AVAL PAYASAM / POHA KHEER - Easy Video Recipe

Aval Payasam or Poha Kheer is yet another healthy, quick & easy to make sweet dish for festival season. This traditional kheer made of aval or flattened rice is very special to serve as neivedyam dish to serve god. We can also substitute jaggery for sugar in this recipe as it is rich in iron & nutrients. It requires only few ingredients and can be prepared in a jiffy. Kids love this mild sweet taste with rich cardamom flavor. Try this simple video recipe & enjoy the irresistable dessert.

Ingredients

  • Poha (aval or rice flakes) - 1 cup
  • Whole milk - 2 cups
  • Ghee - 1 tbsp
  • Sugar - 1/2 cup
  • Cardamom pwd - 1/4 tsp
  • Cashew - 7
  • Raisins - 8
  • Almonds - 5
  • Saffron strands to garnish

Method

  1. Heat ghee in frypan.
  2. Add cashew & raisins.
  3. Roast to golden, drain & reserve.
  4. Add aval (poha) and saute in low flame for 5 mins.
  5. Add thick whole milk and stir.
  6. Let the poha cook in milk for 10 mins in low flame.
  7. Stir once in a while to ensure, it doesn't stick to bottom of the pan.
  8. Add cardamom pwd and sugar.
  9. Stir well to combine.
  10. Let the payasam be in low flame for another 5 mins.
  11. Once the payasam reaches the desired consistency, add golden roasted cashew and raisins.
  12. Stir well and turn off flame.
  13. Lipsmacking healthy delicious Aval payasam ready.
  14. Serve warm or chilled.

Somas Sweet / Diwali Sweets - Easy Video Recipe

Somas is an authentic delicious sweet prepared for Diwali and other special occasions. Its very easy to prepare and tastes heavenly with crispy, flaky outside and sweet chewy inside. My grandma used to prepare this yummy sweet every year for Diwali. The inner stuffing can be prepared with any different variety of nutritious filling. Ingredients

To make outer cover:
  • Maida (all purpose flour ) - 1 & 1/2 cup
  • Semolina (rava or sooji) - 1 tbsp
  • Salt to taste
To make inner stuffing:
  • Ghee - 2 tbsp
  • Broken cashew & almond nuts - 3 tbsp
  • Grated coconut - 1/2 cup
  • Cardamom pwd - 1/4 tsp
  • Fried gram pwd (pottukadalai maavu) - 1/4 cup
  • Semolina - 2 tbsp
  • Sugar - 1/2 cup
To make Somas
  • Oil to deep fry

Method

To make outer cover:
  1. Add salt and maida flour to mixing bowl.
  2. Add semolina and combine.
  3. Sprinkle water little by little and knead to smooth soft dough.
  4. The dough consistency should be thick and not watery.
  5. Cover with damp cloth and keep aside.
  6. Outer Cover for somaz is ready.
To make inner stuffing:
  1. Heat ghee in a fry pan.
  2. Add broken cashew and almond.
  3. Roast to golden.
  4. Add grated coconut and saute in low flame for 5 mins.
  5. Add cardamom pwd, fried gram pwd and semolina.
  6. Saute well for few minutes.
  7. Add sugar and stir for another 5 mins.
  8. Turn off flame and allow to cool.
  9. Inner stuffing (sweet puranam) is ready.
To make somas:
  1. Make small balls out of the dough.
  2. Take a ball, dust it with flour and roll it to thin round disc.
  3. Make maida paste by adding 1 tbsp of maida flour and 1/4 cup of water.
  4. Apply the maida paste on the edges of the disc as shown in video.
  5. Place a tbsp of puranam in the middle and close it.
  6. Seal the edges tightly.
  7. Make design at the edges with the help of a fork. (optional)
  8. Heat oil in frypan.
  9. Drop the somas one by one carefully.
  10. Deep fry in medium heat.
  11. Flip it once in a while to ensure even cooking of somas.
  12. Once the somas turns crispy & golden, drain from oil.
  13. Authentic delicious homemade somas is ready.
  14. It stays fresh in air tight container for one week or more.

Suzhiyan or Seeyam is one of everyone's favorite Diwali Special Sweet Recipes. This authentic delicious dish tastes scrumptiously tasty with crispy outside and soft chewy inside. We used to prepare this traditional sweet during Diwali along with Idly & Vada for pooja. In this recipe, the jaggery puranam is prepared and coated with maida flour batter and deep fried in oil. Ingredients

  • Maida flour - 1 cup
  • Besan flour - 1/4 cup
  • Salt - 1/4 tsp
  • Chana dal (kadalai paruppu) - 1/2 cup
  • Jaggery powdered - 1/2 cup
  • Cardamom pwd - 1/4 tsp
  • Grated coconut - 1/2 cup
  • Ghee - 2 tbsp
  • Oil to deep fry

Method

  1. Wash and soak chana dal ( kadalai paruppu) in water for 5 mins.
  2. Pressure cook until soft.
  3. Drain water and keep aside.
  4. Take a blender add cooked chana dal and jaggery powdered.
  5. Grind to coarse paste without adding water.
  6. Heat ghee in a pan.
  7. Add grated coconut and saute for 2 mins.
  8. Add jaggery mixture and toss well in low medium flame until the mixture thickens.
  9. Add cardamom pwd and give a good stir.
  10. Turn off flame and allow to cool.
  11. Add maida flour and besan flour to mixing bowl.
  12. Add salt and mix.
  13. Add water little by little and mix to smooth paste.
  14. The consistency of the batter should be not too thick or watery. It should be flowing consistency as shown in the video.
  15. Heat oil in frypan.
  16. Now make small balls out of the jaggery mixture.
  17. Take a ball and dip it in the batter.
  18. Drop it in the hot oil and keep the flame in low medium.
  19. Repeat the same for all the jaggery balls.
  20. Take care not to overcrowd the oil.
  21. Fry the suzhiyan in batches.
  22. once the suzhiyan turns golden brown and crispy, drain from oil in kitchen tissue.
  23. Authentic delicious Suzhiyans are ready with crispy outside and chewy sweetness inside.
  24. Enjoy warm and celebrate the festive moments.

Today I am here to share with you a highly addictive & tasty snack which is very popularly prepared during Festivals. Sweet Shankarpali or diamond cuts is a recipe for sweet lovers. Ingredients

  • Maida (all purpose flour)  - 1 & 1/2 cups
  • Sugar - 1/2 cup
  • Cardamom pwd - 1/4 tsp
  • Baking soda - a pinch
  • Butter - 1 tbsp
  • Semolina (sooji or rava) - 2 tbsp
  • Oil to deep fry

Method

  1. Add 150 ml of hot water to mixing bowl.
  2. Add sugar and stir to dissolve completely.
  3. Add cardamom pwd and baking soda.
  4. Mix well.
  5. Add maida flour little by little and knead to smooth thick dough.
  6. Add rawa, oil and butter and knead.
  7. The dough should be in thick consistency.
  8. Make small balls out of the dough.
  9. Take a ball and dust it with flour.
  10. Roll it to flat thin disc.
  11. Slice it to diamond shape as shown in video.
  12. Repeat the same for the rest of the dough.
  13. Heat oil in frypan.
  14. Add the diamond cuts in batches.
  15. Deep fry in medium flame until the diamond cuts turn golden & crispy.
  16. Drain in kitchen tissue.
  17. Crispy munchy delicious Sweet diamond cuts are ready.
  18. Pairs up excellent with evening piping hot cup of coffee.

Ingredients

  • Milk pwd - 1 cup
  • Maida flour ( all purpose flour) - 1/4 cup
  • Baking pwd - 1/4 tsp
  • Sugar - 200 g
  • Cardamom - 2
  • Fresh lemon juice - few drops
  • saffron strands - a few
  • Pista slices for garnishing
  • Oil to deep fry

Method

  1. Add milk pwd in a plate.
  2. Seive and remove all the lumps.
  3. Add maida flour and baking pwd.
  4. Mix well.
  5. Add water little by little and knead to smooth soft sticky dough.
  6. Cover and keep it aside for 10 mins.
  7. Mean while lets prepare sugar syrup.
  8. In a bowl, add sugar and 1 cup of water. ( the water should be just enough to immerse the sugar)
  9. Heat the bowl in low flame.
  10. Add cardamom and stir to dissolve sugar.
  11. Once the sugar syrup starts boiling and reaches oily consistency, turn off flame.
  12. Add few drops of fresh lemon juice. This helps to prevent sugar syrup from crystallisation.
  13. Now knead the dough softly.
  14. Roll it to small lemon sized balls.
  15. Heat oil in frypan.
  16. Add the jamuns one by one and deep fry in low medium flame.
  17. Take care the flame shouldn't be high, as it tends to make the jamuns become dark colour outside and uncooked inside.
  18. In low flame fry the jamuns until they become crisp and golden in colour.
  19. Remove and drain in kitchen tissue.
  20. Drop them in hot sugar syrup.
  21. Add saffron strands for flavor & colour.
  22. Let the jamuns soak in sugar syrup for atleast 2 hours.
  23. Garnish with finely sliced nuts.
  24. Lipsmacking delicious homemade Gulab jamuns are ready.
  25. Enjoy warm or chilled.

Ingredients

  • Raw rice flour - 2 cups
  • Urad dal flour - 4 tbsp
  • Fried gram flour (pottukadalai maavu) - 2 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Hing / asafetida / perungayam pwd - 1/4 tsp
  • Sesame seeds - 1 tsp
  • Cumin - 1 tsp
  • Butter - 1 tbsp
  • Salt to taste
  • Oil to deep fry

Method

  1. Take raw rice flour in mixing bowl.
  2. Add urad dal flour, fried gram flour and mix.
  3. Add salt, hing, cumin, sesame seeds, turmeric pwd and red chilly pwd.
  4. Combine well.
  5. Add water little by little and knead to smooth soft dough.
  6. Add butter and mix well.
  7. The dough should be in thick consistency as shown in video.
  8. Cover the dough and let it rest for 5 mins.
  9. Meanwhile clean the murukku mould and grease it with oil.
  10. Grease the butter paper with oil and keep ready.
  11. Take a small ball of the dough and stuff in mould.
  12. Press the mould in circles to make the chakli shape.
  13. Repeat the same for the rest of the dough and keep the chaklis ready for frying in oil.
  14. Drop the chakli one by one in hot oil.
  15. Take care not to overcrowd the oil.
  16. Keep the flame in medium heat and deep fry the chaklis.
  17. Flip it once in a while and fry until the chaklis turn golden & crispy.
  18. Drain and remove in kitchen tissue.
  19. Spicy delicious Chaklis are ready.
  20. Enjoy with hot cup of tea or coffee.
  21. It makes a healthy snacks for kids too.
  22. It has 2 to 3 weeks of shelf life when stored in air-tight container.

Ingredients

  • Grated coconut - 2 & 1/2 cups
  • Whole milk - 1 cup
  • Sugar - 1 cup
  • Cardamom pwd - 1/4 tsp
  • Ghee - 2 tbsp

Method

  1. Grate coconut to fine shreds.
  2. Heat ghee in a pan.
  3. Add coconut shreds and saute in low flame for 5 to 7 mins.
  4. Add warm milk, sugar and cardamom pwd.
  5. Cook with stirring in low medium flame until the mixture thickens.
  6. Turn the flame to low and saute for another 10 mins.
  7. Add melted ghee and toss.
  8. Turn off flame and transfer to ghee smeared tray.
  9. Flatten it on top and make slits slightly while its hot.
  10. Garnish with raisins.
  11. Allow to cool and refrigerated it for 2 hours.
  12. Now slice it to pieces.
  13. Healthy delicious Coconut Burfi is ready.
  14. Enjoy chilled or warm.

Ingredients

  • Raw rice flour - 1 cup
  • Besan flour ( kadalai maavu or gram flour ) - 1/4 cup
  • Fried gram flour (pottukadalai maavu) - 1/4 cup
  • Red chilly pwd - 1 & 1/2 tsp
  • Butter - 2 tbsp
  • Hing / asafetida / perungayam - 1/4 tsp
  • Salt to taste
  • Oil to deep fry

Method

  1. Keep raw rice flour ready.
  2. Add fried gram (pottukadalai) to blender and grind to smooth pwd.
  3. Sieve to remove any lumps.
  4. Add rice flour in mixing bowl.
  5. To it add fried gram pwd, besan flour (kadalai maavu / gram flour), red chilly pwd, hing and salt.
  6. Combine together.
  7. Add water little by little and knead to smooth soft dough.
  8. Add butter and knead good.
  9. The consistency of the batter shouldn't be too watery or very thick. The consistency should be like as shown in the video.
  10. Clean and grease the ribbon pakoda mould with oil.
  11. Take a small portion of the dough and stuff in mould.
  12. Heat oil in frypan.
  13. Press the mould directly on hot oil in concentric circles.
  14. Keep the flame in medium heat and deep fry.
  15. Flip it once in while to ensure even cooking. 
  16. Once the ribbon pakoda turns golden and crispy on both sides, remove from oil.
  17. Drain and reserve.
  18. Crispy and healthy delicious Ribbon pakoda is ready.
  19. Store in airtight container for long shelf life.

Ingredients

  • Carrot grated - 2 cups
  • Ghee - 4 to 5 tbsp
  • Milk - 3/4 cup
  • Sugar - 1 cup
  • Cardamom pwd - 1/4 tsp
  • Broken cashew & almonds - 2 tbsp

Method

  1. Grate Carrot to fine shreds.
  2. Break cashew and almonds to small pieces & set aside.
  3. Heat ghee in frypan.
  4. Add carrot shreds and saute in ghee.
  5. Keep the flame in low and cook the carrot covered for 10 mins. (No need to add water. The moisture in the carrot is enough to get cooked in ghee)
  6. Stir once in a while to avoid sticking to bottom.
  7. Cook for another 10 mins in low flame.
  8. Now add thick warm milk.
  9. Stir to combine.
  10. Cover and cook in low flame for another 10 mins.
  11. Saute well and you can see the carrot is been cooked to smooth mixture.
  12. Add sugar and cardamom pwd.
  13. Keep the flame in medium and stir.
  14. The sugar dissolves and starts thickening.
  15. Add a tbsp of ghee and saute.
  16. Stir continously until the mixture reaches halwa consistency and starts rolling up from the pan.
  17. Turn off flame.
  18. Add broken cashew and almond pieces.
  19. Transfer to serving bowl.
  20. Lipsmacking healthy delicious carrot halwa is ready.
  21. Enjoy warm or chilled.

Thattai is a traditional healthy South Indian crispy snack prepared for many festivals like Diwali, Krishna Jayanthi. This tempting and crunchy snack is made with rice and fried gram. Its one of our family favorite snack and I used to prepare frequently as my kids prefer savory snacks for evening. My mom is an expert in preparing authentic crispy snacks and thanks to her for this easy recipe. Try this thattai recipe at home and lemme know your feedback..:)

Ingredients

  • Boiled rice - 1 cup
  • Fried gram / pottukadalai - 1/2 cup
  • Red chilly - 3 to 4
  • Garlic - 4 to 5 pods
  • Toor dal - 1 tbsp
  • Moong dal - 1 tbsp
  • Crushed peanuts - 2 to 3 tbsp
  • Curry leaves - a few
  • Hing / asafetida - a generous pinch
  • Oil to deep fry
  • Salt to taste

Method

  1. Wash boiled rice and soak in water for minimum 3 hours.
  2. Wash and soak toor dal and moongdal in 1 cup of water.
  3. Add fried gram (pottukadalai) to blender and grind to smooth pwd. Seive to remove lumps if any.
  4. Drain the rice and add to blender.
  5. Add garlic and red chilly.
  6. Grind to smooth paste by adding little water. (take care only enough water required to grinding to be added. The batter should be in thick consistency)
  7. Transfer the batter to mixing bowl.
  8. Add fried gram pwd.
  9. Mix well.
  10. Add salt, soaked and drained toor dal and moongdal.
  11. Add hing and 2 tbsp of hot oil.
  12. Combine well.
  13. Grease a plastic sheet or banana leaf with oil.
  14. Take a small ball out of the dough and place in the greased sheet.
  15. Grease your fingers with oil and pat it to thin disc.
  16. Repeat the same for the other balls and keep ready
  17. Heat oil in frypan.
  18. Drop the thattais one by one carefully.
  19. Keep the flame in medium and deep fry until the thattais turn golden brown and crispy.
  20. Drain and reserve.
  21. Traditional healthy delicious Thattai is ready.
  22. Once its cooled off, store in airtight container for longer shelf life.
  23. It combines excellent with piping hot cup of chai..:)

Ingredients

  • Rava (sooji or semolina) - 1 cup
  • Sugar - 3/4 cup
  • Ghee - 4 to 5 tbsp
  • Cardamom pwd - 1/4 tsp
  • Milk - 2 to 3 tbsp
  • Cashew - 7
  • Raisins - 10
  • Saffron strands to garnish

Method

  1. Keep all the ingredients ready.
  2. Add sugar to blender and grind to fine pwd.
  3. Keep it aside.
  4. Heat ghee in frypan.
  5. Add cashew and raisins and roast to golden.
  6. Drain and reserve.
  7. Add rava and roast for few minutes in low flame
  8. Turn off flame and allow to cool.
  9. Add roasted rava to blender and grind to coarse pwd.
  10. Add it to mixing bowl.
  11. Add powdered sugar.
  12. Mix well.
  13. Add cardamom pwd, roasted cashewnuts.
  14. Combine well and add ghee little by little with kneading.
  15. Once it forms thick mixture, add 2 to 3 tbsp of warm milk.
  16. Mix to combine.
  17. Take a small ball out of the mixture, and roll it to ladoos by inserting a roasted raisin as shown in video.
  18. Allow to cool. On cooling the ladoos turn firm and it wont break.
  19. Repeat the same for all the ladoos.
  20. Authentic delicious Rava Ladoos are ready.
  21. Enjoy warm or chilled.

Here goes yet another famous Indian dessert Rava Kesari sweet to celebrate the festival season. It is prepared with rava ( sooji or semolina) ghee, sugar and dry fruits. It is the easiest sweet recipe that can be prepared in few minutes. Also this sweet makes a quick fix dessert when you have surprise guests at home. Ingredients

  • Rava / sooji - 1 cup
  • Sugar - 1 & 1/4 cup
  • Ghee - 3 tbsp
  • Cashew - 8 to 10
  • Raisins - 8
  • Cardamom pwd - a pinch
  • Vanilla essence - 1/4 tsp
  • Orange food color - a pinch
  • Saffron strands & almond pieces to garnish

Method

  1. Heat ghee in frypan.
  2. Add cashewnuts and raisins, roast to golden.
  3. Drain and reserve.
  4. Add rava / sooji.
  5. Roast in low flame for few minutes.
  6. Add hot water and allow the rava to cook.
  7. Once the rava is cooked, add sugar and combine.
  8. Wait till the kesari thickens.
  9. Now add kesari pwd (orange food color)
  10. Add cardamom pwd and stir.
  11. Add golden roasted cashew and raisins.
  12. Add vanilla essence and combine.
  13. Stir good.
  14. Once the kesari thickens & come to halwa consistency, turn off flame. ( take care the kesari thickens on cooling)
  15. Garnish with saffron strands and grated almond.
  16. Lipsmacking authentic delicious Rava Kesari is ready.
  17. Enjoy warm or chilled.

Today am sharing a very famous and delicious payasam recipe, Paal Payasam. This classic dessert is very simple to prepare and the main ingredients are milk, rice, sugar and ghee. Its rightly called as King of Payasam due to its rich, creamy sweet taste & is prepared on festivals and special occasions. Try this sweetened milk rice pudding at your home.

Ingredients

  • Milk - 1 litre
  • Basmati Rice - 1/4 cup
  • Ghee - 3 tbsp
  • Cashew - 8 to 10
  • Raisins - 10
  • Sugar - 150 g ( or as needed)
  • Cardamom pwd - a generous pinch
  • Saffron - few strands

Method

  1. Heat a frypan.
  2. Add basmati rice and dry roast for few minutes.
  3. Allow to cool and grind in blender to coarse pwd.
  4. Add it to pressure cooker and add 1/2 litre milk.
  5. Mix well and pressure cook for 4 to 5 whistles or until the rice is cooked soft.
  6. Once the pressure goes off, open the lid.
  7. Mash the rice by adding little water and keep aside.
  8. In a fry pan, heat ghee.
  9. Add cashew, raisins and roast to golden.
  10. Remove and keep aside.
  11. Now add the remaining 1/2 litre milk and allow to boil.
  12. When the milk is hot, add the cooked and mashed rice.
  13. Stir well to mix.
  14. Let it boil in low flame for few minutes.
  15. Add sugar and combine.
  16. Sprinkle cardamom pwd and golden roasted cashew and raisins.
  17. Turn off flame.
  18. Transfer to serving bowl.
  19. Garnish with roasted cashew, raisins and saffron strands.
  20. Lipsmacking delicious Paal Payasam is ready.
  21. Enjoy warm or chilled.

Its very quick and easy to prepare sweet and it also makes a very nutritious dish for kids. Check out this easy version of this popular South Indian delicacy and enjoy the yummy taste.

Ingredients

  • Raw rice - 1 cup
  • Moong dal (yellow) - 1/4 cup
  • Jaggery - 1 cup
  • Ghee - 3 tbsp
  • Milk - 1 cup
  • Water - 3 & 1/2 cups
  • Cashew - 8 to 10
  • Raisins - 10
  • Saffron strands to garnish

Method

  1. Wash & soak raw rice in water for 5 mins.
  2. Drain the water and set aside.
  3. Heat ghee in frypan.
  4. Add cashew and raisins, roast to golden.
  5. Drain and set aside along with ghee.
  6. Add moongdal to frypan.
  7. Saute till golden.
  8. Add the moong dal to raw rice.
  9. Add milk and water.
  10. Mix well.
  11. Pressure cook for 5 whistles.
  12. Meanwhile heat jaggery in a pan.
  13. Add water and stir to dissolve.
  14. Once the jaggery water turns thick syrup, turn off flame.
  15. Strain to remove impurities.
  16. Keep aside.
  17. Once the pressure goes off from pressure cooker, mash the contents.
  18. Add little water and mash it to smooth mixture.
  19. Heat the jaggery syrup in pan and add the rice dal mixture.
  20. Stir to mix.
  21. Sprinkle cardamom pwd and golden roasted cashew & raisins.
  22. Add ghee and combine.
  23. Lipsmacking delicious chakarai pongal is ready.
  24. Enjoy hot with saffron garnishing.
