Ingredients

  • Raw rice - 1 cup
  • Moong dal - 1/2 cup
  • Ghee - 3 tbsp
  • Oil - 1 tbsp
  • Green chilly - 1
  • Cumin - 1 tsp
  • Pepper - 1/2 tsp
  • Hing / asafetida - a generous pinch
  • Curry leaves - a few
  • Coriander leaves chopped - 1 tbsp
  • Cashew - 8
  • Grated ginger - 1 tsp
  • Salt to taste

Method

  1. Wash and soak raw rice & moong dal in water for 10 mins.
  2. Drain water and add the contents in pressure cooker.
  3. Add 4 & 1/2 cups of water.
  4. Add salt and ghee.
  5. Mix well.
  6. Pressure cook for 5 whistles or until soft.
  7. Once the pressure goes off, open the lid and mash well.
  8. In a small pan, heat ghee and oil.
  9. Add green chilly, grated ginger, curry leaves, cumin, pepper, hing and cashew.
  10. Roast till golden.
  11. Turn off flame.
  12. Add it to pongal and mix completely.
  13. Garnish with fresh coriander leaves.
  14. Lipsmacking flavorful ven pongal is ready.
  15. Enjoy hot with chutney & sambar.

Ingredients

To marinate chicken

  • Chicken - 1/2 kg
  • Yoghurt  - 2 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Ginger garlic paste - 1 tsp
  • Biryani masala pwd - 1/2 tsp
  • Oil - 2 tsp
  • Salt - 1/2 tsp

To make Biryani

  • Basmati rice - 1 & 1/2 cups
  • Oil - 2 tbsp
  • Ghee - 1 tbsp
  • Cumin seeds - 1/2 tsp
  • Bay leaf - 2
  • Star anise - 1
  • Cinnamon - 2
  • Cloves - 4
  • Cardamom - 2
  • Onions sliced - 1 cup
  • Green chilly - 2
  • Tomato sliced - 1/2 cup
  • Ginger garlic paste - 1 tsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Biryani masala pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Saunf pwd - 1/2 tsp 
  • Fresh mint and coriander leaves - 1/2 cup
  • Fresh lemon juice - 1 tsp
  • Salt to taste

Method

  1. Wash and drain the water completely from chicken.
  2. Add yoghurt, turmeric pwd, red chilly pwd, cumin pwd, ginger garlic paste, biryani masala pwd, oil and salt.
  3. Mix and coat the chicken pieces well with masala.
  4. Let it marinate overnight or minimum 3 to 4 hours.
  5. Slice and keep the ingredients ready.
  6. Lets start preparing biryani.
  7. Wash and soak basmati rice in water for 5 mins.
  8. Drain and set aside.
  9. Heat oil, ghee in pan.
  10. Add cumin seeds, wait to splutter.
  11. Add bay leaf, cinnamon, cardamom, cloves and star anise.
  12. Saute for few seconds.
  13. Add sliced onions and green chilly.
  14. Toss until onions turn light brown.
  15. Add finely chopped coriander and mint leaves.
  16. Add ginger garlic paste and toss.
  17. Add yoghurt, turmeric pwd and red chilly pwd.
  18. Stir for a minute.
  19. Add marinated chicken and required salt.
  20. Mix well in high flame.
  21. Add turmeric pwd, red chilly pwd, garam masala pwd, biryani masala pwd and saunf.
  22. Add basmati rice and fluff gently for 2 minutes.
  23. Add 2 and 1/2 cups of water and stir.
  24. Squeeze few drops of fresh lemon juice.
  25. Taste and adjust salt and seasonings.
  26. Cover the cooker with lid and pressure cook for 1 whistle in high flame and simmer the flame for another 5 mins.
  27. Turn off flame and wait until pressure goes off.
  28. Yummilicious homemade flavorful chicken biryani is ready.
  29. Enjoy hot with raitha and spicy curry.

Ingredients

  • Ripe banana - 2
  • Walnuts chopped - 1/4 cup
  • Butter melted - 1/4 cup
  • Maida (all purpose flour) - 1 cup
  • Sugar powdered - 1/2 cup
  • Vanilla essence - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Baking pwd - 1/4 tsp
  • Cinnamon pwd - 1/2 tsp
  • Nutmeg pwd - 1/4 tsp
  • Salt - 1/2 tsp
  • Yoghurt - 2 tbsp
  • Milk - 1/4 cup

Method

  1. In a mixing bowl, add banana pieces and mash it to paste.
  2. Add powdered sugar, vanilla essence and mix completely.
  3. In the second bowl, add maida flour, baking soda, baking pwd, salt, cinnamon pwd, nutmeg pwd and mix.
  4. Add this flour mixture to the wet ingredients.
  5. Mix well.
  6. Add walnuts, yoghurt and milk.
  7. Blend together with blender to smooth consistency.
  8. Place butter paper on cake tin.
  9. Grease it with butter and dust with all purpose flour.
  10. Add the cake batter to the tin.
  11. Sprinkle chopped walnuts on the cake.
  12. Pre-heat oven at 180 degree celcius for 10 mins.
  13. Bake cake at 180 degree celsius for 30 to 35 mins or until the cake is done.
  14. Insert a tooth pick at the middle of the cake and check if it comes out clean. If its sticky, then bake for few more mins.
  15. Allow the cake to cool in a wire rack for 15 mins.
  16. Yummililcious soft & moist banana walnut cake is ready.

As this idly is offered as Neivedyam to the Lord at Varadaraja perumal temple, (Kanchipuram) it got its famous name. Making this traditional idli at home is very easy and main ingredients needed are rice, dal and dry spices.

Ingredients

  • Raw rice - 2 cups
  • Urad dal - 1/2 cup
  • Fenugreek seeds - 1 tbsp
  • Sesame oil - 1 tbsp
  • Chana dal - 1 tbsp
  • Broken cashewnuts - 2 tbsp
  • Grated ginger - 1 tsp
  • Sliced green chilly - 1 tsp
  • Curry leaves - a few
  • Cumin seeds - 1 tsp
  • Crushed pepper - 1 tsp
  • Coriander leaves
  • Salt to taste

Method

  1. wash and soak raw rice, urad dal and fenugreek seeds in water.
  2. Let it soak for 6 hours or preferably overnight.
  3. Drain the water and add it to blender.
  4. Add little water and grind to thick batter.
  5. Transfer to mixing bowl.
  6. Add salt and mix it with hands.
  7. Cover with lid and allow to ferment for 6 to 7 hours.
  8. After fermentation, stir well and set aside.
  9. Heat sesame oil in pan.
  10. Add chana dal and broken cashewnuts.
  11. Saute to golden.
  12. Add grated ginger, sliced green chilly, curry leaves.
  13. Toss for a minute.
  14. Add cumin and crushed pepper.
  15. Saute and turn off flame.
  16. Add it to batter.
  17. Add turmeric pwd, hing, ginger pwd and coriander leaves.
  18. Mix well. 
  19. Grease idly plates in oil.
  20. Add batter in the idly plates.
  21. Keep in idly cooker and steam cook for 10 to 12 mins.
  22. That's it ...flavorful spicy delicious Kanchipuram idli is ready.
  23. Enjoy hot with chutney, sambar and any dip of your choice.

Ingredients

  • Chicken with skin - 300 g
  • Eggs - 2
  • Milk - 2 to 3 tbsp
  • Maida ( plain flour / all purpose flour ) - 1/2 cup
  • Garlic pwd - 2 tsp
  • Onion pwd - 2 tsp
  • Red chilly pwd - 1 tsp
  • Pepper pwd - 1/2 tsp
  • Bread crumbs - 2 tbsp
  • Crushed corn flakes / or Oats - 2 to 3 tbsp
  • Lemon juice - few drops
  • Oil to deep fry
  • Salt to taste

Method

  1. Clean and wash the chicken.
  2. Drain water completely.
  3. Sprinkle salt, pepper pwd, red chilly pwd and squeeze lemon juice on it.
  4. Mix and allow to marinate for 30 mins.
  5. In a bowl, beat eggs along with milk.
  6. Set it aside.
  7. In a mixing bowl, add maida flour, salt, pepper pwd, red chilly pwd, onion pwd, garlic pwd, bread crumbs and crushed corn flakes.
  8. Mix well.
  9. Now take the marinated chicken and roll it with flour mixture as in video.
  10. Dip it in egg mixture.
  11. Again roll it with flour mixture.
  12. Set it aside.
  13. Repeat the same for all the chicken pieces.
  14. Heat oil in frypan.
  15. Drop the chicken one by one in hot oil.
  16. Take care not to overcrowd the oil.
  17. Deep fry in medium flame until chicken turns crisp and golden.
  18. Remove and drain from oil.
  19. Crispy delicious KFC style homemade fried chicken is ready.
  20. Enjoy warm with ketchup and mayonaise.

  • Basmati Rice - 1 & 1/2 cup

  • Tomato sliced - 1 cup
  • Vegetables sliced  - 2 cups( carrot, beans, potato, cauliflower, capsicum, peas, etc)
  • Cumin seeds - 1/2 tsp
  • Bay leaf - 2
  • Cloves - 4
  • Cinnamon - 2
  • Cardamom - 1
  • Star anise - 1
  • Green chilly - 2
  • Ginger garlic paste - 1 tbsp
  • Yoghurt - 2 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • coriander pwd - 1/2 tsp
  • Saunf pwd - 1/4 tsp
  • Garam masala pwd - 1/2 tsp
  • Biryani masala pwd - 1/2 tsp
  • Fresh mint & coriander leaves - 1/2 cup
  • Lemon juice - few drops
  • Salt to taste

Method

  1. Wash and slice all the veggies like carrot, potato, cauliflower, onion, tomato, green chillies, etc.
  2. Wash and soak basmati rice in water for 5 mins.
  3. Drain water and set aside.
  4. Heat oil / ghee in pan.
  5. Add cumin seeds and wait to splutter.
  6. Add bay leaf, cinnamon, cardamom, star anise, cloves and allow to crackle.
  7. Add sliced onions, green chilly and salt.
  8. Saute till light brown.
  9. Add ginger garlic paster and saute.
  10. Add sliced tomatoes and cook.
  11. Add yoghurt and mix.
  12. Add all the veggies and combine.
  13. Allow to cook for a minute.
  14. Add turmeric pwd, red chilly pwd, coriander pwd, saunf pwd, biryani masala pwd and garam masala pwd.
  15. Mix well.
  16. Add washed and soaked basmati rice.
  17. Combine gently with the masala.
  18. Add 2 & 1/2 cups of water.
  19. Squeeze few drops of fresh lemon juice.
  20. Mix well.
  21. Taste and adjust salt & seasonings.
  22. Close the lid and pressure cook for 1 whistle in high flame.
  23. Simmer the flame and cook for 5 more mins.
  24. Turn off flame.
  25. Once the pressure goes off, open the cooker.
  26. Fluff the biryani gently.
  27. Add ghee roasted paneer and bread cubes. (optional)
  28. Garnish with freshly chopped coriander leaves.
  29. Lipsmacking delicious Vegetable biryani is ready.
  30. Enjoy hot with raitha and spicy curry.

  • Besan flour - 1 cup
  • Rice flour - 1 tbsp
  • Maida flour - 2 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Pepper pwd - 1/4 tsp
  • Saunf pwd - 1/4 tsp
  • Hing (asfetida / Perungayam) - a generous pinch
  • Baking soda - a pinch
  • Salt to taste
  • Oil to deep fry

Method

  1. Boil the eggs, peel the shell and keep it ready.
  2. In a mixing bowl, add besan flour, rice flour, maida flour, turmeric pwd, red chilly pwd, saunf pwd, hing, baking soda, pepper pwd, salt, 
  3. Mix well.
  4. Add water little by little and stir well to smooth batter.
  5. The batter consistency should be thin. ( not too thick or watery)
  6. Heat oil in frypan.
  7. Dip the egg slice in batter and deep fry in hot oil.
  8. Keep the flame in medium and fry till the egg pakoras turn crisp & golden on both sides.
  9. Drain in kitchen tissue.
  10. Serve hot with tomato ketchup or any dip of your choice.

Ingredients

  • Boiled Rice (puzhungalarisi ) - 1 cup
  • Chana dal (kadalai paruppu) - 1/2 cup
  • Toor dal - 1 tbsp
  • Urad dal - 1 tbsp
  • Red chilly - 8
  • Garlic pods - 8
  • Sliced onions - 1/4 cup
  • Grated coconut - 1/4 cup
  • Chopped coriander leaves - 1/4 cup
  • Saunf pwd - 1 tsp
  • Salt to taste
  • Oil as required

Method

  1. Wash and soak boiled rice, toor dal and urad dal in water.
  2. Let it soak for 4 to 5 hours minimum.
  3. Add it to blender. Add garlic, red chilly, saunf pwd and salt.
  4. Add 1/2 cup of water and grind to coarse batter.
  5. Transfer to bowl.
  6. Add freshly chopped coriander leaves, grated garlic and sliced onions.
  7. Mix well.
  8. The batter consistency should be thick.
  9. Heat a dosa pan.
  10. Take a ladle full of batter and spread in concentric circles.
  11. Drizzle oil to sides.
  12. Cook it on both sides in medium flame to crisp and golden.
  13. Lipsmacking delicious crispy Adai Dosa is ready.
  14. It makes a heavenly combo with kara chutney and butter.

Ingredients

  • Boneless chicken - 350 g
  • Yoghurt - 1/4 cup
  • Ginger garlic paste - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Kashmiri Red chilly pwd - 1 & 1/2 tsp
  • Coriander pwd - 2 tsp
  • Cumin pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Chicken tikka masala pwd - 1 tsp
  • Red food color (optional) - a pinch
  • Sliced coriander leaves - 1/4 cup
  • Fresh lemon juice - 1 tsp
  • Onion cubed - 1 cup
  • Capsicum (green, red, orange, yellow) - 1 cup
  • Salt to taste
  • Oil as required

Method

  1. Wash and cube chicken to bite sized pieces.
  2. In a mixing bowl, add the chicken, turmeric pwd, yoghurt, ginger garlic paste, kashmiri red chilly pwd, garam masala pwd, cumin pwd, coriander pwd, chicken tikka masala pwd, food color, salt and lemon juice.
  3. Mix well.
  4. Add cubed onion and capsicum slices.
  5. Combine well so that the masala gets coated well with chicken & veggies.
  6. Allow to marinate overnight in refrigerator or minimum 4 hours.
  7. Soak bamboo skewers in water for 15 mins to avoid burning of sticks.
  8. Now insert chicken, onion and capsicum slices alternatively in the bamboo stick.
  9. Grease oil in the grill.
  10. Arrange the skewers in the grill and bash with oil.
  11. Keep the grill in microwave and set the oven in "micro+grill"
  12. Set the timer for 10 mins and allow to grill in the microwave oven.
  13. Take it out and check if the chicken is done.
  14. Flip the tikka to other side and bash with oil.
  15. Grill for another 3 to 4 mins or until charred.
  16. Lipsmacking delicious grilled chicken tikka is ready.
  17. Enjoy hot with any dip of your choice.

  7. Add urad dal and roast for few minutes.
  8. Add sesame seeds, curry leaves, pepper corns, hing and salt.
  9. Toss for few minutes.
  10. Remove from flame and allow the ingredients to cool completely.
  11. Add it to blender and grind to coarse pwd.
  12. That's it...flavorful and aromatic homemade idli podi is ready.

Ingredients

  • Mutton - 1/2 kg
  • Seeraga samba rice - 1/2 kg
  • Oil or ghee - 4 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Yoghurt (curd) - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Bay leaf - 2
  • Cinnamon - 2
  • Cloves - 4
  • Cardamom - 2
  • Star anise - 1
  • Saunf - 1/4 tsp
  • Onion sliced - 2 cups
  • Tomato sliced - 1 cup
  • Ginger garlic paste - 1 tbsp
  • Green chilly - 4
  • Chopped mint & coriander leaves - 1/2 cup
  • Fresh lemon juice - few drops
  • Salt to taste

Method

  1. Wash & soak seeraga samba rice in water for 10 mins.
  2. Drain water and set aside.
  3. Wash and clean mutton pieces.
  4. Add to pressure cooker.
  5. Cook it along with turmeric pwd, red chilly pwd, yoghurt, salt and 1 cup of water.
  6. Cook for 4 whistles and turn off flame.
  7. The mutton should be half-cooked.
  8. Set it aside.
  9. Heat oil/ghee in cooker.
  10. Add cumin seeds and wait to splutter.
  11. Add bay leaf, saunf, cloves, cinnamon, cardamom, star anise and saute.
  12. Allow to crackle.
  13. Now add sliced onions and green chilly.
  14. Add salt and saute till onions turn light brown in colour.
  15. keep the flame in low medium and stir once in a while to ensure the onions doesn't stick to bottom.
  16. Add ginger garlic paste and toss till raw smell disappears.
  17. Add freshly chopped coriander and mint leaves.
  18. Saute for a minute.
  19. Add half cooked mutton along with its masala.
  20. Mix well and cook till masala thickens.
  21. Add soaked & drained rice and combine.
  22. Add 4 cups of water and stir.
  23. Taste and adjust salt and seasonings.
  24. Squeeze fresh drops of lemon.
  25. Cover and cook in pressure cooker for 1 whistle in medium flame and simmer the flame for another 7 mins.
  26. Turn off flame.
  27. Once the pressure goes off, open the cooker.
  28. Fluff the biryani gently.
  29. Enjoy the rich aroma of mutton biryani.
  30. Serve hot with boiled egg & spicy curry along with onion raitha.
