Dahi Bhalla / How to make Dahi Vada at home?

Today’s special post is yummy and all-time-favorite North Indian version of Dahi Vada. It is a very popular snack of Delhi & Punjab. In this recipe the lentil dumplings are soaked in a chilled yoghurt topped with sweet and spicy chutneys. It tastes absolute delicious with all the tempting flavors in it. Make this authentic recipe at home and enjoy the luscious chat.

Ingredients:
·         Urad dal              - 1 cup
·         Green chilly         - 1
·         Hing                     - a pinch
·         Grated ginger      -1 tsp
·         Oil                         - to deep fry
·         Yoghurt                - 3 to 4 cups
·         Red chilly pwd    - as needed
·         Pepper pwd         - to garnish
·         Chaat masala pwd- to garnish
·         Tamarind chutney-1 tsp
·         Green chutney    -1 tsp
Method:
1.       Wash and soak the urad dal in water for 2 hours.
2.      Strain the water and reserve for grinding.
3.      Then add it to the blender.
4.      Add salt, green chilly, hing and ginger.
5.      Add little of the reserved waterand grind it to smooth consistency.
6.      The battery should be of dropping consistency and should not be too thick or watery.
7.      Heat oil in a frypan.
8.      Once the oil is hot, wet your hands with water and take a dallop of batter and drop them in hot oil carefully.
9.      Deep fry them until it turns golden brown all over.
10.   Strain on a kitchen tissue.
11.    Take warm water in a saucepan.
12.   Immerse the vadas in the water one by one.
13.   Let it soak for 2 mins.
14.   Squeeze the water from the vadas gently and take them out.
15.   Now soft n spongy vadas are ready to absorb the yoghurt along with spices.
16.   Mix together yoghurt and water to smooth consistency.
17.   Add red chilly pwd and salt to taste.
18.   Soak the spongy vadas in the yoghurt and allow to rest for 5 to 10 mins.
19.   Transfer to serving bowl, and garnish by sprinkling red chilly pwd, pepper pwd, chat masala pwd, green chutney and tamarind chutney.
20.  Lipsmacking healthy delicious Dahi Bhalla is ready.
21.   Serve immediately.

Pepper Chicken Recipe / Chettinad Pepper Chicken / Roti Side Dish Recipes

Are you tired of plain regular chicken curries? Try this juicy flavorful lipsmacking pepper chicken with the vibrant zing of freshly cracked black pepper corns. It makes a perfect choice to go along with almost all prime dishes like roti, naan, chapathi, rice dishes etc.  Enjoy this hot and simple chicken preparation.
Ingredients:
To marinate:
·         Chicken               - ½ kg
·         Yoghurt               - 1 tbsp
·         Oil                       - 1 tsp
·         Turmeric pwd     - ¼ tsp
·         Red chilly pwd    - ½ tsp
·         Pepper pwd         - ½ tsp
·         Salt to taste
To make Curry:
·         Oil                        - 2 tbsp
·         Curry leaves        - a twig
·         Cardamom          - 2
·         Cinnamon           -1
·         Cloves                  - 3 to 4
·         Red chilly           -1
·         Onions sliced      - 1 cup
·         Ginger garlic paste- 1 tbsp
·         Fresh pepper corns- 1 tsp
·         Garam masala pwd- ¼ tsp
·         Lemon juice        - few drops
·         Salt to taste
Method:
1.       Wash and clean the chicken pieces.
2.      Marinate with yoghurt, salt, turmeric pwd, red chilly pwd and pepper pwd.
3.      Allow to rest for 2 hours.
4.      Heat oil in a frypan.
5.      Add curry leaves, cardamom, cinnamon and cloves.
6.      Wait to splutter.
7.      Add red chillies and toss.
8.      Add finely sliced onions and fry till light brown.
9.      Add ginger garlic paste and stir for a minute.
10.   Add the marinated chicken pieces.
11.    Add turmeric pwd, coriander pwd, kashmiri red chilly pwd and salt.
 
12.   Add ¼ cup of water and mix well.
13.   Cover and cook till the chicken is done. ( approximately 7 to 10 mins in medium flame)
14.   Simmer the flame and cook till the gravy thickens.
 
15.   Once the curry attains desired consistency, sprinkle freshly crushed pepper pwd.
16.   Sprinkle garam masala pwd and turn off the flame.

17.   Squeeze few drops of lemon juice and transfer to serving plate.
18.   Lipsmacking hot & delicious Pepper Chicken is ready.
19.   Serve hot with roti, naan, paratha or with rice.

·         Eggs                     - 2
·         Onion                   - 1
·         Tomato                - 1
·         Capsicum            - ½
·         Potato                  - ½
·         Pepper pwd         - ½ tsp
·         Oil                      - 2 to 3 tsp

Egg Omelette
Method:
1.       Beat egg in a small bowl and keep ready.
2.      Slice onion, tomato and capsicum to fine cubes.
3.      Wash and clean the potatoes.
4.      Peel the potatoes and slice it to thin pieces.
5.      Heat oil in a fry pan.
6.      Place them in the frypan gently.
7.      Shallow fry the potatoes for 2 mins each side or until browned.
8.      Add onion, capsicum slices and toss well.
9.      Add tomato slices and cook for a minute.
10.   Add salt and pepper pwd.
11.    Stir well.
12.   Add the beaten egg and spread completely over the veggies.
13.   Drizzle oil to the sides of the omelette.
14.   Sprinkle crushed pepper pwd.
15.   Cover and cook in low medium flame for few minutes until almost set and golden brown underneath.
16.   Turn off flame.
17.   Healthy egg omelette in Spanish style is ready.

Here goes the ultimate south Indian based recipe blended with Chinese gravy making it a scrumptiously tasty dish. Chilly Idly can be preparedwith left over Idlies also. It pairs up excellent with onion or cucumber raitha. This easy and healthy snack makes it a perfect dinner menu and kids would love it. Check the Indo-Chinese fusion dish at your home and enjoy the smiles of your family.

Ingredients:
·         Idly                       - 5 to 6
·         Onion                   - 1
·         Capsicum             -  ½
·         Garlic                   - 4 pods
·         Green chilly         -1
·         Spring onions sliced      -  ¼ cup
·         Coriander sliced - ¼ cup
·         Oil                         - to fry
·         Tomato ketchup  - 2 tbsp
·         Red chilly sauce  - 1 tbsp
·         Garam masala pwd- ½ tsp
·         Vinegar                - 1 tsp
·         Soya sauce          -  ½ tsp
·         Salt to taste
Method:
1.       Prepare soft n spongy idlies and keep ready. Click here to view the easy stepwise preparation to prepare idly at home.
2.      Cube them to slices.
3.      Slice onions and capsicum to cubes.
4.      Chop garlic to fine flakes.
5.      Slice green chilly lengthwise.
6.      Chop finely spring onions and coriander leaves.
7.      Set all the ingredients ready.
8.      Heat oil in a small frypan.
9.      Add the idly slices and deep fry in hot oil. ( its optional you can also shallow fry the idly pieces or just drizzle oil in hot dosa pan and saute the idly pieces to golden brown)
10.   Once it reaches crispy on edges, strain and keep it in kitchen tissue for the excess oil to drain.
11.    Heat 1 tbsp of oil in a frypan.
12.   Add the sliced onions, garlic and green chilly.
13.   Once the onion turns golden brown, add the capsicum and saute for a minute.
14.   Now add the tomato ketchup, red chilly sauce, garam masala pwd, vinegar, soya sauce, salt and mix.
15.   Add little water to bring it to saucy consistency.
16.   Add the fried idly slices and toss in high flame for a minute.
17.   Turn off flame.
18.   Add chopped spring onions and coriander leaves.
19.   Irresistibly tasty chilly idly is ready.
20.  Serve hot with onion or cucumber raitha.

To make stuffing:
·         Paneer                 - 200 g
·         Pepper pwd         - ¼ tsp
·         Cumin pwdd       - ¼ tsp
·         Grated ginger      - ½ tsp
·         Green chilly         - 1
·         Cilantro chopped- 1 tsp
·         Lemon juice        - few drops
·         Milk                      - 1 tbsp
To make Rolls
·         Bread slices         - 5 to 7
·         Melted butter      - 2 tbsp
·         Salt to taste

Method:
To make stuffing:
1.       In a mixing bowl, grate paneer to fine shreds.
2.      Add black pepper pwd, cumin pwd, greated ginger, salt, green chilly sliced to thin pieces, cilantro and lemon juice.
3.      Mix well.
4.      Add milk and knead softly to smooth dough.
5.      The paneer stuffing is ready.
To make bread paneer rolls:
6.      Trim the edges of bread slices.
7.      In a rolling pin, roll the bread to thin slices.
8.      Place 1 tbsp of paneer stuffing and spread it in the bread evenly.
9.      Pat it gently. 
10.   Now roll the bread tightly and seal the edges by applying little warm water to the        edges.
11.    Repeat the same till all the bread slices are rolled.
12.   Brush melted butter over the rolls.
13.   Set it aside.
14.   Heat butter /oil in a fry pan.
15.   Place the bread rolls carefully on the hot pan.
16.   Keep rolling them until all the sides turn golden brown.
17.   Remove from flame.
18.   Healthy delicious bread paneer rolls are ready.
