Indian style Chinese Chilly chicken tastes simply scrumptious and makes an unbeatable combo with fried rice, roti and naan. It is one of the most favorite dish of almost all non-veg lovers. This restaurant style starter recipe can be prepared easily at home. The marinated and fried chicken is drenched with mouth-watering sweet-spicy-salty  flavored sauces and garnished with spring onions.

Ingredients:
·         Chicken boneless            - ½ kg
·         Red chilly pwd                - ½ tsp
·         Turmeric pwd                 - a pinch
·         Lemon juice                    - ½ tsp
·         Ginger garlic paste         - ½ tsp
·         Corn flour                        - 2 tbsp
·         Red chilly sauce              - 1 tbsp
·         Soy sauce                         - ½ tbsp
·         Tomato ketchup              - 2 tbsp
·         White vinegar                 - ½ tbsp
·         Oil                                    - to deep fry
·         Ginger garlic paste         - ½ tsp
·         Curry leaves                    - 1 twig
·         Slit green chilly               - 1
·         Onion       sliced              - 1 cup
·         Capsicum sliced              -  ½ cup
·         Sliced spring onions       - ½ cup
·         Salt to taste
·         Fresh coriander leaves
Method:
1.       Wash and slice chicken to bite-sized pieces.
2.      Drain the water and take it in a mixing bowl.
3.      Add red chilly pwd, turmeric pwd, salt, lemon juice and ginger garlic paste.
4.      Mix well.
5.      Add corn flour to the mixture and allow to marinate for 1 hour.
6.      In a bowl, mix red chilly sauce, soy sauce, tomato ketchup and white vinegar.
7.      Keep it aside.
8.      Heat oil in a wok / kadai.
9.      Drop the chicken pieces one by one carefully in hot oil.
10.   Deep fry until the chicken pieces  turns crisp and golden.
11.    Drain it in kichen tissue.
12.   In a separate pan, heat 2 tbsp of oil.
13.   Add ginger garlic paste, curry leaves, slit green chilly and saute.
14.   Fry for a minute.
15.   Add sliced onion and capsicum cubes.
16.   Stir fry on high flame for 2 – 3 minutes.
17.   Take care the vegetables are not overcooked and it should be crunchy.
18.   Now turn the flame to low and add the sauce mixture ( step 6) and ½ cup of water.
19.   Taste and adjust salt carefully as the soy sauce also has salt.
20.  When the sauce turns thick and dry, add the fried chicken pieces and sliced spring onions.
21.   Mix well.
22.  Turn off the flame.
23.  Transfer to serving bowl and garnish with finely chopped coriander leaves.
24.  We enjoyed hot with soft phulkas.

Kerala Chicken Curry / Nadan Kozhi Curry / Spicy Chicken Curry Recipe

Today’s recipe is a simply exquisite dish, kerala  chicken curry. The fresh cardamom flavor and the brilliant red gravy color absolutely tickles your tastebuds.  Its one of my family favorite recipe and tastes excellent with kerala parotta. Try this traditional & easy recipe..!
Similar Recipes:
 Ingredients:
To marinate:
·         Chicken pieces    - ½ kg
·         Turmeric pwd     - a pinch
·         Red chilly pwd    - 1 tsp
·         Lemon juice        - few drops
·         Curry leaves chopped  -  1 tbsp
To make Paste:
·         Cumin seeds                   - ½ tsp
·         Fennel seeds                   - 1 tsp
·         Garlic pods                      -4
·         Red chilly                        - 1
·         Pepper                             - ½ tsp
·         Coriander seeds             - 1 tbsp
·         Cinnamon                       - 1
·         Cloves                              - 4
·         Cardamom                      - 2
·         Grated ginger                  - 1 tsp
To make Curry:
·         Coconut oil                      - 2 tbsp
·         Cumin seeds                   - ½ tsp
·         Sliced onion                    - 1 cup
·         Tomato slices                  - 1 cup
·         Green chilly                     - 1 (optional)
·         Turmeric pwd                 - ¼ tsp
·         Red chilly pwd                - ¼ tsp
      Grated coconut                - ½ cup
·         Salt to taste
Method:
1.       Wash and slice the chicken to bite-sized pieces.
2.      Marinate the chicken with turmeric pwd, kashmiri red chilly pwd, lemon juice, salt and curry leaves.
3.      Heat a fry pan.
4.      Add cumin seeds, fennel, garlic, red chilly, pepper, coriander seeds, cinnamon, cloves, cardamom and grated ginger.
5.      Once roasted for a minute, turn off the flame.
6.      Allow to cool and grind to fine paste  by adding enough water.
7.      Heat coconut oil in the frypan.
8.      Add cumin seeds, wait to splutter.
9.      Add curry leaves and onions.
10.   Saute the sliced onions till transculent.
11.    Saute the tomato slices and green chilly.
12.   Add the ground masala ( step 6)
13.   Mix well and allow to cook for 4 to 5 mins in medium flame.
14.   When the masala thickens add turmeric pwd and kashmiri red chilly pwd.
15.   Add marinated chicken and stir along with the masala.
16.   Add ½ cup of water and stir well.
17.   Taste and adjust salt and seasonings.
18.   Cook the chicken covered in low medium flame.
19.   Take care the masala doesn’t stick to the bottom of the frypan.
20.  After 5 mins, turn the flame to low and cook covered until the chicken is cooked tender.
Add the grated coconut to blender, add little water and grind it to fine paste.
21.   Add the finely ground coconut paste and combine.
22.  Keep the flame in simmer and cook the chicken curry for 5 mins.
23.  Now you can see the masala starts oozing out of the oil.
24.  That’s it kerala Chicken curry is ready.
25.  Transfer to serving bowl and garnish with fresh coriander leaves.
26.  It serves best with biryani, kerala parotta, chapati and puri.

Hyderabadi Dum Chicken Biryani: Hyderabadi biryani is one of the heavenly dish liked by all non-veg lovers. This popular biryani recipe is most flavorful & delicious in taste. Anyone can prepare at home using this easy recipe. The basmati rice is cooked on dum along with spicy chicken masala over slow heat.  Prepare it at home to make a mark of your weekend special lunch..!

Ingredients:
To marinate:
·         Chicken                           - ½ kg
·         Lemon juice                    - ½ tsp
·         Turmeric pwd                 - a pinch
·         Red chilly pwd                - 1 tsp
·         Ginger garlic paste         - 1 tsp
·         Salt                                   - ½ tsp
To cook Rice:
·         Basmati rice                    - 2 cups
·         Oil                                    - 1 tsp
·         Cardamom                      - 2
·         Star anise                         - 1
·         Salt                                   - ½ tsp
To prepare Biryani:

·         Oil                                   - 1 tbsp
·         Ghee                                - 1 tbsp
·         Cumin seeds                   - ½ tsp
·         Bay leaf                            - 2
·         Cloves                              - 4
·         Cinnamon                       - 2
·         Onions                             - 2
·         Ginger garlic paste         - 1 tsp
·         Green chilly                     - 1 or 2
·         Mint and coriander leaves – handful
·         Yoghurt                            - 2 to 3 tbsp
·         Tomato sliced                 - ¼ cup
·         Garam masala pwd        - ½ tsp
·         Ghee                                - to grease the pan
·         Saffron                             -  soaked in 1 tbsp of water.
·         Fried onions                    - to garnish
·         Freshly sliced coriander leaves
·         Salt to taste        
Method:
To Marinate:
1.       Clean and wash the chicken pieces.
2.      Drain the water thoroughly.
3.      Chop the chicken to desired size.
4.      Add lemon juice, turmeric pwd, red chilly pwd, salt and ginger garlic paste.
5.      Mix well and allow to marinate for 2 hours.
To cook Rice:
6.      Wash and soak basmati rice in water for 10 mins.
7.      In a pressure pan, boil about 4 cups of water.
8.      Once the water boils, add oil, salt, cardamoms and star anise.
9.      Add the rice and allow to cook in high flame.
10.   Once the rice is three-fourth cooked, drain the rice immediately.
11.    Set it aside.
To prepare Chicken Masala:
12.   In the same pan, heat oil and ghee.
13.   Add cumin seeds, bay leaf, cloves and cinnamon.
14.   Wait to splutter.
15.   Add finely chopped onions and saute till transculent.
16.   Add ginger garlic paste and sliced green chilly.
17.   Saute for a minute.
18.   Add finely chopped mint and coriander leaves.
19.   Saute for few minutes.
20.  Add marinated chicken, sliced tomatoes and yoghurt.
21.   Cover and cook until the chicken is cooked tender.
22.  Add garam masala pwd and mix well.
23.  Cook in high flame till the chicken masala reaches desired consistency.
To prepare Biryani:
24.  In a different pan, grease the bottom of the pan with ghee.
25.  Spread a layer of chicken masala and add the cooked basmati rice on top of the chicken pieces.
26.  Again add a layer of chicken masala.
27.  Repeat the process of layering of rice and chicken masala.
28.  Finally spread the rice and fried onions on the top layer.
29.  Pour saffron water so that it spreads on some of the rice.
30.  Cover the pan with a heavy lid.
31.   Keep a bowl full of water over the lid. This helps the biryani to cook in dum and the flavors infuse together.
32.  Keep the flame in low and cook for 10 mins.
33.  Turn off the flame.
34.  Sprinkle finely chopped coriander leaves and squeeze few drops of lemon juice.
35.  Keep it covered for 10 mins.
36.  Fluff gently. Take care not to break the rice grains.
Serve hot with raitha and spicy gravy.
