cup
  • Ginger garlic paste - 1 tsp
  • Tomato - 2 big
  • Vegetables like (carrot, beans, capsicum) sliced - 1 cup
  • Red chilli pwd - 1/2 tsp
  • Onion pwd - 1/2 tsp (optional)
  • Garlic pwd - 1/2 tsp (optional)
  • Garam masala pwd - 1/2 tsp
  • Lemon juice - few drops
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Add pasta to pan.
  2. Add enough water, salt and olive oil.
  3. Stir well.
  4. Cook the pasta until it is soft. (take care not to mash it)
  5. Drain the water.
  6. Set it aside.
  7. Heat olive oil in pan.
  8. Add cumin seeds, wait to splutter.
  9. Add green chilli and onion.
  10. Add salt and saute until the onions turn light brown.
  11. Add ginger garlic paste and cook until raw smell goes.
  12. Now add the sliced veggies carrot, beans, capsicum ( you can add any vegetables of your choice) and saute.
  13. Add red chilli pwd and tomato puree. (cook tomato in hot water for 2 to 3 mins, peel off the skin and blend the tomato to puree)
  14. Mix well.
  15. Add tomato ketchup.
  16. Add garlic pwd and onion pwd (don't worry..if you don't have, just add little garam masala pwd)
  17. Stir well.
  18. Add 1/2 cup of water and cook until masala thickens.
  19. Squeeze few drops of lemon juice.
  20. Add cooked pasta and mix gently.
  21. Its optional you can add 1/4 cup of grated cheese in this step, if you're preparing for kids.
  22. Turn off flame.
  23. Sprinkle freshly chopped coriander leaves.
  24. That's it...creamy delicious Indian style tomato pasta is ready.
  25. Enjoy hot as snack or dinner.

Ingredients

  • Paneer / cottage cheese - 200 g
  • Butter - 3 tbsp
  • Cumin seeds - 1/2 tsp
  • Red chilli - 3 to 4
  • Cloves - 2
  • Cardamom - 1
  • Cinnamon - 1
  • Onion - 2
  • Ginger garlic paste - 1 tbsp
  • Tomato (big) - 2
  • Cashew - 10
  • Bay leaf - 1
  • Red chilli pwd - 3/4 tsp
  • Turmeric pwd - 1/4 tsp
  • Coriander pwd - 1 tsp
  • Garam masala pwd - 1/2 tsp
  • Sugar - 1/2 tsp
  • Dried methi (fenugreek) leaves - 1/2 tsp
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Wash and cube paneer to small pieces. Set aside.
  2. Melt butter in frypan.
  3. Add cumin seeds and wait to splutter.
  4. Add red chilli, cloves, cardamom, cinnamon and toss.
  5. Add onions, salt and fry to transculent.
  6. Add ginger garlic paste and saute.
  7. Add tomatoes and saute until soft and cooked.
  8. Add cashew and cook for a minute.
  9. Turn off flame and allow the mixture to cool.
  10. Add to blender and grind to smooth paste.
  11. Melt 1 tbsp of butter in frypan.
  12. Add bay leaf and toss.
  13. Add red chilli pwd and fry.
  14. Add the freshly ground masala paste from blender.
  15. Add turmeric pwd, coriander pwd and garam masala pwd.
  16. Add sugar and stir.
  17. Let it cook in low flame for 2 to 3 mins.
  18. Now add 1 cup of water and combine.
  19. Cook for few more minutes.
  20. Add fresh cream and combine.
  21. Add paneer cubes and simmer the flame.
  22. Cook until the masala thickens.
  23. Crush and add dried fenugreek leaves.
  24. Add a tsp of butter and turn off flame.
  25. Garnish with freshly chopped coriander leaves and fresh cream.
  26. Restaurant style rich n creamy butter paneer masala is ready.
  27. Enjoy hot with roti, paratha, chapati or any rice dishes.

  • Chana - 1 cup
  • Sesame seeds - 4 to 5 tbsp
  • Garlic - 4 to 5
  • Cumin pwd - 1 tsp
  • Olive oil - 1/2 cup
  • Lemon juice - 1 tsp
  • Salt to taste

Method

  1. Wash & soak channa in water overnight or minimum 6 hours.
  2. Drain water and add to pressure cooker.
  3. Add 1 cup of water and pressure cook until soft & tender.
  4. Drain water completely.
  5. Add to blender.
  6. Add sesame seeds, garlic, salt, cumin pwd and olive oil.
  7. Add lemon juice and blend to smooth paste.
  8. You can add 1 to 2 tbsp of water to achieve the smooth consistency.
  9. Blend until creamy & smooth.
  10. Transfer to serving bowl.
  11. Garnish with red chilli pwd and coriander leaves.
  12. Healthy delicious homemade hummus is ready.
  13. It makes an excellent dip for tandoori dishes, french fries and any snack of your choice.

PURAN POLI / HOLIGE / BOBATLU - EASY VIDEO RECIPE

Puran Poli Recipe

Today's recipe is one of the most healthy & mouth-watering puran poli. It has a tempting aroma & unique flavor with delicious soft chewy taste. It makes a perfect sweet for many festivals and special occasions. In this recipe, the mixed flour rotis are stuffed with cardamom flavored sweet lentil & jaggery filling. Ingredients

  • Gram dal / kadalai paruppu / split bengal gram / chana dal - 1 cup
  • Jaggery - 1 cup
  • Ghee - 2 to 3 tbsp
  • Cardamom pwd - 1/4 tsp
  • Wheat flour - 1 cup
  • Maida flour - 1/2 cup
  • Oil - 2 tbsp
  • Salt - a pinch

Method

Lets make inner purnam stuffing

  1. Wash and soak gram dal (kadalai paruppu) in water for 10 mins.
  2. Add it to pressure cooker along with 1 cup of water and cook until soft.
  3. Drain water and mash the cooked gram dal.
  4. Set it aside.
  5. Heat ghee in a frypan.
  6. Add mashed gram dal and saute in low flame.
  7. Add cardamom pwd and powdered jaggery.
  8. Cook until the jaggery dissolves and the mixture thickens.
  9. Turn off flame.
  10. Allow the purnam stuffing to cool.
  11. Make small balls out of it and set aside.

Lets make outer dough

  1. In a mixing bowl, add wheat flour and maida flour.
  2. Add a pinch of salt, and mix.
  3. Sprinkle water little by little and knead to smooth soft dough.
  4. Add oil and knead well.
  5. Let the dough rest for 5 mins.
  6. Divide it to equal sized balls.

Lets make poli

  1. Take one dough ball, dust with flour and roll it to small thick disc.
  2. Now stuff the purnam ball inside and seal the edges as shown in video.
  3. Roll it to thick round disc.
  4. Heat butter in frypan.
  5. Place the rolled poli and fry until it is golden on both sides.
  6. Remove from pan with a dallop of butter.
  7. Lipsmacking healthy delicious puran poli is ready.
  8. It makes a nutritious after school snack for kids.
  9. Also its a prime sweet prepared during many festivals like Diwali, Navratri, holi, etc.

Since childhood I am a seer fry fry lover and my mom prepares it often for sunday lunch. This delicious fish fry is very popular in South Indian restaurant menu. Its quite easy to prepare this authentic traditional vanjaram fish fry at home with minimal ingredients. The fish is marinated with aromatic Indian spices and shallow fried in oil to golden brown. We know this king fish is a great source of omega-3 fatty acids and packed with proteins, so makes a nutritious meal for kids. Ingredients

  1. Vanjaram / seer fish - 1/2 kg
  2. Turmeric pwd - 1/4 tsp
  3. Red chillil pwd - 1 tsp
  4. Pepper pwd - 1/2 tsp
  5. Coriander pwd - 1 tsp
  6. Cumin pwd - 1/2 tsp
  7. Lemon juice - 1 tsp
  8. Thick tamarind juice - 2 to 3 tbsp

Method

  1. Clean and wash the fish slices.
  2. In a mixing bowl, add turmeric pwd, red chilli pwd, coriander pwd, pepper pwd, cumin pwd, salt and lemon juice.
  3. Add thick tamarind juice ad mix to thick paste.
  4. Apply the masala over the fish and coat well.
  5. Allow to marinate overnight or minimum 4 hours in refrigerator.
  6. Heat oil in frypan.
  7. Add marinated fish and shallow fry in low medium flame.
  8. Fry until the fish is cooked to brown on both sides.
  9. Thats it delicious restaurant style vanjaram fish fry is ready.
  10. Enjoy hot with steamed rice or with roti dishes.

Ingredients

  • Babycorn - 200 g
  • Oil - 2 tbsp
  • Capsicum cubed - 1 cup
  • Onion - 2
  • Tomato - 2
  • Ginger garlic paste - 1 tbsp
  • Green chilli - 2
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1 tsp
  • Coriander pwd - 2 tsp
  • Cumin pwd - 1/2 tsp
  • Thick cashew paste - 2 tbsp
  • Dried kasoori methi pwd - 1/2 tsp
  • Lemon juice - few drops
  • Salt to taste

Method

  1. Wash & slice babycon and capsicum to pieces.
  2. Heat oil in frypan.
  3. Add cubed capsicum and toss for a minute.
  4. Drain and set aside.
  5. Heat oil in frypan.
  6. Add sliced onion and toss till light brown.
  7. Add green chilli, ginger garlic paste and fry for few minutes.
  8. Add mashed tomato, turmeric pwd, red chilli pwd, coriander pwd, cumin pwd and salt.
  9. Fry the masala in low flame.
  10. Add 1 cup of water and allow to boil.
  11. Add sliced babycorn and stir.
  12. Cook covered until the babycorns are cooked tender in the masala.
  13. Add thick cashew paste and dried kasoori methi powder.
  14. Mix well.
  15. Add sauted capsicum and combine.
  16. Squeeze few drops of lemon juice.
  17. Turn off flame and garnish with freshly chopped coriander leaves.
  18. Restaurant style creamy delicious babycorn masala is ready.

Serve hot with chapati, roti, paratha, naan or any bread of your choice.

Ingredients

  • Sliced vegetables - 1 cup
  • Coconut oil - 2 tbsp
  • Curry leaves - a few
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Grated coconut - 1/2 cup
  • Cumin seeds - 1 tsp
  • Green chilli - 2 to 3
  • Yoghurt - 1 cup
  • Salt to taste

Method

  1. Slice veggies like drumstick, elephant yam, brinjal, carrot, beans, pumpkin, plantain, cucumber, snakegourd, avarai, etc. 
  2. Slice them lengthwise as shown in video.
  3. Heat coconut oil in frypan.
  4. Add curry leaves and wait to splutter.
  5. Add veggies and saute for few minutes in high flame.
  6. Add turmeric pwd, red chilli pwd and salt.
  7. Add 1/2 cup of water and cook covered until soft.
  8. Grate coconut to fine pieces.
  9. In blender add grated coconut, cumin seeds and green chilli.
  10. Grind to coarse mixture without adding water.
  11. Once the veggies are cooked tender, add yoghurt and mix.
  12. Add coconut mixture and combine gently.
  13. Turn off flame by adding a tsp of coconut oil.
  14. Garnish with curry leaves.
  15. Healthy delicious kerala avial is ready.
  16. Serve avial hot with rice, sambar or any curry of your choice.

Rasam has a prime place in South Indian lunch menu. This soup is very flavorful & helps in digestion. Rasam powder or Rasam podi is available in the market from various brands, but nothing can beat the aroma of fresh homemade rasam powder. Its very simple to prepare at home with perfect combination of spices. This is my mil's measurement which I usually follow to prepare rasam powder at home. Ingredients

  • Coriander seeds - 1 cup
  • Toor dal - 1 tbsp
  • Cumin seeds - 3/4 cup
  • Pepper - 1/2 cup
  • Red chilli - 15 or as required
  • Curry leaves - handful

Method

  1. Heat a pan.
  2. Add coriander seeds, toor dal and dry roast for few minutes.
  3. Remove from pan.
  4. Add cumin seeds and pepper and toss for a minute.
  5. Remove & set aside.
  6. Now add red chillies and curry leaves.
  7. Roast until crisp and allow to cool.
  8. Add all the ingredients to blender.
  9. Grind to coarse powder.
  10. That's it ...aromatic & fresh homemade rasam powder is ready.
  11. Enjoy lipsmacking rasam by sprinkling a tsp of rasam powder at the time of boiling.
  12. Rasam powder stays fresh for 3 to 4 months when stored in air tight container.

Ingredients

  • Peanuts - 1 cup
  • Powdered jaggery - 3/4 cup
  • Cardamom pwd - 1/4 tsp
  • Ghee - 2 tbsp
  • Pistachio nuts for garnishing

Method

  1. Roast the raw peanuts until they're browned.
  2. Allow to cool completely & peel off the skin.
  3. Add the roasted peanuts to blender & blend to smooth powder.
  4. Add powdered jaggery, cardamom pwd and ghee.
  5. Blend to smooth mixture.
  6. Transfer to bowl.
  7. Grease ghee in hands and knead the peanut mixture.
  8. Take small portion of the mixture and press it to small round balls as shown in video.

Ingredients

  • Sweet potato - 1 or 2
  • Wheat flour - 1 cup
  • Cumin pwd - 1/2 tsp 
  • Hing / asafetida pwd - 1/4 tsp
  • Turmeric pwd - 1/4 tsp
  • Ghee - 1 tsp
  • Oil - 1 tsp
  • Coriander leaves - handful
  • Salt to taste

Method

  1. Wash and cook the sweet potato until soft & tender.
  2. Peel off the skin.
  3. Add it to mixing bowl and mash it to smooth mixture.
  4. Add salt, cumin pwd, hing, turmeric pwd, ghee, oil, coriander leaves and mix.
  5. Add little water and mash it to smooth mixture.
  6. Now add wheat flour and knead to soft dough.
  7. Divide it to equal sized balls.
  8. Take a ball and dust it with flour.
  9. Roll it to thick paratha.
  10. Heat butter in frypan.
  11. Place the paratha and cook in medium flame.
  12. Fry until the paratha is with golden brown spots on both sides.
  13. Remove from flame.
  14. Soft & yummy sweet potato paratha is ready.
  15. Enjoy hot with yoghurt, raitha or any side dish of your choice.

Ingredients

  • Paneer - 200 g
  • Wheat flour - 1 cup
  • Oil - 2 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Amchoor pwd - 1/2 tsp
  • Cumin pwd - 1/4 tsp
  • Sliced green chilli - 1 tsp
  • Coriander leaves - handful
  • Salt to taste

Method

  1. Wash paneer and grate to fine shreds.
  2. Set it aside.
  3. In a mixing bowl, add 1 cup of water.
  4. Add salt to it and stir.
  5. Add wheat flour and knead to smooth dough.
  6. Sprinkle oil and knead well to soft dough.
  7. Cover and let the dough rest for 5 mins.
  8. Divide it to equal sized balls.
  9. To the grated paneer, add salt, turmeric pwd, red chilly pwd, amchoor pwd, cumin pwd, sliced green chilly and coriander leaves.
  10. Mix completely.
  11. Make small balls out of the paneer mixture.
  12. Take a dough ball and dust it with flour.
  13. Roll it to small thick disc.
  14. Place the paneer ball and cover with dough.
  15. Seal the edges as shown in the video.
  16. Roll it to round thick disc by dusting flour.
  17. Heat butter in frypan.
  18. Place the rolled paratha and cook on both sides.
  19. Drizzle oil or paratha and fry until it turns golden on both sides.
  20. Remove from flame.

  • Chicken - 1/2 kg
  • Yoghurt - 1 cup
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Coriander pwd - 2 tsp
  • Garam masala pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Ginger garlic paste - 1 tbsp
  • Corn flour - 1 tbsp
  • Tandoori masala pwd - 1 tsp
  • Ghee - 1 tsp
  • Oil - 2 tsp
  • Lemon juice - 1 tsp
  • Dried fenugreek leaves - 1 tsp
  • Coriander leaves - handful
  • Salt to taste

Method

  1. Clean and wash the chicken.
  2. Drain the water thoroughly.
  3. In a mixing bowl, add yoghurt, salt, turmeric pwd, red chilly pwd, coriander pwd, garam masala pwd, cumin pwd, ginger garlic paste, corn flour, tandoori masala pwd, ghee, oil, lemon juice, dried fenugreek leaves and coriander leaves.
  4. Mix well.
  5. Add the chicken pieces and coat well with the marinade.
  6. Let it marinate in refrigerator preferably overnight or atleast for 3 to 4 hours.
  7. Grease the baking pan with oil.
  8. Place the marinated chicken and smear oil over it.
  9. Keep it in oven and bake it at 450 degree F or 250 degree Celcius for 25 to 30 minutes.
  10. Lipsmacking delicious tandoori chicken is ready.
  11. Serve hot with mint chutney, hummus, mayonaise or any dip of your choice.

  • Mutton - 1/2 kg
  • Onion - 2 
  • Tomato - 2
  • Ginger garlic paste - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Coriander pwd - 1 tbsp
  • Pepper pwd - 1 tsp
  • Saunf pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Fresh lemon juice - few drops
  • Mint & coriander leaves - handful
  • Oil - 2 tbsp
  • Salt to taste

Method

  1. Clean and wash the mutton, drain water thoroughly.
  2. Heat oil in pan.
  3. Add ginger garlic paste and saute for a minute.
  4. Add mutton and stir.
  5. Add turmeric pwd, red chilly pwd, green chilly, mint leaves, coriander leaves, salt and mix.
  6. Add 1 cup of water and stir.
  7. Pressure cook for 4 whistles in high flame and simmer flame for 10 mins.
  8. Turn off flame.
  9. You can see the mutton is cooked soft and tender.
  10. Drain water (mutton broth) from the cooked mutton and keep aside.
  11. Heat oil in frypan.
  12. Add sliced onions and saute till transculent.
  13. Add tomato slices and cook till soft.
  14. Add turmeric pwd, red chilly pwd, coriander pwd, saunf pwd, cumin pwd, salt and stir.
  15. Add yoghurt and combine.
  16. Add mutton broth and allow to boil.
  17. Cook until the masala thickens.
  18. Now add the cooked mutton and combine with the thick masala.
  19. Keep the flame low and roast for 5 mins.
  20. Sprinkle freshly grounded pepper pwd, garam masala pwd and combine.
  21. Squeeze few drops of lemon juice.
  22. Turn off flame.
  23. Sprinkle freshly chopped coriander leaves.
  24. Lipsmacking delicious mutton pepper roast is ready.
  25. Serve hot with parotta, naan, biryani, roti, etc.

  • Gram dal (kadala paruppu) - 1 cup

  • Cumin seeds - 2 tsp
  • Curry leaves - a few
  • Turmeric pwd - 1 tsp
  • Hing - 1 tsp
  • Salt to taste

Method

  1. Heat a pan.
  2. Add red chillies and toss for few minutes in low flame.
  3. Remove from heat and set aside.
  4. Add coriander seeds and toss until light brown.
  5. Set aside.
  6. Next add gram dal (kadala paruppu) and roast until light brown.
  7. Set aside.
  8. Add toor dal, urad dal, fenugreek, cumin seeds and toss for few minutes in low flame.
  9. Set aside.
  10. Now add turmeric pwd, curry leaves, hing, salt and toss for few minutes.
  11. Turn off flame.
  12. Allow the ingredients to cool.
  13. Add it to blender.
  14. Grind it to smooth powder.
  15. Flavorful delicious homemade sambar powder is ready.

Method

  1. Clean, wash the carrots.
  2. Peel the skin and grate carrots to fine shreds.
  3. Heat ghee in pan.
  4. Add shredded carrots and saute in low flame.
  5. Cook covered for 10 mins without sprinkling water.
  6. Stir well...now you can see the carrots are cooked and reduced in quantity.
  7. Cover it with lid and cook for another 10 mins in low flame.
  8. Add 1 cup of milk and stir well.
  9. Again cook for 20 mins by covering with lid.
  10. Add cardamom pwd and sugar.
  11. Stir well.
  12. Keep stirring in low flame until the halwa starts rolling on the sides of the pan.
  13. Add 1 tsp of ghee and turn off flame.
  14. Garnish with finely chopped pistachios, cashewnuts and almonds.
  15. Lipsmacking delicious carrot halwa is ready.
  16. Serve warm or chilled.

Method

  1. Wash and boil the potatoes until soft.
  2. Peel off the skin and mash it completely.
  3. Add corn flour, rice flour, salt, cumin pwd, red chilly pwd, amchoor pwd, sliced green chilly, coriander leaves, garam masala pwd, turmeric pwd and lemon juice.
  4. Mix completely.
  5. Grease hand with oil and knead the dough to smooth ball.
  6. Take a lemon sized portion and roll to round shape.
  7. Now pat it to thick patty (disc shape) as shown in the video.
  8. Roll the patty in bread crumbs and set aside.
  9. Repeat the same for the remaining dough.
  10. Heat 2 tbsp of butter or oil in frypan for shallow frying.
  11. Place the patties gently on the hot oil and fry in low medium flame.
  12. Once the patties or golden brown and crispy on one side, flip it gently to the other side.
  13. Fry until both sides of the patties are golden and crispy.
  14. Remove from pan.
  15. That's it lipsmacking healthy delicious aloo tikkis are ready.

  5. Add rice flour, urad dal flour, cumin seeds, sesame seeds, hing, salt and mix.
  6. Add thick coconut milk and knead to smooth dough.
  7. Add butter and knead well.
  8. Smooth soft dough is ready.
  9. Heat oil in frypan.
  10. Grease the murukku mould with oil.
  11. Stuff a handful of dough in the mould as shown in video, and press in concentric circles in greased ladle or directly in hot oil.
  12. Take not to overcrowd the oil.
  13. Deep fry the murukkus in medium flame until the murukku turn golden & crispy.
  14. Drain in tissue paper.
  15. Flavorful delicious coconut milk murukku is ready to relish.

Ingredients

  • Fried gram / roasted gram / pottukadalai - 2 cups
  • Sugar - 1 cup
  • Ghee - 4 tbsp

Method

  1. Add sugar to blender and grind to smooth powder.
  2. Heat pan and add fried gram.
  3. Roast it in low flame for few minutes.
  4. Turn off flame and allow to cool.
  5. Add to blender and grind to smooth powder.
  6. Seive the fried gram powder and remove the lumps & dirt.
  7. Now heat ghee in frypan.
  8. Add fried gram powder and roast for few minutes.
  9. Add sugar pwd and cardamom pwd.
  10. Roast for few more minutes in low flame.
  11. Add 2 tbsp of ghee and toss.
  12. Turn off flame.
  13. Make small balls out of the mixture and press to ladoos immediately as shown in video. 
  14. Try to make ladoos while the mixture is hot, else the ladoos may break. In case, if the mixture is not binding, sprinkling few tsp ghee or milk and make ladoos.
  15. Arrange the rolled ladoos in plate.
  16. Let it cool and store it in air tight container.
  17. It has a shelf life of 3 to 4 weeks.
  18. Enjoy the healthy delicious maladu at your home.

  • Cauliflower florets - 1 bowl
  • Maida flour - 3 tbsp
  • Besan flour - 1 tbsp

  • Ginger garlic paste - 1 tsp

  • Lemon juice or vinegar - few drops
  • Salt to taste
  • Fresh coriander leaves

Method

  1. Clean and slice the cauliflower to fine florets.
  2. Take it in a mixing bowl, add salt, turmeric pwd and hot water.
  3. Rinse it for few minutes and drain water.
  4. In a bowl, add maida flour, corn flour, rice flour, red chilly pwd, salt, ginger garlic paste, cumin pwd, pepper pwd, besan flour and mix.
  5. Add soya sauce and lemon juice or vinegar.
  6. Add chopped coriander leaves and water.
  7. Mix it to smooth paste.
  8. Add the cauliflower and coat well with masala.
  9. Let it rest for 10 mins.
  10. Heat oil in frypan.
  11. Drop the cauliflower in hot oil carefully as shown in video.
  12. Deep fry in hot oil until the gobi is cooked crispy and golden.
  13. Once the gobi is done, fry some curry leaves and green chilly in hot oil as shown in video. (it gives a yummy flavor to gobi 65)
  14. Drain the gobi 65 from oil in kitchen tissue.
  15. Restaurant style spicy & crispy delicious gobi 65 is ready.

  3. Sprinkle water and knead to smooth soft dough.
  4. Let the dough rest for 5 minutes.
  5. Divide the dough into equal sized balls.
  6. Take one ball, dust with flour and roll it to thin round disc.
  7. Smear with oil.
  8. Sprinkle chat masala pwd.
  9. Fold the disc to half, smear with oil and fold to triangle as shown in the video.
  10. Dust with flour and roll it to triangle shape.
  11. Heat pan.
  12. Melt butter and place the mint paratha.
  13. Cook on hot flame until the paratha turns golden brown on both sides.
  14. Flip the paratha to both sides and remove from flame.
  15. Flavorful delicious restaurant style mint paratha is ready.

  1. Wash and slice paneer to bite sized cubes.
  2. In a mixing bowl, add yoghurt, turmeric pwd, red chilly pwd, besan flour, cumin pwd, ajwain, chat masala pwd, garam masala pwd, coriander pwd, pepper pwd, ginger garlic paste, salt, tandoori masala pwd, oil and lemon juice.
  3. Mix it to smooth paste.
  4. Add paneer cubes and coat well with masala.
  5. Add sliced capsicum, onion and tomato.
  6. Mix and allow to marinate for minimum 1 hour.
  7. Soak bamboo skewers in water for 20 mins to avoid getting burnt.
  8. Now insert marinated paneer, onion, tomato and capsicum alternatively in skewers.
  9. Grease some masala & oil over it.
  10. Place the skewers in grill and keep in oven.
  11. Grill for 8 to 10 mins or until charred as shown in video.
  12. Healthy delicious grilled paneer tikka is ready.
  13. Serve hot with mint chutney or any dip of your choice.
