Puran poli Recipe / Poli / Stepwise Recipe

Puran Poli,  a tasty Indian bread stuffed with sweetened yellow lentils, is a traditional sweet from North India. It is made during special occasions & festivals like Diwali, holi etc.
It is also known as Holige in Karnataka, Bobbatlu in Andhra Pradesh.
The recipe is very simple to prepare.  The lentil jaggery stuffing  is known as Puran and the roti covering is called Poli  ( Puran Poli ) . It makes a healthy breakfast dish or served as a snack.

Ingredients:
For Stuffing:
  • Toor dal                        - 1 small cup
  • Turmeric pwd                - a pinch
  • Jaggery powdered         - 1 cup
  • Cardamom pwd             - ¼ tsp
  • Nutmeg / Jaiphal           - ¼ tsp
For Outer dough:
  • Whole wheat flour          -  1 cup
  • All Purpose flour / maida - ½ cup
  • Oil                                - 2 tbsp
Method:
To Prepare Stuffing:
  1. Wash and soak toor dal for 20 mins.
  2. Pressure cook dal by adding a pinch of turmeric pwd till soft & mushy.
  1. Transfer it to heavy bottomed wok / kadai.
  1. Add jaggery and cook with stirring.
  1. The jaggery dissolves and starts binding together.

  1. When it comes to thick dough consistency, remove from heat.
  1. Add cardamom pwd, nutmeg pwd and mix well.
  1. Cool to room temperature.
  1. It turns into soft, sticky dough-like consistency.
  1. The stuffing is ready.
To Prepare outer dough:
  1. In a mixing bowl, add whole wheat flour, all purpose flour and oil.
  1. Add water little at a time and knead it to very soft dough.


  1. Cover & set aside for 10 to 15 mins.
To Prepare Puran Poli:
  1. Knead the dough and divide it to small balls.
  1. Make small balls out of dal stuffing too & keep ready.
  1. Dust one dough ball with flour.
  1. Roll it into small circle.
  1. Place filling in the centre.
  1. Seal the edges by pulling the edges together to make a ball.
  1. Place the ball with sealed side down, flatten with fingers and keep aside.
  1. Repeat the same for all balls.
  1. Lightly press the filled ball in wheat flour .
  1. Roll it into a circle, with a rolling pin by applying gentle pressure.
  1. Heat a skillet and add a tsp of oil to it.
  2. Place the Puran Poli onto the skillet and cook for about a minute.
  3. Flip it over.
  1. Spread 1 tsp of oil to the sides.
  2. When puran poli turns golden brown on both sides, remove from skillet.
  3. It tastes lipsmacking,  when it is served hot with a cube of clarified butter on top.
  1. Yummy & healthy Puran Poli is ready to relish.
Note:
  • Puran Poli can also be prepared using Chana dal, but it should be cooked a slightly longer time  to soft & mushy texture.
  • For filling, Instead of adding jaggery,  we can also use sugar.
  • Cooked Puran Poli can be stored in the refrigerator for a week.

Malai Kofta / Easy Step wise Recipe;

Malai Koftas is a delicious North Indian speciality dish. It is a vegetarian alternative to meatballs &  It goes very well with any flat breads or with  Jeera rice It makes a rich main dish for any special occasion.
In this famous recipe, Malai ( cream )  and  Kofta ( paneer with veggie balls ) are prepared separately and combined together while serving.  The richness of cream & aromatic flavor of spices makes this dish a favorite choice of all..!
Here is the delicous recipe of Malai Kofta for you to try & enjoy at your home..:)
Ingredients:
For Kofta:
  • Shredded Paneer          - 1 cup
  • Boiled mashed potatoes  - 1 cup
  • Minced cilantro              - 2 tbsp
  • Cumin seed                   - ½ tsp
  • Salt                              - ½ tsp
  • Chopped green chilly     - 1 tsp
  • Oil to fry
For Batter:
  • All Purpose Flour / Maida          - 2 ½ tbsp
  • Water                                        - 4 tbsp
For Gravy:
  • Oil                                            - 2 tbsp
  • Tomato                                     - 2
  • Green chilly                               - 1
  • Ginger                                      - a small piece
  • Asafetida / hing                         - a pinch
  • Cumin seeds                             - ½ tsp
  • Coriander pwd                           - 1 tsp
  • Turmeric pwd                            - ¼ tsp
  • Red chilly pwd                          - ¾ tsp
  • Fresh cream                              - ¼ cup
  • Maida flour                               - 1 tbsp
  • Garam masala pwd                    - ½ tsp
  • Salt to taste
  • Fresh cilantro leaves
Method:
To Prepare Koftas:
  1. Mix all the ingredients together for kofta.
  1. Add ½ tbsp maida and knead to soft dough.
  1. Make them in round balls.
  1. Mix  2 ½ tbsp maida with about 3 to 4 tbsp of water.
  2. Mix well until batter is smooth.
  1. Heat the oil in a frying pan on medium high heat
  1. Dip the paneer balls in the batter and gently drop in hot oil.
  1. Turn them occasionally and fry Koftas until golden brown all around.
  1. Soft & crispy Koftas are ready.
 10. Drain in kitchen tissue and reserve.

To Prepare Gravy :
  1. Blend the tomatoes, green chillies and ginger to make a puree.
  2. Mix fresh cream, maida flour to smooth paste and keep aside.
  3. Heat 2 tbsp of oil in a frypan.
  4. Add the cumin seeds and asafetida.
  1. Add the tomato puree, coriander pwd, turmeric pwd, red chilly pwd and cook covered for about 4 mins in low medium flame.
  1. Tomato mixture will start leaving the oil and will reduce to about half in quantity.
  1. Now add fresh cream–maida flour mix, salt and combine well.
  1. Add 1 cup of water and let it cook covered for 6 to 7 mins.
  1. Add the garam masala pwd, salt and freshly chopped cilantro leaves.
  1. Let it cook for another minute.
  1. Now the gravy is ready.
  1. Add koftas and as soon it comes to boil , turn off the heat.
  1. Yummy Malay Kofta is ready .
  1. Serve hot with any kind of bread or with plain rice.
Note:
  • Since Koftas are very soft, take care to add them to the gravy,  just few minutes before serving, otherwise they tend to break..!
