Ingredients

  • Almonds / Badam - 1 cup
  • Ghee - 1/4 cup
  • Milk - 1/2 cup
  • Sugar - 1 & 1/2 cup
  • Cardamom pwd - 1/4 tsp
  • Saffron strands - a few

Method

  1. Soak badam in warm water for 30 minutes.
  2. Peel the skin and keep ready.
  3. Add soaked and peeled badam to blender. 
  4. Grind to coarse mixture.
  5. Add milk and grind to smooth paste.
  6. Soak saffron strands in 2 tbsp of milk.
  7. Heat ghee in non stick frypan.
  8. Add badam paste and 1/2 cup of water.
  9. Mix well and cook in medium flame.
  10. Continue stirring until the mixture thickens.
  11. Now add sugar, cardamom pwd and saffron along with milk.
  12. Mix and cook in medium flame.
  13. Stir continously so that the sugar dissolves and starts thickening.
  14. continue stirring until the halwa starts rolling on the sides of the pan.
  15. Once the halwa reaches the rolling consistency, add remaining ghee and stir.
  16. Turn off flame.
  17. Garnish with chopped almonds and saffron strands.
  18. Rich, creamy, delicious homemade badam halwa is ready.
  19. Enjoy warm or chilled.

Ingredients

To make batter

  • Raw rice - 1 cup
  • Parboiled rice - 1 cup
  • Urad dal - 1/4 cup
  • Fenugreek seeds - 1 tbsp

To make sweet kuzhi paniyaram

  • Batter - 2 cup
  • Ghee - 2 tbsp
  • Jaggery powdered - 1 cup
  • Grated coconut - 1 cup
  • Cashew - 7
  • Cardamom powder - 1/4 tsp
  • Salt a pinch

To make savory kuzhi paniyaram

  • Batter - 2 cup
  • Onion sliced - 1/2 cup
  • Green chilly - 2
  • Oil / ghee - 1 tbsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Hing - 1/4 tsp
  • Cashew - 5
  • Pepper - 1/2 tsp
  • Curry leaves - a few
  • Fresh coriander leaves
  • Salt to taste

Method

To make batter:

  1. Wash and soak raw rice, parboiled rice, urad dal and fenugreek in water overnight or minimum 6 hours.
  2. Drain water, add to blender and grind to smooth batter by adding little water.
  3. Transfer batter to mixing bowl.
  4. Mix well with hands and cover with lid.
  5. Allow the batter to ferment for 6 to 7 hours.
  6. Mix the batter completely and divide into two portions for making hot & sweet versions of Kuzhi paniyaram.

To make sweet kuzhi paniyaram

  1. To one portion of the batter, add powdered jaggery, grated coconut, ghee roasted cashew, cardamom pwd and a pinch of salt (to enhance sweetness)
  2. Mix thoroughly.
  3. Grease the paniyaram mould with ghee.
  4. Add the batter in the mould and drizzle ghee on top as shown in video.
  5. Heat the pan in medium flame.
  6. Flip the paniyaram with stick and cook until both sides are done and golden.
  7. Remove from pan.
  8. Healthy, delicious sweet kuzhi paniyaram is ready.
  9. It serves as an excellent nutritious snack for tea time.

To make hot & savory kuzhi paniyaram

  1. Heat 1 tbsp of ghee in pan.
  2. Add mustard, cumin, split urad dal, pepper, cashew and curry leaves.
  3. Toss for a minute.
  4. Add sliced green chilly and onion.
  5. Saute till golden.
  6. Add hing and salt.
  7. Toss for few more minutes and turn off flame.
  8. Add to the batter.
  9. Add freshly chopped coriander leaves.
  10. Mix completely.
  11. Grease the paniyaram mould and add batter to it.
  12. Heat it in medium flame and cook the paniyaram on both sides.
  13. Once the paniyaram is golden and done, remove from flame.
  14. Spicy delicious Kuzhi paniyaram is ready.
  15. It makes a lipsmacking combo with chutney or sambar.

  • Potato boiled - 2 cup
  • Besan flour - 1/2 cup
  • Rice flour - 2 tbsp
  • Cooked peas - 1/4 cup
  • Sliced onions - 1/2 cup
  • Green chilly - 2
  • Grated ginger - 1 tsp
  • Oil - to deep fry
  • Mustard - 1/4 tsp
  • Cumin - 1/4 tsp
  • Split urad dal - 1/2 tsp
  • Hing / asafetida - a pinch
  • Turmeric pwd - a pinch
  • Red chilly pwd - 1/2 tsp
  • Fresh coriander leaves 
  • Fresh lemon juice - few drops
  • Salt to taste

Method

  1. Add besan flour to mixing bowl.
  2. Add rice flour, salt, turmeric pwd, red chilly pwd, hing and mix well.
  3. Add little water and mix to smooth thick batter.
  4. Keep the batter aside.
  5. Heat oil in frypan.
  6. Add mustard, cumin, split urad dal and wait to splutter.
  7. Add grated ginger, sliced onions and green chilly.
  8. Toss for a minute.
  9. Add turmeric pwd, salt and boiled & mashed potato.
  10. Add 1/2 cup of water and mix well.
  11. Add boiled peas and combine.
  12. Add lemon juice and fresh coriander leaves.
  13. Toss well and turn off flame
  14. Let it cool.
  15. Make small balls out of potato mixture.
  16. Heat oil in frypan.
  17. Dip the balls in batter and deep fry in hot oil.
  18. Deep fry on both sides, until the bonda is crisp and golden.
  19. Drain in kitchen tissue.
  20. Irresistably deliciuos aloo bondas are ready.
  21. It makes a heavenly combo with tomato ketchup, mint chutney or coconut chutney.

Method

  1. Grate coconut to small pieces.

  3. Grind to coarse mixture.

  6. In a small fry pan, heat 2 tsp of oil.
  7. Add mustard, cumin, split urad dal, curry leaves and hing.

  9. Turn off flame.

Ingredients

  • Wheat flour - 1 cup
  • Gobi / Cauliflower florets - 1 cup
  • Onions sliced - 1/2 cup
  • Green chilly - 2
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Chat masala pwd - 1/2 tsp
  • Oil as required
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Grate gobi florets to fine shreds.
  2. Slice onions, green chilly and coriander leaves.
  3. In a mixing bowl, add water and salt.
  4. Add wheat flour and knead to soft dough.
  5. Add oil and knead to smooth dough.
  6. Cover with damp cloth and let the dough rest for 10 mins.
  7. Mean while heat oil in frypan.
  8. Add sliced onions and green chilly.
  9. Toss till light brown.
  10. Add grated gobi and salt.
  11. Saute for few minutes.
  12. Add turmeric pwd, red chilly pwd and cumin pwd.
  13. Toss good.
  14. Cover and cook for 5 mins in low flame. No need to add water.
  15. Add chat masala pwd, lemon juice and fresh coriander leaves.
  16. Stir well and turn off flame.
  17. Inner stuffing is ready.
  18. Make small balls out of the dough.
  19. Take one ball, dust it with flour and roll to small disc.
  20. Stuff a spoonful of gobi mixture and cover it as shown in video.
  21. Seal the edges and roll to smooth ball.
  22. Pat it flat and roll to thick round disc.
  23. Heat 1 tsp of oil in frypan.
  24. Place the paratha and cook on both sides.
  25. Drizzle oil to the sides of paratha and cook until both sides are golden and done.
  26. Place a dallop of butter and remove from flame.
  27. Healthy delicious gobi paratha is ready to serve.
  28. Enjoy hot with yoghurt and pickle.

Method

  1. Slice onion, tomato, green chilly and coriander leaves.
  2. Add milk to mixing bowl.
  3. Add turmeric pwd, red chilly pwd, turmeric pwd, pepper pwd, salt and garam masala pwd.
  4. Mix well.
  5. Break eggs and drop into the bowl.
  6. Beat the eggs until the masala gets mixed.
  7. Heat oil in frypan.
  8. Add sliced onions and green chilly.
  9. Toss until onions turn light brown.
  10. Add chopped tomato and saute for a minute.

Ingredients

  • Paneer - 200 g
  • Besan flour - 1 cup
  • Chilly garlic sauce - 1/4 cup
  • Bread crumbs - 1/2 cup
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 3/4 tsp
  • Ginger garlic paste - 1/2 tsp

  1. Wash and slice paneer to bite sized pieces.

Ingredients

To grind:

  • Grated coconut - 1/2 cup
  • Cashewnuts - 1/2 cup
  • Red chilly - 3
  • Small onions - 1/4 cup

To cook mutton:

  • Mutton - 1/2 kg
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Salt - 1/2 tsp
  • Yoghurt - 1 tbsp

To make Korma:

  • Small onions - 1/2 cup
  • Tomatoes sliced - 1/2 cup
  • Ginger garlic paste - 1 tbsp
  • Oil - 2 tbsp
  • Cinnamon - 2
  • Bay leaf - 1
  • Cloves - 4
  • Star anise - 1
  • Marathi moggu - 1
  • Saunf pwd - 1/4 tsp
  • Curry leaves - 7 to 8
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Pepper pwd - 1/2 tsp
  • Coriander pwd - 2 tsp
  • Fresh lemon juice - few drops
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Clean and wash mutton and drain water completely.
  2. Add mutton pieces to cooker.
  3. Add yoghurt, turmeric pwd, red chilly pwd and salt.
  4. Add 1/2 cup of water and cook mutton till soft.
  5. Heat oil in frypan.
  6. Add saunf pwd and curry leaves.
  7. Add bay leaf, cinnamon, cloves, star anise and marathi moggu.
  8. Saute for a minute.
  9. Add chopped onions and fry till transculent.
  10. Add ginger garlic paste and toss.
  11. Add chopped tomatoes and cook till soft.
  12. Add turmeric pwd, red chilly pwd, coriander pwd and pepper pwd.
  13. Saute for few minutes.
  14. Add cooked mutton along with water.
  15. Mix and let it boil.
  16. Taste and adjust salt.
  17. Grind coconut, red chilly, onion and cashew with little water to smooth paste.
  18. Add this paste to mutton curry and mix.
  19. Add pepper pwd and chopped curry leaves.
  20. Let it cook for another 5 mins in medium flame.
  21. Turn off flame.
  22. Squeeze few drops of lemon juice.
  23. Add finely chopped fresh coriander leaves.
  24. Lipsmacking delicious rich & creamy chettinad style mutton korma is ready.

Ingredients

To marinate:

  • Cauliflower florets - 1 cup
  • Maida ( all purpose flour) - 3 to 4 tbsp
  • Corn flour - 2 tbsp
  • Rice flour - 1 tbsp
  • Pepper pwd - 1/2 tsp
  • Soya sauce - 2 tsp
  • Salt - 1/2 tsp

To make gravy:

  • Oil - 2 tbsp
  • Grated garlic - 1 tsp
  • Grated ginger - 1 tsp
  • Sliced green chilly - 2 to 3
  • Sliced onions - 1/2 cup
  • Soya sauce - 1 & 1/2 tsp
  • Tomato ketchup - 2 tbsp
  • Pepper pwd - 1/2 tsp
  • Red chilly pwd - 1/2 tsp
  • Sugar - 1/2 tsp
  • Lemon juice - 1/2 tsp
  • Corn flour - 2 tbsp
  • Cubed onions - 1/4 cup
  • Cubed capsicum - 1/4 cup
  • Salt - 1/2 tsp

Method

  1. Wash and clean cauliflower & chop to small florets.
  2. In a mixing bowl, add maida flour, corn flour, rice flour, pepper pwd, salt and soya sauce.
  3. Mix well.
  4. Add enough water and stir to smooth thick paste.
  5. Add cauliflower florets and coat with the paste.
  6. Let it marinate for 15 to 20 mins.
  7. Heat oil in frypan.
  8. Add the marinated cauliflower and deep fry in hot oil.
  9. Deep fry until its crisp and golden.
  10. Strain and remove from oil in kitchen tissue.
  11. In a fry pan, heat a tbsp of oil.
  12. Add grated garlic, ginger and saute.
  13. Add sliced green chilly and chopped coriander leaves or spring onions.
  14. Add soya sauce, tomato ketchup and saute.
  15. Add salt, (add little salt as soya sauce has salt in it), pepper pwd, red chilly pwd and sugar.
  16. Stir well.
  17. Add 1/2 cup of water and combine.
  18. Add lemon juice or vinegar and mix.
  19. Make a paste out of 2 tbsp of corn flour and 1/2 cup of water.
  20. Add this paste to gravy and combine.
  21. Let it cook in medium flame.
  22. Once the gravy attains the desired consistency, add the crispy fried cauliflower. (If you want gobi manchurian gravy version, add little water and adjust the consistency)
  23. Toss in high flame.
  24. Add cubed onions and capsicum.
  25. Saute and turn off flame.
  26. Sprinkle freshly chopped coriander leaves or spring onions and garnish.
  27. Serve hot with fried rice, noodles or naan.

  • Gram dal / Kadalai paruppu - 1 cup
  • Sliced onions - 1/4 cup
  • Red chilly - 2
  • Garlic pods - 3 to 4
  • Saunf pwd - 1/2 tsp
  • Rice flour - 1 tbsp
  • Cinnamon pwd - 1/4 tsp
  • Curry leaves - a few
  • Salt to taste
  • Oil to deep fry

Method

  1. Wash and soak gram dal (kadalai paruppu) for 1 hour.
  2. Drain water and set it aside.
  3. Slice onions and keep ready.
  4. Add soaked gram dal to blender.
  5. Add red chilly, garlic, salt and saunf.
  6. Grind to coarse paste without adding water.
  7. Transfer to mixing bowl.
  8. Add finely sliced curry leaves and onions.
  9. Add cinnamon pwd and rice flour.
  10. Mix well.
  11. Take small ball out of the batter and pat it flat as shown in video.
  12. Heat oil in fry pan.
  13. Drop vadas one by one carefully.
  14. Take care not to overcrowd the oil.
  15. Deep fry until the vadas are golden brown and crisp.
  16. Drain in kitchen tissue.
  17. Utterly irresistable crunchy delicious masala vada is ready.

Ingredients

  • Paneer cubes - 1 cup
  • Onions sliced - 1/2 cup
  • Green chilly - 2
  • Grated ginger - 1 tsp
  • Grated garlic - 1 tsp
  • Sliced capsicum (green, red & yellow) - 1 cup
  • Spring onions chopped - 1/4 cup
  • Corn flour - 2 tbsp
  • Red chilly pwd - 1 tsp
  • Soy sauce - 2 tsp
  • Tomato ketchup - 2 tbsp
  • Salt to taste
  • Oil to shallow fry

Method

  1. Slice paneer to fine cubes.
  2. Marinate with red chilly pwd, salt and corn flour.
  3. Coat the paneer well with the marinade and let it rest for 10 to 15 mins.
  4. Heat oil in fry pan.
  5. Shallow fry the marinated paneer cubes to golden and crisp.
  6. Drain and set aside.
  7. Add grated garlic and ginger to hot oil.
  8. Toss in high flame.
  9. Add sliced onions and green chilly.
  10. Saute till light brown.
  11. Add sliced capsicum and toss.
  12. Add red chilly pwd and salt.
  13. Mix completely.
  14. Add soy sauce and tomato ketchup.
  15. Combine good.
  16. Make a paste of corn flour with 1/2 cup of water and add to paneer mixture.
  17. Add water and adjust the consistency of the gravy.
  18. Sprinkle finely sliced spring onions.
  19. Turn off flame.
  20. Yummilicious restaurant style chilly paneer is ready.
  21. (For gravy version, add extra 1 tbsp of corn flour paste and water and boil for few more mins)
  22. Serve hot with fried rice, biryani, noodles or roti dishes.

Ingredients

  • Wheat flour - 2 cups
  • Aloo (potato) boiled - 2
  • Oil or butter - 2 tbsp
  • Sliced onions - 2 tbsp
  • Grated ginger - 1 tsp
  • Sliced green chilly - 1 tsp
  • Chopped mint & coriander leaves - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Coriander pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Amchur pwd - 1/2 tsp
  • Sugar - 1/2 tsp
  • Fresh lemon juice - few drops
  • Salt to taste

Method

  1. Boil and peel the potatoes and keep ready.
  2. In a mixing bowl, add 1 cup of warm water.
  3. Add salt and sugar.
  4. Add wheat flour little by little and knead.
  5. Add oil and knead to smooth soft dough.
  6. Cover it with a damp cloth and let it rest for 5 mins.
  7. In another bowl, mash the potatoes.
  8. Add sliced onions, green chilly, grated ginger, mint & coriander leaves and combine.
  9. Add salt, turmeric pwd, red chilly pwd, coriander pwd, cumin pwd, amchur pwd.
  10. Add few drops of lemon juice and combine.
  11. Make it to small balls and set aside.
  12. Now aloo stuffing is ready.
  13. Make small equal sized balls out of the atta dough.
  14. Take one ball, dust it with flour and pat it flat to thick disc.
  15. Smear some oil and stuff aloo mixture inside ( as shown in the video) and seal the edges.
  16. Roll it to smooth round ball.
  17. Dust with atta flour and roll it gently to thick round disc.
  18. Drizzle oil to hot pan and place the aloo paratha on it.
  19. Cook it on both sides by drizzling oil or butter.
  20. Once the paratha is golden brown in colour, remove from flame.
  21. Repeat the same for the rest of the dough.
  22. Lipsmacking healthy delicious Aloo Paratha is ready.
  23. Serve hot with dallop of butter and raitha.

This spongy appam is one of the kids favorite snack and its commonly prepared on festivals like Karthigai Deepam, Krishna Jayanthi etc. Its made with whole wheat flour, jaggery, banana, grated coconut and ghee. Ingredients

  • Ripe banana - 2 to 3
  • Wheat flour - 1 cup
  • Rice flour - 3 tbsp
  • Rava / Semolina - 1 tbsp
  • Jaggery powdered - 1 cup
  • Grated coconut - 1/2 cup
  • Elaichi (cardamom pwd) - 1/2 tsp
  • Salt - a pinch
  • Ghee - 2 tbsp

Method

  1. Peel the banana and mash it to paste.
  2. Add wheat flour and rice flour to mixing bowl.
  3. Add cardamom pwd and grated coconut to it.
  4. Add a pinch of salt ( to enhance sweetness) and mashed banana.
  5. Stir the contents well.
  6. Now heat jaggery along with 1 cup of water in a pan.
  7. Stir well to dissolve.
  8. Once the jaggery melts completely turn off flame.
  9. Add the thick jaggery syrup to batter.
  10. Add rava (semolina) and mix the batter well.
  11. The batter should be in thick consistency.
  12. Grease the paniyaram pan with ghee.
  13. Pour batter in the pan.
  14. Heat the pan in medium flame.
  15. Drizzle ghee to the top of the appam.
  16. Let it cook until it turns golden brown on the bottom.
  17. Now flip it to the other side and cook.
  18. Once its golden on both the sides, remove from flame.
  19. Yummilicious and healthy sweet appam is ready.
  20. It makes an excellent snack  along with evening coffee.
