Egg Biryani is the delicious and flavorful rice dish cooked in aromatic Indian spices & spicy egg masala. Its simply easy and quick to prepare. Ingredients

Basma ti rice - 2 cups

Eggs - 3 or 4

Oil - 3 tbsp

Ghee - 1 tbsp

Cumin seeds - 1 tsp

Bay leaf - 2

Cardamom - 2

Cloves - 4 to 5

Peppercorn - 5 to 6

Cinnamon - 3

Javithri - 1

Onions - 2

Ginger garlic paste - 1 tbsp

Turmeric pwd - ¼ tsp

Coriander pwd - 1 tsp

Yoghurt - ½ cup

Green chilly - 2

Red chilly pwd -1 tsp

Garam masala pwd - 1 tsp

Biryani masala - 1 tsp

Chopped coriander and mint leaves - 1 cup

Saffron - a pinch

Cashew - 4 to 5

Raisins - 5 to 6

Salt to taste

Instructions

1.

Wash and soak basmati rice in water for 30 mins

2.

Soak saffron in warm water

3.

Heat a tsp of oil in a small frypan

4.

Add onions, cashew and raisins

5.

Fry it in low medium flame until the onions turn crispy and the cashews and raisins turn golden brown

6.

Turn off flame and set it aside

7.

Heat oil in a non- stick pan

8.

Once the oil is hot, add cumin seeds and wait to crackle

9.

Add the bay leaf, cardamom, cloves, pepper corn, cinnamon and javithri

10.

Once it sizzles, add the finely chopped onions

11.

Saute until it turns golden

12.

Add ginger garlic paste and saute well

13.

Add turmeric pwd, coriander pwd and stir

Let it cook for 2 minutes

Add yoghurt and mix

Next add chopped green chilles

Add red chilly pwd, garam masala pwd, biryani masala and salt

Add chopped coriander and mint leaves

Mix well

20.

Add soaked basmati water and combine gently

Add 3 ½ cups of water and give a stir

Allow to boil on high for 2 minutes

Now simmer the flame and cook it covered with lid for 10 to 15 mins

Meanwhile boil the egg and shell it

Make fine slits in white portion of the egg and keep ready

Heat oil in a fry pan

Add little salt, a pinch of turmeric pwd, ¼ tsp red chilly pwd and ½ tsp biryani masala pwd

Stir good and add the eggs to it

29.

Cook for 2 minutes in low flame

30.

Turn off the flame once the egg absorbs all the masala

Check out if the rice is cooked by opening the lid

Once the rice is done, add the eggs

Add saffron water and biryani masala

34.

Sprinkle some coriander and mint leaves

35.

Sprinkle golden fried onions, cashew and raisins

36.

Add a tsp of ghee over it and cover the biryani with a heavy lid

37.

Allow it to cook in simmer for another 10 mins

38.

That’s it…aromatic egg biryani is ready

Serve hot with raitha & any gravy
