KALAKAND SWEET / EASY SWEET RECIPES / INDIAN MILK BURFI RECIPE / STEP BY STEP

Kalakand is a very popular  Indian sweet. It is also known as Malai Burfi in North India. This sweet is soft, grainy in texture, which is just mouth watering fresh and rich in flavor and loved by everybody.
This delicious sweet is made out of solidified, sweetened milk and cottage cheese. Treat  yourself with this exotic,  traditional dessert and enjoy..!
Here goes the very easy and shortcut recipe for kalakand..:)
Ingredients:

·         Milk                          - 1 litres
·         Paneer                     - 200 g
·         Sugar                       - ½ cup
·         Ghee                        - 2 tbsp
·         Chopped nuts           - 2 tbsp
Method:
1.     Boil milk in a thick bottomed pan.
2.     Heat in simmer by stirring once in a while, until the milk reaches half its volume.
3.     Take paneer in a bowl and grate to fine shreds with finger.
4.     You can prepare paneer at home ( click here to see, how to prepare paneer at home with stepwise pics)  or you can use store bought paneer too.
5.     Once the milk reaches thicker consistency, add the paneer.
6.     Stir well.
7.     Cook the paneer, till the consistency reaches the dough consistency.
8.     Take care the mixture doesn’t gets stick to the bottom of the pan, else the color changes.
9.     After some 7 to 8 mins, the mixture turns thicker.
10.  Add sugar, ghee and combine.
11.  Mix by continuously stirring the mixture with the spatula. 
12.  Cook till the mixture turns lumpy.
13.  This should be done of low flame / heat level only.
14.  Once it reaches coarse dough texture and separates from the non-stick pan, turn off the flame.
15.  Take a small tray and grease it with oil or ghee.
16.  Spread the kalakhand to the tray and flatten it over the top with a spoon.
17.  Garnish with grated almond or pistachio slices.
18.  Allow to cool off for 30 mins.
19.  Cut it to desired shape with a greased knife when its still warm.
20.  Serve warm or chilled.
21.  Delicious lipsmacking homemade Kalakand sweet is ready.

Aloo Chana Chat / Easy Chat Recipes / Step by Step

Aloo Chana Chaat is a spicy, tangy, chatpata snack, which is very easy to prepare, fresh and refreshing to eat. 
This awesome dish is very flavorful combined with a lipsmacking combo of boiled potato cubes, chickpeas, onions, tomato, coriander leaves and spiced up with chilly and pepper pwd. 
We can serve this chaat as a light meal or evening snack.  With this snack , we can get a good amount of dietary fibre, protein and other nutritions. 
Here goes the easy, delicious and healthy Aloo Chana Chaat recipe..
Ingredients:
·       Garbanzo ( Chana )   - 1 cup
·       Potato                      - 1
·       Onion chopped         - ½ cup
·       Tomato chopped      - ¼ cup
·       Coriander leaves chopped -  ½ cup
·       Mint leaves chopped - ¼ cup
·       Red chilly flakes       - ½ tsp
·       Green chilly              -1
·       Cumin pwd               - 1 tsp
·       Chat masala pwd      - ½ tsp
·       Carrot chopped         - ¼ cup
·       Lime juice                 - 1 tsp
·       Sweet tamarind chutney        - 1 ½ tbsp
·       Mint chutney                         - 1 ½ tbsp
·       Pomegranate seeds              - ½ cup
·       Salt to taste
     Method:
1.   Wash and soak chana (garbanzo ) overnight.
2.   Wash and peel the potatoes and dice them to cubes.
3.    Pressure cook the potatoes and chickpeas till it turns soft. 
4.   Set it aside.
5.   Chop finely onion, tomato, carrot, coriander leaves, mint leaves & green chilly. keep ready the sweet tamarind chutney, mint chutney, pomegranate, chat masala pwd and freshly ground cumin pwd.
6.   Take a bowl.
7.   Add boiled potatoes and garbanzo.
8.   Add chopped onions and green chilly, 
9.   Add red chilly pwd, chat masala pwd and cumin pwd.
10. Add carrot, mint leaves, lime juice, salt and coriander leaves.
11. Add sweet tamarind chutney and green chutney.
 Combine well.
12. Now add the pomegranate seeds.
13. That's it...mix all together.
14.  Tongue-tickling Aloo Chana Chat ready.

IDLY UPMA RECIPE - HOW TO MAKE IDLY UPMA WITH LEFTOVER IDLIES / EASY BREAKFAST RECIPES

The South Indian stape Idly can be used to prepare a variety of dishes like Chilly Idly, Masala Idly, Mini Idly with Sambar, Kanchipuram Idly, etc.
Today, I am here with really easy Idly Upma recipe. This is a versatile dish, that can be prepared with leftover idlies. It makes a filling snack for breakfast or even as a tea-time snack.   
In this recipe,the crumbled idlies are given a makeover by stir frying them with onions and tempering with flavorful spices. it tastes absolutely yummy that you can even serve it to guests. 
Once you try this, I’m sure you’ll make some extra idlies next time, just to have this delicious upma..:)
Ingredients:
·         Idly                          - 4 to 5
·         Oil                            - 1 tsp
·         Mustard                    - ¼ tsp
·         Cumin seeds            - ½ tsp
·         Split urad dal            - 1 tsp
·         Curry leaves             - a few
·         Green chilly              - 1
·         Red chilly                 - 1
·         Grated ginger           - 1 tsp
·         Peanuts                    - 2 tbsp
·         Onion                       - 1
·         Turmeric pwd            - ¼ tsp
·         Hing                         - a pinch
·         Coriander pwd          - ½ tsp
·         Lemon juice              - few drops
·         Salt to taste
·         Fresh coriander leaves
Method:
1.     Heat oil in a pan.
2.     Season with the tempering ingredients, mustard, cumin seeds, split urad dal, curry leaves, green chilly, red chilly and grated ginger.
3.     Wait to crackle.
4.     Add finely sliced onions, toss till light brown.
5.     Add peanuts and saute further.

6.     Add turmeric pwd, hing, salt, coriander pwd and combine.
7.     Take warm water in a bowl.
8.     Dip in the idlies, just for few seconds.
9.     Squeeze the water gently and crumble the idly coarsely.
10.  Add the crumbled idly to the pan.
11.  Mix well and cook covered for 2 mins.
12.  Turn off flame.
13.  Squeeze few drops of lemon juice.
14.  Garnish with fresh cilantro leaves.
15.  Yummilicious Idly Upma is ready.
16.  Serve hot immediately with any side dish of your choice.
