Chilli Cheese Toast

When you're craving for a super delicious easy to make snack for evening tea....then here comes the cheesy chilli toast recipe. It can be prepared in no time and serves as a filling healthy snack for breakfast too. Its very popular among kids and adults too. Ingredients

  • Bread slices - 8
  • Paneer - 150 g
  • Capsicum slices - 2 tbsp
  • Green chilli sliced - 1 tsp
  • Tomato sliced - 2 tbsp
  • Pepper pwd - 1/2 tsp
  • Red chilli pwd - 1/4 tsp
  • Cumin pwd - 1/2 tsp
  • Chat masala pwd - 1/2 tsp
  • Milk - 1 tbsp
  • Coriander leaves
  • Olive oil to shallow fry
  • Salt to taste

Method

  1. Grate paneer to fine shreds.
  2. Add finely sliced red and green capsicum, green chilli, tomato, pepper pwd, salt, red chilli pwd, cumin pwd, chat masala pwd, 1 tbsp of milk and finely sliced coriander leaves.
  3. Mix completely.
  4. Heat olive oil in frypan.
  5. Add bread slices and toast until golden on one side.
  6. Remove from flame.
  7. Apply paneer mixture on the toasted side of the bread.
  8. Heat a tsp of olive oil on frypan.
  9. Place the bread slices with paneer topping on the frypan as shown in video.
  10. Toast it in low flame until it turns golden on both sides.
  11. Also you can toast it in oven at 180 degree celcius for 5 mins or until crispy.
  12. Yummilicious cheese chilli toast is ready.
  13. It serves as a filling delicious snack for kids and adults alike.
  14. My kids favorite combo is tomato ketchup along with cheese chilli toast:)

Mutton Chukka Fry 

Here comes the spicy & irresistably delicious Indian style mutton sukka recipe. In this recipe the soft chunks of mutton is roasted along with flavorful indian spicy masala until dry. It is well known for its spiciness and you can alter the spice level as per your taste. For this recipe the mutton pieces along with bones tastes more heavenly. It pairs perfect with biryani, rice with rasam or even with roti, chapati, naan, etc. Try it in your home too with this simple video recipe!

Ingredients

To marinate:

  • Mutton - 1/2 kg
  • Yoghurt - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Ginger garlic paste - 1 tsp
  • Tomato - 1 or 2
  • Salt to taste

To make gravy:

  • Gingely oil - 2 to 3 tbsp
  • Cumin seeds - 1/2 tsp
  • Saunf pwd - 1/2 tsp
  • Red chilli - 2
  • Onion - 2
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1 tsp
  • Pepper pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Coriander pwd - 2 tsp
  • Curry & coriander leaves
  • Salt to taste

Method

To marinate:

  1. Clean and wash mutton pieces
  2. Chop them to bite sized pieces.
  3. Add mutton pieces to mixing bowl.
  4. Add yoghurt, turmeric pwd, red chilli pwd, salt, garam masala pwd, ginger garlic paste, mashed tomato and mix well.
  5. Cover the mutton pieces well with masala and allow to marinate for 30 mins.

To make curry

  1. Heat 1 tbsp of gingely oil in pressure cooker.
  2. Add the marinated mutton and saute for a minute.
  3. Add curry leaves and 1/2 cup of water.
  4. Cover and pressure cook for 5 whistles in high flame and cook in low flame for 7 mins or until the mutton is cooked tender.
  5. Turn off flame and set it aside.
  6. In a frypan, heat 2 tbsp of gingely oil.
  7. Add cumin seeds and wait to splutter.
  8. Add saunf pwd, curry leaves and red chilli. Toss for few seconds.
  9. Add sliced onions, salt and saute until transculent.
  10. Add cooked mutton along with masala.
  11. Stir well.
  12. Add turmeric pwd, red chilli pwd, cumin pwd, coriander pwd, garam masala pwd or mutton masala pwd and pepper pwd.
  13. Stir well and cook in high flame.
  14. Keep stirring until the gravy thickens.
  15. Sprinkle fresh coriander and curry leaves.
  16. Turn off flame.
  17. Spicy hot delicious pepper mutton roast is ready.
  18. Serve hot with naan, chapati, roti or even with rice dishes.

Bread Paneer Rolls  

I love the soft taste of paneer in whatever dish its added. Bread paneer rolls has been one of my most favorite and serves as a great appetizer or delicious compliment for evening coffee or tea. This snack can be prepared quickly with rolled up and toasted bread with a spicy paneer filling. Kids love this crunchy munchy snacks for lunch box or as after school snack due to its addictive taste. Also it can be prepared as a starter recipe for any special occasion or get togethers. Ingredients

  • Bread slices - 6 to 8
  • Paneer - 150 g
  • Pepper pwd - 1/2 tsp
  • Red chilli pwd - 1/2 tsp
  • Ginger garlic paste - 1/2 tsp
  • Green chilli sliced - 1/2 tsp
  • Lemon juice - few drops
  • Milk - 1 tbsp
  • Corn flour - 1 tbsp
  • Coriader leaves
  • Salt to taste
  • Butter or oil to shallow fry

Method

  1. Grate paneer to fine shreds.
  2. To it add pepper pwd, red chilli pwd, salt, ginger garlic paste, green chilli, finely chopped coriander leaves, lemon juice and a tbsp of milk.
  3. Mix to coarse paste.
  4. Take bread slices and trim the edges.
  5. Sprinkle few drops of water and roll to thin slices.
  6. In a small cup, make a thin paste of 1 tbsp of corn flour, 1/2 tsp of pepper pwd, salt and little water.
  7. Apply the corn flour paste on the edges of the bread.
  8. Now stuff the paneer mixture in the bread, as shown in video.
  9. Roll it tightly from one end and seal the edge with corn flour paste.
  10. Smear some butter or oil over the surface of the bread roll.
  11. Repeat the same for all the bread slices and keep the rolls ready.
  12. Heat 1 tbsp of butter or oil in frypan.
  13. Place the bread rolls and fry until they turn golden brown and crispy on all sides.
  14. Remove from flame.
  15. Enjoy hot with tomato ketchup, mint chutney or any dip of your choice.
  16. Serve hot
