VEGETABLE SPRING ROLLS / HOW TO MAKE CRISPY VEGETABLE SPRING ROLLS ? / STEPWISE RECIPE

Looking for easy to make tasty Spring Rolls recipe?  Try this quick recipe to make authentic Asian appetizer at your home.
I have made a simple vegetable stir fry filling for this spring roll.! It purely depends on your choice of colorful veggies. 
This classic dish is a favorite of everyone, children in particular.  Brimming with lots of flavor and healthy vegetables, these spring rolls make a great starter / appetizer for any party. 
Here goes the crispy, crunchy Spring Rolls recipe to prepare much fresher and tastier rolls at your home..:)
Ingredients:
·         Spring Roll Wrappers / Pastry Sheets            - 10 ( you can get frozen spring roll wrappers from Asian supermarkets )
·         White cabbage shredded                              - 2 cups
·         Carrot chopped                                            - 2 cups
·         Capsicum thinly sliced                                  - 1 cup
·         Onion slices                                                 - 1 cup
·         Coriander chopped                                       - ½ cup
·         ( also finely sliced red pepper,  yellow pepper, spring onions, bamboo shoots, celery, beans, bean sprouts can be used )
·         Oil                                                                - 2 tsp
·         Tomato ketchup                                            - 1 tbsp
·         Soya sauce                                                  - 1 tbsp
·         Pepper pwd                                                  - ½ to 1 tsp
·         All purpose flour / maida paste                      - 2 tbsp
·         Salt to taste
·         Oil to deep fry
Method:
1.     Keep the frozen pastry sheets in room temperature for 1 to 2 hours at room temperature before using. Once the pastry sheets are separable, wrap them in a wet kitchen cloth to prevent them from getting dry
2.     Chop finely cabbage, carrot, capsicum, beans, green onion, celery, yellow onion and any colourful veg of your choice to thin lengthwise pieces.
3.     Heat oil in a frypan / wok.
4.     Add all the chopped veggies, salt and saute in high flame for 2 mins.
5.     Now simmer the flame and let it cook covered for 3 to 4 mins. ( since we need veggies to remain crunchy, no need to add water)
6.     Once the veggies are done, add tomato ketchup, soya sauce and pepper pwd. ( can also add oyster sauce for extra flavor)
7.     Give a quick stir and remove from flame.
8.     Place it in a bowl to let it cool.
9.     Now the spring roll filling is ready.
10.  Take all purpose flour in a  small bowl.
11.  Add little warm water and mix it to fine paste. (this is to seal the edges of spring roll)
12.  Also beaten egg can be used for sealing edges.
13.  Take one pastry sheet / wrapper at a time.
14.  Keep it in diamond shape as shown in pic.
15.  Brush the four edges of the wrapper with all purpose flour paste.
16.  Now add the veg filling in the bottom part of the wrapper.
17.  Lift the wrapper over the top and tuck it in under the filling.
18.  Roll it over.
19.  Next fold over the left and right sides and roll it up.
20.  Brush a little more all purpose flour paste along the top part and seal the edge of the roll.
21.  Repeat until all the rolls are finished. ( keep them covered with damp cloth )
22.  Heat oil in a frypan.
23.  Once the oil is hot, deep fry  the spring rolls in medium high flame.
24.  Flip it to other side for even browning.
25.  Once it turns golden brown n crisp, drain from oil.
26.  Put them on the toweled tray to remove excess oil.
27.  That’s it …crispy, crunchy Vegetable Spring rolls ready.
28.  They make an awesome combo with sweet & sour Chinese sauce, tomato sauce or any dip of your choice.

BEETROOT PACHADI - KERALA STYLE / ONAM SADYA RECIPES

Today, I am going to share with you this simple and  tasty Beetroot Pachadi. It is a part of Onam Sadya and this very healthy dish is made with cooked beets, yoghurt and mild spices. It is very easy to prepare and brings out the South Indian flavors of raitha. 
We know beetroot are excellent sources of anti-oxidants and packed with nutrients. Kids sure will love the delicious taste of this vibrant dish.
Try this best and authentic Kerala style Beetroot Pachadi recipe today..:)
Ingredients:
·       Beetroot                   - 2
·       Grated coconut         - 3 to 4 tbsp
·       Green chilly              - 1 or 2
·       Cumin seeds            - 1 tsp
·       Thick curd                - 1 small cup
·       Salt to taste
·       Fresh coriander leaves
To temper:
·         Oil                            - 1 tsp
·         Mustard                    - ¼ tsp
·         Cumin                      - ½ tsp
·         Red chilly                 - 1
·         Chopped shallots     - 1tbsp
·         Curry leaves
Method:
1.     Wash, slice and peel off the skin of beetroot.
2.     Grate it to fine shreds.
3.     Grate coconut to small pieces.
4.     Add grated coconut, green chilly and cumin seeds to the blender.
5.     Add little water and grind it to coarse paste.
6.     Take the grated beetroot in a pan.
7.     Add required salt and cook covered in low flame for 5 to 10 mins. 
8.     Now add the ground paste to the beetroot.
9.     Mix it well and cook for another 5 mins.
10.  Remove from gas and allow to cool.
11.  Add thick curd and mix.


12.  Heat oil in a small pan.
13.  Season it with mustard, cumin seeds, chopped shallots, curry leaves and red chilly.
14.  Saute till the shallots turn golden brown.
15.  Pour this seasoning on top of the beetroot pachadi.
16.  Colorful, healthy Beetroot raitha is ready for lunch.
17.  Enjoy with white rice or with roti, paratha and chapatti.

UNNIYAPPAM - UNNIYAPPAM RECIPE / NEI APPAM / KERALA STYLE RECIPE / EASY APPAM RECIPES

Hi Friends ….Hope you had a wonderful karthigai deepam celebration yesterday too. Today, I am going to share with you the traditional Unni Appam / Nei Appam recipe. Usually we make this tasty dumplings for prasadam.
This irresistibly sweet, deep fried, golden brown colored balls are very famous snack of South India and is prepared from rice, jaggery, banana and ghee. Here I have made use of wheat flour. This simple Unniyappam recipe makes it very easy to prepare this delicious snack.

Ingredients:
·         Wheat flour               - 1 ½ cup
·         Maida flour               - 1 ½ cup
·         Rice flour                 - 2 tbsp
·         Grated coconut         - ¾ cup
·         Cardamom pwd        - a generous pinch
·         Ripe banana             - 1
·         Ghee                       - 1 tbsp
·         Baking pwd              - a pinch
·         Jaggery                    - 200 g
·         Oil / ghee to fry
Method:
1.     In a mixing bowl, add wheat flour, maida flour, rice flour, grated coconut, cardamom pwd, ghee and baking pwd.
2.     Peel and chop banana to slices and add it to the bowl.
3.     Mash the banana and mix all the ingredients well.
4.     Add jaggery to the pan, add water and heat it.
5.     Continue stirring,  until jaggery dissolves.
6.     Turn off flame, once the jaggery melts completely and turns into thick syrup.
7.     Filter it with stainer and add the jaggery syrup to the bowl.
8.     Mix well.
9.     Add enough water to make the batter of consistency as shown in the below pic.

10.  Clean and  keep ready the non- stick Unni appam pan ( also called as appam / paniyaram maker ).
11.  Heat it on medium flame.
12.  Grease the holes generously with oil or ghee.
13.  When the pan reaches moderate heat, spoon in the batter into the holes. 
14.  Deep fry on a low medium flame.
15.  Flip it over and fry till they turn golden brown in colour and crisp.


16.  Drain and remove from the pan.
17.  Repeat the same with the remaining batter to make tasty Unni Appams.
18.  Crispy and delicious Unniappams are ready.
19.  Enjoy the real sweet indulgence in every bite..:)
My tips: 

·         Use a well ripened banana, it gives more flavor and taste.
·         You can prepare this yummy sweet, whenever you have left over ripe banana at home.
·         Another version to prepare this appam is with raw rice ( raw rice soaked and grinded to fine paste ). This is added to jaggery and wilth all the same above ingredients. You can prepare it in the same method above. It tastes absolutely divine too.
