KERALA STYLE EGG CURRY - NADAN MUTTA CURRY

Kerala Egg Curry / Mutta Curry is a tasty and classic recipe of Kerala cuisine. It is flavorful and goes well with Appam, idiyappam, dosa, etc., Its very simple to prepare. The recipe is spicy and lipsmacking good with the addition of..coconut milk. Try it today & enjoy the unique taste of this curry.

Ingredients:
·      Eggs                       - 4
·      Oil                           - 2 tbsp
·      Mustard                 - ¼ tsp
·      Cumin                    - ½ tsp
·      Split urad dal         - 1 tsp
·      Curry leaves          -1 twig
·      Hing                       - a pinch
·      Onion                     -2
·      Grated ginger        - 1 tsp
·      Green chilly           - 1 or 2
·      Turmeric pwd        - ¼ tsp
·      Coriander pwd       - 1 tsp
·      Red chilly pwd       - 1 tsp
·      Saunf                      - ½ tsp
·      Tomato                   - 2
·      Coconut grated      - 1 cup
·      Garam masala pwd- 1 tsp
·      Coriander leaves to garnish
·      Salt to taste
Method:
1.          Boil eggs and deshell it.
2.         Make slits on the sides.
3.         Keep it aside.
4.        Heat oil in a fry pan.
5.         Add mustard, cumin seeds, split urad dal, curry leaves, hing and wait to splutter.
6.        Add finely sliced onion and saute for a minute.
7.         Add sliced green chilly, grated ginger and toss.
8.        Add turmeric pwd, coriander pwd, salt and red chilly pwd.
9.        Combine well.
10.     Add finely sliced tomatoes, saunf and cook till oil separates.

11.       Grate coconut to fine pieces.
12.      Add it to blender and grind to smooth paste by adding little water.
13.      Add the coconut paste to fry pan.
14.     Mix well and allow to cook.
15.      Once the masala thickens, add garam masala pwd.
16.     Allow to cook for 1 minute.
17.      Add the boiled eggs.
18.     Mix well.
19.     Remove from flame by adding fresh coriander leaves.
20.    Spicy Nadan Mutta Curry is ready.
21.      We enjoyed it with Egg Fried Rice.
