Stuffed Kulcha Recipe / Stuffed Masala Kulcha / How to make Stuffed Kulchas at Home?

Stuffed Masala Kulcha: Today’s recipe is a very popular North Indian Stuffed Masala Kulcha. It is an appetizing & filling dinner recipe from the regular naan and roti. It tastes soft and delicious with spicy masala stuffing. It pairs up great with yoghurt and pickle. Lets see..

Similar Recipes:
Ingredients:
·      Maida / All purpose flour -2 cups
·      Yeast                    - 1 tsp
·      Milk                      - ½ cup
·      Baking pwd         - ½ tsp
·      Sugar                   - 1 tsp
·      Oil or ghee           - as required
For Masala Stuffing:
·      Potato                       - 1
·      Paneer shredded       -  ½ cup
·      Red chilly pwd          - ½ tsp
·      Coriander pwd          - 1 tsp
·      Cumin pwd               - ½ tsp
·      Garam masala pwd  - 1 tsp
·      Amchur pwd              - ¼ tsp
·      Green chilly               - 1
·      Coriander leaves chopped - 2 tbsp
·      Sesame seeds             - 2 tsp
·      Salt to taste
Method:
1.              Sieve all purpose flour and keep ready.
2.             Add a tsp of yeast to ½  cup of lukewarm milk.
3.             Set it aside for minimum 1 hour.
4.             In a mixing bowl, add all purpose flour, salt, baking pwd and sugar.
5.             Combine well.
6.             To it add yoghurt, yeast mixture and oil or ghee.
7.             Knead it to smooth soft dough.
8.             Cover it with a damp cloth or cling film and let it rest for 2 hours.
For Stuffing:
9.             Meanwhile lets prepare the masala stuffing.
10.          Boil the potatoes, peel and mash it.
11.           Take it in a mixing bowl.
12.          Add grated paneer to it.
13.          Add the spices red chilly pwd, coriander pwd, cumin pwd, garam masala pwd, amchur pwd and salt.
14.          Add finely sliced green chilly and coriander leaves.
15.          Mix well.
16.          Divide into equal sized balls.
17.          Now make balls out of the dough.
18.          Roll it to small disc.
19.          Stuff the masala mixture balls and seal the edges.
20.         Dust it with flour and flatten these balls to thick parathas.
21.         Sprinkle sesame seeds and roll it slightly.
To make Kulcha:
22.         Heat a dosa pan.
23.         Grease it with ghee/oil.
24.         Place the flattened parathas carefully.
25.         Fry them on both sides by drizzling oil.
26.         Once it is golden brown, remove from flame.
27.         Stuffed masala kulchas are ready.
28.         Relish hot with yoghurt, pickle or with any spicy gravy.

Ingredients:
·         All purpose flour / maida- 2 cups
·         Egg                                   - 1
·         Sugar                               - 1 tsp
·         Yoghurt                            - 2 tbsp
·         Milk                                  - ½ cup or as needed to knead
·         Salt to taste
·         Oil to cook
Method:
1.       Beat egg in a bowl and keep it ready.
2.      In a mixing bowl, take all purpose flour.
3.      To it add salt, sugar, yoghurt, 1 tbsp oil and mix.
4.      Add the beaten egg.
5.      Combine all the ingredients.
6.      Now sprinkle milk little by little and knead gently.
7.      Continue kneading the dough for 4 to 5 mins.
8.      The consistency of the dough should be soft, smooth and sticky.
9.      Now apply little oil/ ghee over the surface of the dough and keep covered.
10.   Allow to rest for 30 to 40 mins.
11.    Now grease oil in your hands and knead it for few more minutes.
12.   Divide the dough to equal sized balls.
13.   Dust the rolling disc with flour.
14.   Now roll the balls to thin shape using roller pin.
15.   Spread oil over the surface of the roti.
16.   Knead it to lengthwise pleats.
17.   Twist it to round shape.
18.   Dust with some more flour.
19.   Roll gently to small disc shape.
20.  Heat a non- stick pan on medium flame.
21.   Grease oil to it.
22.  Place the parotta carefully.
23.  Drizzle oil to the sides.
24.  Cook on both sides flipping once in a while, till it turns golden brown in colour.
25.  Keep the cooked parotta warm in hot pack.
26.  Repeat the same till all the parottas are done.
27.  Soft n fluffy Kerala parottas are ready to relish.
28.  Serve hot with raitha, spicy curry, pickle or any dip of your choice.

Today, I am gonna share one of the most popular raitas of North India, Boondi Raita. It is one of the quick & easy yoghurt dip recipe. It can be prepared by anyone in minutes and it pairs up best with biryani, paratha and many other delicious meal. In this unique raita, the crispy savory boondi is mixed together with mildly spiced yoghurt. Not only this raita tastes lipsmacking good, also this is..very good for digestion. Ingredients:
·      Yoghurt /curd                 - 2 cups
·      Red chilly pwd                - ¼ tsp
·      Roasted cumin pwd       - ¼ tsp
·      Chat masala pwd            - ½ tsp
·      Pepper pwd                     - ¼ tsp

·      Salt to taste
·      Fresh coriander leaves to garnish
Method:
1.     Take yoghurt / curd in a mixing bowl.
                  keep the kara boondi ready.
2.    Beat well by adding little water.
3.    Add salt and mix well.
4.   Now sprinkle red chilly pwd, cumin pwd, chat masala pwd and pepper pwd.
5.    Add finely chopped coriander leaves.
6.   Then at last add boondhi and give a good stir.
7.    Allow to rest for 2 mins, so that the flavors seep through the curd.
     Transfer to serving bowl.
8.   Garnish with more boondhis, coriander leaves and red chilly pwd.
9.   Flavorful boondhi raita is ready in no minutes.
10.Relish immediately and enjoy the crisp taste of boondhis along with spicy yoghurt taste.

Wheat Puttu / Godhambu Puttu / Healthy Breakfast Ideas

Today’s special post is a easy, tasty and very healthy Wheat Puttu. It’s a absolutely nutritious breakfast or snack recipe. It’s a South Indian favorite breakfast and it is made with whole wheat flour and shredded coconuts. We used to relish this traditional dish at weekends along with kadalai curry.  The same can be made with rice flour also.

Ingredients:
·         Wheat flour /godhumai maavu  -1 cup
·         Warm water                                - ¼ cup
·         Grated coconut                           - 2 to 3 tbsp
·         Salt as needed
Method:
1.       Add wheat flour to the frying pan.
2.      Dry roast in low flame for about 5 mins.
3.      Once the wheat flour lets out nice aroma, turn off flame.
4.      Transfer the roasted wheat flour to mixing bowl.
5.      Sprinkle salt and warm water and fluff gently.
6.      Add water little by little so that the flour texture comes to crumbly texture.
7.      Now add this to the blender and give 1 or 2 blitz/pulse to get smooth and soft texture.
8.      Your puttu flour is ready.
9.      The flour should be lump free.
10.   Grease the puttu mould and add a tbsp of freshly grated coconut and top it with crumbly flour till half of the mould.
11.    Then repeat until coconut comes on top of the mould.
12.   Steam cook for 10 mins or until cooked well.
13.   Let it cool.
14.   Transfer carefully the cooked puttu to the mixing bowl.
15.   Healthy delicious Wheat Puttu is ready.
16.   Relish hot with any spicy curry, kadalai curry or any non-veg curry of your choice.
17.   My kids love to taste puttu with sugar and ghee.
