Here’s a delicious vegetable curry - a perfect side dish to accompany our chapati, roti, poori, pulav or veg biryani. This can be prepared quick and makes a nutritious combo of variety of healthy veggies. This dish is very colorful & tempting. I love to make this tasty curry with freshly available seasonal veggies for weeknight dinner. Check out this yummy recipe with the goodness of your favorite veggies.

Ingredients

Carrot, peas, potato, beans, radish (any veggies of your choice) - 2 cups

Oil - 1 tbsp

Cumin - ½ tsp

Onions - 2

Ginger garlic paste - 1 tbsp

Green chilly - 2

Tomato - 2

Cashew nuts - 5 to 6

Grated coconut - 2 tbsp

Turmeric pwd - ¼ tsp

Red chilly pwd - ½ tsp

Coriander pwd - 1 tsp

Garam masala pwd - ½ tsp

Lemon juice - few drops

Salt to taste

Coriander & mint leaves

Instructions

1.

Wash and slice the veggies

2.

In a pressure pan add the peas and other veggies

3.

Pressure cook for one whistle

4.

Heat oil in a wide pan

5.

Add cumin and allow to splutter

6.

Add sliced onions and saute till transculent

7.

Add green chilly, ginger garlic paste and saute for a minute

8.

Add chopped tomato, sliced coriander and mint leaves and cook till soft

9.

Add cashew nuts and grated coconut

10.

Turn off flame and allow to cool

11.

Add it to blender and mash it to coarse paste

12.

Add this masala paste to the pan

13.

Add turmeric pwd, red chilly pwd, coriander pwd and garam masala pwd

Mix well and add sliced capsicum

15.

Add the cooked veggies

16.

Stir well and cook for 2 mins

17.

Turn off flame and squeeze few drops of lemon juice

18.

Yummilicious mixed veg korma ready
