BROCCOLI FRY - BROCCOLI STIR FRY RECIPE / EASY BROCCOLI RECIPES / STEP BY STEP

Today, I’m here with a delicious and simple stir-fry focused on broccoli and chick pea flour mixture. Broccoli is a nutritious vegetable that is loaded with super nutrients and have therapeutic properties.
I clipped this recipe from Show me the Curry last week and have found it to be the best-tasting broccoli fry.
It's easy to cook broccoli and it readily absorbs the tasty flavors in this stir fry recipe. You can also modify this recipe, to include any veggies you choose.
This stir fry goes best with rice or even with roti & chapatti. 

Check out this nutritious & tasty recipe, that will make your taste buds jump for joy..!
Ingredients:
·         Broccoli                   - 1 small size
·         Oil                            - 2 tbsp / divided
·         Cumin seeds            - ½ tsp
·         Grated garlic             - 1 tbsp
·         Hing / asafetida        - a pinch
·         Green chilly              - 1
·         Onion                       - 1
·         Besan flour               - ½ cup
·         Turmeric pwd            - a pinch
·         Red chilly pwd          - ½ to ¾ tsp
·         Cumin pwd               - ½ tsp
·         Amchur pwd             - ½ tsp
·         Garam masala pwd   - ½ tsp
·         Coriander pwd          - ½ tsp
·         Lemon juice              - 1 tsp
·         Salt to taste
Method:
1.     Wash broccoli well and slice to fine florets.
2.     Heat 1 tbsp of oil in a frying pan.
3.     Add cumin seeds and allow to splutter.
4.     Add finely sliced garlic, hing, green chilly and stir fry for few seconds.
5.     Now add the onions and continue frying until the onions turn light brown.
6.     Now add broccoli and mix well with the spices.
7.     Sprinkle few drops of water, sprinkle a pinch of salt and combine.
8.     Cover and cook for 4 to 5 mins in low medium flame.
9.     Meanwhile, take a mixing bowl, add besan / chickpea flour, turmeric pwd, red chilly pwd, cumin pwd, amchur / dry mango pwd, garam masala pwd, salt and coriander pwd.
10.  Add 2 tsp of oil and incorporate well into the flour mixture.
11.  Uncover the broccoli and sprinkle the spicy chickpea flour mixture evenly all over the broccoli florets.
12.  Sprinkle few more drops of water ( just enough to moisten the chickpea flour lightly)
13.  Mix, cover and cook for another 3 to 4 mins.
14.  The spicy chick flour mixture coats the broccoli florets and give great texture and flavor.
15.  Turn off flame.
16.  Delicious Broccoli stir fry is ready.
17.  Transfer to serving bowl.
18.  Garnish with lemon juice and serve hot with rice and dal.
19.  Also it can be served as a side dish with roti, chapatti and the leftover can be stuffed in a wrap or a sandwich.

KADAI PRAWN - SHRIMP RECIPE / PRAWNS KADAI / JHINGA CURRY / PRAWN KARAHI RECIPES

Hello friends, today we will see the delightfully spicy and aromatic Kadai Prawns recipe. This is an easy curry recipe, in which prawns are cooked with tomato based masala and spices. 
This will take only 20 to 25 mins to cook, but the tempting taste...
you will not forget even in a hurry...!!
Try this delectable and extremely flavorful Prawn / Shrimp curry recipe, that can be mopped up with tasty naan or any Indian breads and enjoy your dinner meal..:)
Ingredients:
·       Prawns peeled and deveined   - 300 g
·       Oil                                        - 2 to 3 tbsp
·       Sliced ginger                        - 1 tsp
·       Green chilly                          - 1
·       Onion                                   - 2
·       Garlic paste                          - 1 tsp
·       Tomato puree                        - 1 cup
·       Turmeric pwd                        - ¼ cup
·       Red chilly pwd                      - 1 tsp
·       Coriander pwd                      - 1 tsp
·       Cumin pwd                          - ½ tsp
·       Pepper pwd                         - ½ tsp
·       Fresh coriander leaves chopped  - 1 cup
·       Garam masala pwd            - ½ tsp
·       Lemon juice                       - 1 tsp
·       Salt to taste
Method:
1.   Clean, peel and devein the prawns.
2.   wash the prawns thoroughly and keep aside.
3.   Heat oil in a frypan.
4.   Once the oil is hot, add sliced ginger and green chilly.
5.   Saute for a minute.
6.   Add sliced onion and fry till transculent.
7.   Add garlic paste and saute till the raw smell  disappears.
8.   Add tomato puree and fry till oil separates.
9.   Add turmeric pwd, red chilly pwd,coriander pwd, cumin pwd pepper pwd, salt and combine.
10. Fry for one minute.
11. Add freshly chopped coriander leaves.
12. Now add the cleaned prawns.
13. Combine well.
14. Add ½ cup of water and cook the prawns covered.

15. Once the prawns are cooked, stir fry in high flame till the gravy attains desired thick consistency.
16. Add garam masala pwd, mix well.
17. Squeeze few drops of fresh lemon juice.
18. Turn off flame.
19.  Take out in a serving dish and garnish with fresh coriander leaves and onion rings.
20. Serve hot with naan, chapatti, paratha, roti or even with jeera rice.
We had it with hot steamed white rice, fish curry & coriander leaves chutney / thogayal..:)

Sambar Recipe - Mixed Vegetable Sambar / How to make Quick & Easy Veg Sambar / Step by Step

Mixed Vegetable Sambar - it is quite popular among Indians and for those who wonder what it is? It is the most flavorful soup like dish, which is often eaten with rice as a main course along with some vegetable side dish and appalam / papad. Also it accompanies great with idly, dosa recipes.   
It is completely healthy as it provides proteins from pulses, anti-oxidants
& lot of fibre from veggies and spices.
Some of the veggies that suits best for sambar are carrot, pumpkin, brinjal, drumstick, potatoes, raddish, okra,  broad beans, french beans, shallots, onions and tomato.
This is the easy and quick method, I usually follow to make sambar as it is less time consuming. 
In this recipe, I used freshly prepared  homemade Sambar Pwd. 
Try this Indian mixed Vegetable Sambar recipe and give us your feedback..!
Ingredients:
·           Toor dal                   - 1 cup
·           Chopped veggies     - 1 bowl
·           Onion                       - 1
·           Tomato                    - 1
·           Tamarind                  - small piece
·           Oil                            -2 tsp
·           Mustard                    - ¼ tsp
·           Cumin                      - ½ tsp
·           Split urad dal            - ½ tsp
·           Fenugreek seeds      - ½ tsp
·           Green chilly              - 1
·           Curry leaves             - 6 to 7
·           Red chilly                 - 1
·           Hing / asafetida        - a generous pinch
·           Turmeric pwd            - ¼ tsp
·           Red chilly pwd          - ¾ to 1 tsp
·           Coriander pwd          - 1 ½ tsp
.      Sambar Pwd            - 1 tsp
·           Fresh coriander leaves
·           Salt to taste
Method:
1.      Chop all the colorful & nutritious veggies  like carrot, potato, beans, brinjal,  drumstick, radish, ladies finger, etc as per your own choice and keep it ready.
2.      Slice onion and tomato to fine slices.
3.      Wash and soak toor dal for 10 mins.
4.      Add enough water and pressure cook, till the dal is mushy and completely cooked.
5.      Open the lid, mash  the lentils and keep  aside.
6.      Keep thick tamarind paste by soaking tamarind in warm water for 10 mins and once the tamarind turns soft, squeeze the tamarind and remove the pulp.
7.      Now heat oil in a fry pan.
8.      Add mustard, cumin, split urad dal, fenugreek seeds, green chilly, curry leaves, red chilly and hing.
9.      Allow to splutter.
10.    Add onion and fry till transculent.
11.    Add mashed tomato and saute for a minute.
12.    Now add turmeric pwd, red chilly pwd, coriander pwd, salt and combine.
13.    Stir for a minute.
14.    Now add the chopped veggies and stir well until the veggies are coated with the spice masala.
15.    Add 1 cup of water and cook covered in medium flame for 4 to 5 mins.

16.    Simmer for few more minutes.
17.    Once the veggies are done, add the mashed dal.
18.    Mix well.
19.    Add some warm water if required to give a medium consistency for sambar.
20.    You can see the consistency of the sambar in the below pic.
21.    Allow to boil for 3 to 4 mins.
22.    Now add the thick tamarind juice and stir well.

23.    Cook further for 2 mins.
24.    Add sambar pwd, mix well and allow to boil.
25.    Enjoy the aroma and flavors from the tempting mixture getting infused from the sambar.
26.    Taste and adjust salt and seasonings.
27.    Turn off flame.

28.    Garnish with freshly chopped coriander leaves.
29.    Serve hot with steamed rice, idly, dosas, uthappams, etc.
30.    We had the sambar with rice and aloo roast.
