Hy friends, today am going to share with you a delicious, quick and easy recipe that can be enjoyed as a healthy breakfast recipe, snack or as a main dish. This is an easy recipe, which is made within no minutes with the available ingredients in the pantry. All we need to do is to make the toppings of vegetables like tomatoes, onions, capsicum, etc and flavor it with spice pwd on Uthappam or thick dosa. Ingredients

For making Dosa batter:

Par boiled rice - 3 cups

Urad dal - 1 cup

Fenugreek / methi seeds - 1 tsp

To make Uthappam:

Dosa batter - 2 cups

Wheat flour - 2 tbsp

Oil - 2 tbsp

Sliced onion, tomatoes - ½ cup

Green chilly - 1

Capsicum - ½

Sambar pwd - 2 to 3 tsp

Fresh coriander leaves

Salt to taste

Instructions

To make Dosa Batter:

Wash and soak rice, fenugreek seeds and urad dal separately.

Soak them for 4 to 6 hrs.

Drain the water and grind it by adding little water in blender to fine batter.

Allow to ferment overnight for minimum 8 hours.

Add salt and mix well.

Homemade Dosa batter is ready.

To make Uthappam:

Take dosa batter in a bowl.

Add wheat flour and mix well. Adding wheat flour helps to bind the batter.

Add ½ cup of water and mix well.

The consistency of the batter should be free flowing as shown in the pic. ( it shouldn’t be too thin)

Heat ½ tsp of oil in dosa pan / girdle.

14.

Pour a ladleful of batter in the dosa pan.

Spread it to thick concentric circles.

First sprinkle sliced onions.

17.

Then finely chopped tomatoes.

18.

Add sliced green chilly pieces and capsicum.

19.

Sprinkle little salt and freshly chopped coriander leaves.( Also you can add sliced carrots and any other veggies. Topping can be purely your choice)

Finally sprinkle sambar pwd for added spice flavor and aroma.

Drizzle oil to the sides.

Keep the flame in low and allow to cook for 3 to 4 mins.

Flip it over carefully and allow the other side to turn golden and crisp.

When it is done, transfer it to serving plate.

Healthy and delicious masala Uthappam ready.

Serve hot with chutney and sambar of your choice.
