Ingredients:

  • Corn kernels      - 1 or 2 cups
  • Butter                 - 2 to 3 tbsp
  • Milk                    - 2 tbsp
  • Sugar                 - 1/2 tsp
  • Salt                    - 1/2 tsp
  • Pepper pwd       - 1/4 tsp
  • Red chilly flakes - a pinch
  • Chat masala pwd - 1/4 tsp
  • Fresh Lemon juice - few drops

Method:

  1. Melt butter in a frying pan.
  2. Add cooked corn kernels and saute.
  3. Once the corn gets coated well with butter, add milk.
  4. Allow to cook for few minutes.
  5. Now add sugar and salt.
  6. Toss well.
  7. Add pepper pwd, red chilly flakes and chat masala pwd.
  8. Give a quick stir.
  9. Squeeze few drops of lemon juice.
  10. Turn off flame.
  11. Aromatic healthy delicious butter corn is ready.
  12. Transfer to serving bowl and enjoy hot.

Hello friends, today I am here with one of the favorite South Indian traditional Mor Kuzhambu video recipe. I learnt this delicious recipe from my Grandma, who is excellent in preparing authentic dishes. This curry makes a comfort food, when you have lots of yoghurt and is very simple to prepare. We can add any veggies or vadas to make this kuzhambu. Try this scrumptious recipe and you will surely love it.

Ingredients

To soak
  • Raw rice          - 2 tbsp
  • Toor dal           - 2 tbsp
  • Urad dal          - 2 cups
To make Mor kuzhambu
  • Yoghurt           - 200 g
  • Turmeric pwd  - a pinch
  • Oil                   - 1 tbsp
  • Mustard          - 1/4 tsp
  • Cumin             - 1/2 tsp
  • Split urad dal  - 1/2 tsp
  • Red chilly        - 2
  • Hing                - a pinch
  • Coriander leaves
  • Curry leaves 
  • salt
To make Vada
  • Urad dal          - 2 cups
  • Green chilly     - 2
  • Sliced onions   - 1 cup
  • Fresh curry & coriander leaves
  • Salt to taste
Method
To soak
  1. wash and soak raw rice and toor dal in water.
  2. Allow to soak for 1 hour.
  3. For preparing vadas, wash and soak urad dal with water separately in a bowl.
  4. Allow to soak for 30 mins.
To make Mor Kuzhambu
  1. Meanwhile, add yoghurt to blender.
  2. Add salt and turmeric pwd.
  3. Blend to smooth paste.
  4. Heat oil in a fry pan.
  5. Temper with curry leaves, mustard, cumin and split urad dal.
  6. Allow to splutter.
  7. Add red chillies and toss.
  8. Add soaked raw rice, toor dal, green chilly and cumin seeds to mixie and grind to smooth paste.
  9. Add this paste to yoghurt mixture.
  10. Mix well.
  11. Add this to the frypan.
  12. Stir well and allow to boil.
  13. Once the mixture starts foaming, add hing and turn off the flame.
  14. Taste and adjust salt.
  15. Sprinkle freshly chopped coriander leaves.
  16. Lipsmacking Mor Kuzhambu is ready.
To make Vadas:
  1. Lets see how to make crispy vadas to soak in mor kuzhambu.
  2. Drain the water from the soaked urad dal.
  3. Add it to blender.
  4. Add salt, green chilly and grind to coarse paste.
  5. Transfer to mixing bowl.
  6. Add finely sliced onions, curry and coriander leaves.
  7. Mix well.
  8. Heat oil in frying pan to deep fry the vadas.
  9. Wet your hands with water and take a small ball of the batter.
  10. Pat it flat, 
  11. Drop it gently in hot oil.
  12. Deep fry both sides to crisp and golden in medium flame.
  13. Drain the crispy Vadas in kitchen tissue.
To make Thayir Vada:
  1. Take warm water in a small bowl.
  2. Drop the vadas in the water.
  3. Immerse it for few minutes, till it becomes soft and spongy.
  4. Now squeeze the water from the vadas and drop them in mor kuzhambu.
  5. Mix well and allow to soak for an hour.
  6. Creamy delicious Thayir Vadai Kuzhambu is ready.
  7. Serve it with hot steamed white rice.

Spicy Mutton Biryani / Video Recipe

Spicy Mutton Biryani:  Here comes the quick special one pot meal biryani recipe that is not at all complicated and can be prepared at home in simple steps. Ingredients:
To marinate:
·         Mutton           - ½ kg
·         Turmeric pwd - a pinch
·         Red chilly pwd  -  ½ tsp
·         Ginger garlic paste    - ½ tsp
·         Yoghurt                       - 2 tbsp
·         Salt
To make Biryani:
·         Basmati rice    - 2 cups
·         Oil                   - 3 tbsp
·         Ghee               - 1 tbsp
·         Cumin seeds  - ½ tsp
·         Bay leaf           - 2
·         Cinnamon      - 2
·         Cloves             - 3 to 4
·         Elaichi             - 1
·         Star anise       - 1
·         Saunf              - ½ tsp
·         Sliced onions  - 2 cups
·         Ginger garlic paste    - 1 tbsp
·         Chopped mint & coriander leaves -  1 cup
·         Tomatoes       - 2
·         Turmeric pwd -  a pinch
·         Red chilly pwd           - 1 tsp
·         Garam masala pwd    - 1 tsp
·         Biryani masala pwd   - ½ tsp
·         Yoghurt                       - ½ cup
·         Fresh lemon juice      - ½ tsp
·         Salt to taste
Method:
1.       Wash and chop mutton pieces to bite sized pieces.
2.      Drain the water.
3.      Marinate with turmeric pwd, red chilly pwd, yoghurt and salt.
4.      Mix well and allow to marinate for an hour.
5.      Meanwhile chop onions, tomato, fresh mint and coriander leaves.
6.      Slice green chilly and keep ready.
7.      Add the marinated mutton pieces to cooker.
8.      Add 1 cup of water and pressure cook for 4 whistles.
9.      Turn off flame.
10.  Drain the water and set aside the mutton pieces.
11.    Reserve the drained water and cooking biryani.
12.   Wash and soak basmati for 5 mins.
13.   Drain water and keep ready.
14.   Heat oil and ghee in a pressure pan.
15.   Add cumin, bay leaf, cinnamon, cloves, elaichi, star anise and saunf.
16.   Wait to splutter.
17.   Add sliced onions and saute till golden.
18.  Add ½ tsp salt to enhance the frying of onions to golden.
19.   Once the onions are light brown, add ginger garlic paste.
20. Saute till the raw smell disappears.
21.   Add finely chopped mint and coriander leaves.
22.  Stir well.
23.  Add chopped tomatoes.
24.  Cook till oil separates.
25.  Add turmeric pwd, red chilly pwd, garam masala pwd, salt and biryani masala pwd.
26.  Mix well.
27.  Add yoghurt and combine.
28. Add the cooked mutton pieces.
29.  Combine and give a good stir.
30. Now add the basmati rice and mix gently.
31.   Add the drained water from cooking mutton. For 2 cups of rice …3 ½ cups of water to be added. So the total water from drained mutton cooking water plus plain water added should be 3 ½ cups.
32.  Mix well.
33.  Taste and adjust salt and seasonings.
34.  Add freshly squeezed lemon juice.
35.  Mix well.
36.  Close the pressure cooker lid.
37.  Pressure cook for 1 whistle in high flame.
38. Turn the flame to low and cook for 5 mins.
39.  Remove from flame.
40. Once the pressure goes off, open the lid and fluff gently.
41.   Aromatic delicious and spicy mutton biryani is ready.
42.  Enjoy hot with onion raitha and any curry of your choice.
