Krishna Jayanthi festival is around the corner and I’m sure most of us are busy preparing yummy sweets & savories for the festival. Thenkuzhal / Butter Murukku is an authentic recipe, made in bulk for Gokulashtami and Diwali festivals.

This popular snack is prepared with rice
flour and urad dal flour. It tastes crispy, crunchy and addictive with a slight
hint of cumin. Whatever snack we buy outside, can’t compromise the homemade
flavor and delicious taste. The butter added to this murukku dough, gives
additional crispness along with richness.
It pairs up perfect with hot cup of evening coffee
or tea..!

Ingredients:
·
Rice flour - 2 cups
·
Urad dal flour - ½ cup
·
Hing /
Asafetida - ¼ tsp
·
Cumin seeds -
2 tsp
·
Butter - 1 ½ tbsp
·
Salt to taste
·
Oil to deep fry
Method:
1.
Dry roast the urad dal in a pan for 2 to 3
mins in low flame, until it is heated through. ( take care not to allow the
urad dal change color )
2.
Allow to cool and grind it in a mixer to fine
pwd.
3.
Sieve and add rice flour, urad dal flour,
hing, salt, cumin seeds and butter in a mixing bowl.
4.
Add warm water and knead it to smooth and
soft dough.
5.
Heat oil in a heavy bottomed pan / kadai.
6.
Grease the ladle with oil and keep it ready.
7.
Stuff one handful of dough in the murukku /
thenkuzhal mould. ( keep the dough covered with damp cloth to avoid drying of
dough )
8.
Press the mould and squeeze the dough to
circles in the ladle.
9.
Once the oil is hot, ( you can check by
adding a small piece of dough to the oil, if the dough raises immediately, then
the oil is ready for frying ) drop the murukku from the ladle gently.
10.
Fry the murukkus in batches and take care not
to overcrowd the oil.
11.
Keep the flame in medium and fry the murukkus
to crisp and golden brown.
12.
Drain and place it in kitchen tissue to
remove excess oil.
13.
Allow to cool completely.
14.
Store it in an air tight container. ( my kid can't stop herself from tasting one, before I finish my clik..:)
15.
Crispy, crunchy traditional Thenkuzhal Murukku is ready to enjoy.
16. It pairs perfect with hot cuppa tea or coffee on rainy days, get-together or any time..:)
