Hello Everyone ! I wanted to let all of my friends and readers here know, that I am back from my vacation..:) We had a really good time with lots of fun & entertainment. I missed all my friends here though and I am glad to be back. I hope all of you had a great start of 2014 and wishing you all a very happy & prosperous year ahead..! Today, am gonna share with you an all time classic Potato samosa recipe. It is a very popular tea time snack or street side treat in India, that is served with cilantro dip and sweet & sour dipping sauce. The most popular filling is a mixture of mashed potato, seasoned with fragrant spices. Also, you can add steamed veggies like carrot, peas, beans along with potatoes and make it as healthy vegetable samosa. These fried triangular turnovers, so popular with kids, also make great finger food for parties. Here’s the delicious, quick & easy Potato Samosas recipe..enjoy…!!

Ingredients

For inner stuffing:

Potatoes - 2

Oil - 2 tsp

Coriander pwd - 1 tsp

Crushed red chilly pwd - ½ tsp

Green chilly - 1

Coriander leaves - handful

Onion - 1

Salt to taste

To prepare Outer covering:

Pastry Sheets - 10

Maida - 1 tbsp

Water - ¼ cup

To prepare Samosa:

Oil - to deep fry

Instructions

To Prepare inner stuffing:

Wash the potaoes.

3.

Pressure cook till soft.

4.

Peel off the skin and mash it.

5.

Heat oil in a pan.

Add coriander pwd, cumin pwd and saute well.

Add turmeric pwd, crushed red chilly, salt and mix for a minute in low flame.

Add mashed potatoes and mix well.

9.

Add finely chopped green chilly, coriander leaves and onion.

Give a good stir.

Cover and cook for 2 minutes.

Turn off the flame.

Now samosa filling is ready.

To prepare outer covering for Samosas:

Take the Samosa sheets.

Cut it to two folds.

Fold it to cone shape.

Now add a tbsp of filling.

Now press the filling inside.

Close the cone and seal the edges with corn flour or maida paste.

Repeat the same and keep ready the samosas for deep frying.

To prepare Samosa:

Heat oil in a frypan.

Add the samosas in batches.

Deep fry in low medium flame.

Once the samosas turn golden brown n crisp, drain from the oil.

Place in kitchen paper to remove excess oil.
