Thuthuvalai Kuzhambu:
Thuthuvalai Kuzhambu / Spinach gravy is one among the very nutritious food, which has a rich content of iron & calcium. 
Thuthuvalai leaves has a very good nutitional values. It is good for liver, asthma & cancer treatment. It is good to reduce cough, body pain and cold.  It helps in prevention of blood thickening & helps in long life existence.
Simply including this healthy leaves in our daily food, keeps us healthy & fit.

Check this authentic recipe to prepare delicious  Thuthuvalai  Kuzhambu & enjoy..:)
Ingredients:
·         Thuthuvalai Keerai                 - 1 cup
·         Tamarind                              - a small lemon size
·         Onion                                   - 1
·         Garlic                                   - 5 pods
·         Red chilly                             - 2
·         Pepper corns                        - 1 tsp
·         Turmeric pwd                        - ¼ tsp
·         Oil                                       - 4 to 5 tsp
·         Salt as required
Method:
1.     Wash and chop Thuthuvalai keerai to small pieces.
2.     Soak tamarind in ½ cup of water and extract thick juice from it.
3.     Slice onion and garlic to fine pieces.
4.     In a blender, add the chopped thuthuvalai leaves, red chilly and pepper corns,
5.     Sprinkle very little water and grind to coarse paste.
6.     Heat oil in a thick bottomed kadhai.
7.     Add sliced onion and garlic.
8.     Fry for few minutes, until onions turns light brown.
9.     Add chopped tomato and fry till it is soft and mushy.
10.  Now pour the thick tamarind juice to the kadhai.
11.  Add turmeric pwd and salt.
12.  Mix well and allow the kuzhambu to cook for few minutes in low flame.
13.  Once the kuzhambu attains thick consistency, add the thuthuvalai, red chilly, pepper paste ( step 5)
14.  Stir well and allow to boil.
15.  In a small pan, heat a tsp of oil.
16.  Temper with mustard and cumin seeds.
17.  Pour the tempering over the spicy kuzhambu.
18.  Healthy & tasty Thuthuvali  Kuzhambu  is ready to serve.
19.  It pairs up excellent with piping hot rice topped with ghee or with chapathi..!

Poori Recipe:

Making puffy poori's at home is really a challenge & a dream come true for beginners in cooking. But its not at all that hard, you just need to know the right consistency of the dough and few tips & tricks to turn into expert poori maker. This video shows the very easy and simple method to make crispy puffy pooris. We used to prepare it on weekend breakfast and makes an lipsmacking combo with aloo masala.

Video Recipe 


Ingredients

  • Wheat flour - 2 cups
  • Sooji / rava - 1 tsp
  • Water as required to knead
  • Salt to taste
  • Oil to deep fry

Method

  1. In a mixing bowl, add approx 1 small cup of water and mix salt to it.
  2. Add wheat flour, sooji and mix.
  3. Add little water as required and knead to smooth soft dough.
  4. The dough shouldn't be too tight or watery.
  5. The consistency of the dough should be as seen in the video.
  6. Cover it with lid and let the dough rest for 5 mins.
  7. Now knead again and make small balls out of it.
  8. Dust it with wheat flour and roll it to small flat discs.
  9. Heat oil in fry pan.
  10. When the oil is hot, turn the flame to medium low and drop the pooris.
  11. Flip it once it puffs.
  12. When it turns golden and crisp on both sides, drain in kitchen tissue.
  13. Yummy crispy pooris are ready.
  14. Makes a heavenly combo with Aloo masala.
  15. Enjoy hot.

Notes:

  • Take care not to rest the dough for more time, it will turn moist and drink more oil while making pooris.
  • When the oil is not hot enough, the poori wont puff. The heat should be optimum.
  • The dough shouldn't be loose or watery. The consistency of the dough plays an important role in puffing.

Ingredients

  1. Boneless chicken - 300 g
  2. Turmeric pwd - 1/4 tsp
  3. Kashmiri red chilly pwd - 1 tsp
  4. Pepper pwd - 1/4 tsp
  5. Coriander pwd - 1 tsp
  6. Cumin pwd - 1/4 tsp
  7. Garam masala pwd - 1/2 tsp
  8. Saunf pwd - 1/4 tsp
  9. Fresh lemon juice - 1 tsp
  10. Salt to taste
  11. Oil to deep fry

Method

  1. Clean & wash the chicken pieces.
  2. Drain water completely.
  3. Marinate with turmeric pwd, kashmiri red chilly pwd, pepper pwd, coriander pwd, cumin pwd, garam masala pwd, saunf pwd and salt.
  4. Add ginger garlic paste and mix.
  5. Add freshly squeezed lemon juice.
  6. Combine well.
  7. Now add corn flour and maida flour.
  8. Coat the chicken well with the masala.
  9. Allow to marinate for 2 hours in fridge.
  10. Heat oil in frypan.
  11. Add the marinated chicken pieces in hot oil.
  12. Deep fry the chicken in medium flame.
  13. Stir once in while and cook the chicken.
  14. Once the chicken is golden and crisp, remove from flame.
  15. Take care the chicken is not over fried, else the chicken 65 will turn hard and rubbery.
  16. Remove from oil and drain in kitchen tissue.
  17. Lipsmacking delicious restaurant style spicy chicken 65 is ready.
  18. Garnish with onion rings and coriander leaves.
  19. Enjoy hot with any dip of your choice.

Ingredients:

  • Raw rice flour - 2 cups
  • Fried gram flour - 1/2 cup
  • Butter - 2 tbsp
  • Sesame seeds - 1 tsp
  • Cumin seeds - 1 tsp (optional)
  • Hing / asafetida / perungayam - a generous pinch
  • Oil to deep fry
  • Salt to taste

Method:

  1. Wash & soak raw rice in water for 2 hours.
  2. Drain water and dry completely.
  3. Grind it to smooth soft flour.
  4. Seive to remove lumps.
  5. Rice flour is ready.
  6. Now grind fried gram (pottukadalai) to smooth pwd in blender.
  7. Seive it to remove lumps.
  8. Set aside the fried gram flour.
  9. Now in mixing bowl, add raw rice flour, fried gram flour, sesame seeds, hing soaked in water and salt.
  10. Mix well.
  11. Add water little by little and knead to smooth soft dough.
  12. Add butter and comine.
  13. Let the dough rest for 5 to 10 mins.
  14. Now grease the murukku mould with oil.
  15. Stuff the dough in the mould.
  16. Press the mould to make the murukku in circles as shown in video.
  17. Heat oil in a fry pan.
  18. Once the oil is hot, turn the flame to medium.
  19. Drop the murukkus carefully.
  20. Deep fry the murukkus by flipping once in a while.
  21. Once the murukku is crisp and golden brown in colour on both sides, remove from oil.
  22. Drain in kitchen tissue to remove excess oil.
  23. Yummy & buttery delicious homemade Murukku is ready.
  24. Serves as an excellent healthy tea time snack for kids & adults alike.
  25. It has a shelflife of about 2 to 3 weeks when stored in air tight container.

Ingredients

  • Pasta - 2 cups
  • OIive oil - 2 tsp
  • Butter - 2 tbsp
  • Maida / All purpose flour - 2 tbsp
  • Warm milk - 2 to 2 & 1/2 cups
  • Grated cheese - 1/4 cup
  • Chopped vegetables - 1/2 cup
  • Pepper pwd - 1/2 tsp
  • Red chilly flakes - 1/2 tsp
  • Oregano - 1/4 tsp
  • Basil - 1/4 tsp
  • Dried herbs - 1/4 tsp
  • Salt to taste

Method

  1. Wash and slice all the veggies. (you can add any vegetables like onion, carrot, french beans, cauliflower, corn, bell peppers, etc)
  2. Heat a sauce pan.
  3. Add pasta along with hot water.
  4. Add 1/2 tsp of salt and 1 tsp of olive oil.
  5. Stir and allow to cook.
  6. It will take approx. 7 mins for the pasta to cook soft. Also you can pressure cook pasta for 4 whistles in cooker.
  7. Take care the pasta shouldn't turn mushy.
  8. Drain the water from the pasta and set aside.
  9. Heat olive oil in frypan.
  10. Add grated garlic and toss.
  11. Add all chopped vegetables and give a good stir.
  12. Sprinkle salt and pepper pwd.
  13. Remove the vegetables and set aside in plate.
  14. Now melt butter in the same pan.
  15. Add maida / all purpose flour.
  16. Stir and cook maida for 2 mins in low flame.
  17. Add warm milk and mix.
  18. Allow the mixture to cook till it reaches creamy consistency.
  19. Add little water and adjust the consistency.
  20. Add grated cheese.
  21. Add salt, pepper pwd, red chilly flakes and oregano.
  22. Good a good mix.
  23. Add all the vegetables. Mix well.
  24. Now add the cooked pasta.
  25. Combine gently.
  26. Sprinkle some crushed basil and fresh herbs for added flavor.
  27. Also you can add some grated cheese for garnishing.
  28. That's it Creamy delicious White sauce pasta is ready.
  29. Serve over your favorite pasta.

Karuvadu Fry / Dry Fish Fry: 

Hello friends, today's recipe is an authentic delicious South Indian recipe for Non-veg lovers ..more particularly sea food lovers. Dry fishes are always our family favorite as its not only quick to prepare but also can be easily made at home. This is my mil's signature recipe and tastes very very mouthwateringly delicious. It makes lipsmacking combo with hot onion sambar rice & rasam rice. Try this tasty & spicy recipe ... I am sure you're going to love my recipe..:)

Ingredients:

  • Dry fish / Karuvadu slices - 8 to 10
  • Oil  - 2 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 2 tsp
  • Coriander pwd - 2 tsp
  • Onion sliced - 1/4 cup
  • Tomato mashed - 1 cup
  • Curry leaves
  • Salt to taste

Method:

  1. Clean, wash and soak the dry fish in water for 2 mins.
  2. Again wash thoroughly and drain the water completely.
  3. In a bowl, add the dry fish, turmeric pwd, red chilly pwd, coriander pwd and little salt. (take care the dry fish already has salt in it)
  4. Mix and add finely sliced onions, curry leaves and mashed tomato.
  5. Add 2 tsp of oil.
  6. Mix well.
  7. Allow to marinate for 1 hour.
  8. Heat oil in kadai / frypan.
  9. Add the marinated dryfish.
  10. Shallow fry in medium flame.
  11. Once the fish turns golden brown, flip it to other side.
  12. Fry until the fish is cook is cooked completely to crisp and golden.
  13. Remove from flame.
  14. Garnish with freshly chopped coriander leaves.
  15. That's it...lipsmacking delicious karuvadu / dry fish fry is ready.
  16. It combines excellent with rice dishes.
  17. we love to enjoy hot with onion sambar rice..:)

Curry Leaves Chutney: 

Here comes the chutney recipe that is packed with goodness of curry leaves along with coconut and flavorful spices. This is my mom's signature recipe and tastes amazingly delicious. It makes a perfect as well as healthy combo with idly, dosa, upma, pongal, curd rice, etc,. Try this simple & easy video recipe...it tastes soo good that if you prepare it once then it will be your family favorite chutney.

Ingredients:

  • Curry leaves  - handful
  • Grated coconut - 1/2 cup
  • Oil - 2 tsp
  • Urad dal - 1&1/2 tbsp
  • Red chilly - 4 to 5
  • Tamarind - small piece
  • Ginger - 1/2 inch piece
  • Salt to taste

Method:

  1. Clean and wash the curry leaves.
  2. Heat 2 tsp of oil in fry pan.
  3. Add urad dal, red chilly, tamarind and ginger.
  4. Roast for 2 minutes or until urad dal turns golden brown.
  5. Remove and set aside.
  6. Add curry leaves and toss for 2 minutes in medium flame.
  7. Turn off flame and allow the ingredients to cool.
  8. Meanwhile grate coconut to small pieces.
  9. Add grated coconut, red chilly, tamarind, ginger to blender.
  10. Grind to coarse mixture.
  11. Add salt, urad dal and curry leaves to the blender.
  12. Add 1/4 cup of water and grind to coarse paste.
  13. Add hing / asafetida (perungayam) and mix.
  14. Transfer to serving bowl.
  15. Flavorful healthy delicious Curry leaves chutney is ready.
  16. Combines excellent with idly, dosa, chapati, curd rice, etc.

Ingredients:

  • Vazhaipoo / Banana flower  - 1
  • Chana dal   - 1 cup
  • Green chilly or Red chilly - 3 to 4
  • Sliced onion  - 1 cup
  • Curry leaves
  • Salt to taste
  • Oil to deep fry

Method:

  1. Wash & soak chana dal in water for 1 hour.
  2. Drain water and set it aside.
  3. Wash and peel the florets from the banana flower / vazhaipoo.
  4. Remove the stigma and petal.
  5. Clean the florets and keep aside.
  6. In a blender add green chilly, salt and cleaned florets.
  7. Grind coarsely in the blender.
  8. Add the drained chana dal and grind coarsely without adding water.
  9. Transfer to mixing bowl.
  10. Add chopped onion and curry leaves.
  11. Mix well.
  12. Heat oil in a frypan.
  13. Take a small portion of the batter and pat it flat.
  14. Drop carefully in the hot oil.
  15. Let it deep fry until it turns golden and crisp on both sides.
  16. Drain in kitchen tissue.
  17. Crispy delicious Vazhaipoo Vada is ready.
  18. Also the same batter can be dropped in pakoras form.
  19. Enjoy hot with steamed rice or with hot coffee.

Peanut / Groundnut Chutney - Video Recipe

Groundnut / Peanut Chutney: 

Here goes the delicious & typical Indian chutney with nutty flavor. When you're bored with the regular coconut chutney to go along with Idlies & dosa, then this quick peanut chutney will be an excellent choice. This fiery recipe is very easy to prepare and compliments many South Indian dishes like Idly, dosa, kichadi, pongal, vada, etc., Trust me once you try this recipe, you'll never ever forget the tempting taste.

Ingredients:

  • Peanuts   - 1 cup
  • Red chilly - 4
  • Tamarind  - small piece
  • Salt to taste
  • Water to grind

To Temper:

  • Oil       - 1 tsp
  • Mustard - 1/4 tsp
  • Cumin     - 1/4 tsp
  • Split urad dal - 1/4 tsp
  • Curry leaves

Method:

  1. Clean, roast and peel the skin of peanuts.
  2. Keep ready the ingredients required for seasoning the chutney.
  3. In a blender add red chillies, peanut, salt and tamarind.
  4. Add enough water and grind to smooth paste.
  5. Heat oil in a small frypan.
  6. Add cumin, mustard, hing, split urad dal and curry leaves.
  7. Wait to splutter.
  8. Turn off flame.
  9. Add to peanut chutney and mix.
  10. Delicious and healthy Peanut chutney is ready.
  11. It makes an irresistable combo with idly & dosa.
  12. Also it serves as an excellent dip for sandwiches, toasts, Indian breads etc.
