Aloo Palak is a very healthy and classic delicacy from Punjabi cuisine. This tasty recipe can be prepared at home in less than 20 minutes. In this recipe the potato cubes are cooked and sautéed in a mildly spiced spinach gravy. It can be served with..any bread or rice. Here goes the easy recipe..

Ingredients

Potato - 2

Palak chopped - 2 cups

Oil - 2 tsp

Cumin -1 tsp

Onion - 2

Ginger garlic paste -1 tbsp

Turmeric pwd -a pinch

Red chilly pwd - 1 tsp

Coriander pwd - 1 ½ tsp

Garam masala pwd - ½ tsp

Butter - 1 tsp

Fresh lemon juice - few drops

Salt to taste

Instructions

1.

Wash and pressure cook potatoes till soft

2.

Peel off the skin

3.

Slice to bite-sized cubes and keep ready

4.

Clean, wash and slice palak / keerai / spinach to fine pieces

5.

Heat oil in a fry pan

6.

Add cumin seeds, bay leaf and allow to crackle

7.

Add sliced onions and saute till light brown

8.

Add ginger garlic paste and toss

9.

Add turmeric pwd, red chilly pwd, coriander pwd, salt and garam masala pwd

10.

Stir good in low flame for 2 mins

11.

Add sliced tomatoes and cook well

12.

Now add sliced spinach leaves and stir

13.

Keep in medium flame and allow the spinach to cook for 3 to 4 mins

14.

Turn off flame and allow to cool

15.

Add it to blender and grind to coarse mixture

Heat butter in a frypan

17.

Add the freshly ground palak mixture to the pan and combine

18.

Add cooked and cubed potatoes and stir Cook covered for 5 mins in low medium flame

19.

Squeeze few drops of fresh lemon juice

20.

Mmmm… yummy Aloo Palak Subzi is ready

21.

Serve hot with coriander leaves garnishing
