How to make Kulchas at home ( yeast free ) / Simple Kulcha recipe / Indian FlatBread:

Today I’m going to share how to make super simple Indian flatbread / Kulcha at home..!!
It’s a lot like Naan, but the Naan is prepared with yeast, these delicacies are made with Baking powder / Sodium bicarbonate combo. This recipe is great for  vegetarians, as it is yeast & egg free.
This happens to be one of my favorite breads I order, when we eat at restaurants. Making this immensely fluffy, soft bread at home is fuss free & makes use of simple ingredients, that are lying in our pantry ! 
It tastes great with any spicy & light side dish and will be a hit menu in any dinner party.
So, lets go ahead and get started preparing this classic Indianbread..:)
Ingredients:
  • All Purpose Flour / Maida flour   - 2 cups
  • Salt                                          - ½ tsp
  • Sugar                                       - 1 tsp
  • Baking soda / sodiumbicarbonate – ¼ tsp
  • Yoghurd                                   - 4 to 5 tbsp
  • Oil                                            - 1 to 2 tbsp
Method
  1. Take maida flour in a wide bowl.
  2. Add salt, sugar, baking soda and combine.
  1. Add yoghurd and knead well.
  1. Add little oil and make soft & smooth dough.
  1. Cover it with a damp cloth and let the dough rest to 30 mins, so that lactic acid in yoghurd can react with baking soda & we can make nice kulchas out of it.
  2. Now, make small lemon sized balls out of the dough.
  1. Flatten it to round shape, by dusting with maida flour. ( just like roti or chapatti .

  1. Put them in a skillet that is very hot.
  1. Cook it on medium high.
  2. Cook till both sides are nicely golden brown.

  1. When its done, dash some butter to it.
  1. Serve it hot with the  curry  of your choice.
  1. So nice pack of kulchas are ready ..enjoy..:)

Pepper Chicken Chettinad / Milagu Kozhi Varuval

Pepper Chicken Chettinad is a very spicy hot dish. This authentic dish is known world wide for the spicy masala blended well with the chicken & its rich aroma. Also, its one of the famous recipe in Indian restaurants. It makes a good combo with Chapathi, Naan, flaky parotta, Dosa, biryani or any  Rice dish. 
In this recipe, the tender chicken is cooked in a spicy masala based gravy without adding any water to it.  This failproof recipe is also called Pepper Chicken, coz of the dominant , spicy flavor of pepper. 
This scrumptious dish is definitely on the hot spicy side, so adjust the amount of chillies / pepper to your taste.

Ingredients:
  • Chicken                      - ½ kg
  • Oil                                - 2 tbsp
  • Mustard seeds              - ¼ tsp
  • Cumin                           - ½ tsp
  • Cardamom                    - 1
  • Bay leaf                        - 1
  • Cinnamon                     - 2
  • Cloves                          - 3 to 4
  • Onion                           - 2
  • Turmeric pwd                - ½ tsp
  • Ginger garlic paste        - 1 tbsp
  • Green chilly                   - 1
  • Curry leaves                  - a few
  • Tomato                         - 2
  • Red chilly pwd              - 1 tsp
  • Coriander pwd               - 2 tsp
  • Cumin pwd                    - 1 tsp
  • Pepper corns                - 2 tsp
  • Salt to taste
  • Freshly chopped coriander leaves
Method:
  1. Wash and chop chicken to fine pieces.
  2. Heat oil in a heavy bottomed kadai / wok.
  1. Add mustard seeds, cumin seeds and wait to crackle.
  1. Add cardamom, cloves, cinnamon and bay leaf
  2. Saute for a while
  3. Add finely chopped onion.
  4. Add powdered salt and saute till light brown.
  1. Add turmeric pwd and ginger garlic paste.
  2. Saute for a minute till raw smell disappears.
  3. Add chopped green chillies, curry leaves.
  4. Give a good stir.
  5. Now add finely chopped tomatoes.
  6. Add red chilly pwd, coriander pwd, cumin pwd and saute well.
  1. Cook for 10 mins in low medium flame.
  2. Now you can see tomatoes are mashed well, the moisture is completely absorbed & oil separates out from the masala.
  1. Now add chicken pieces.
  2. Mix it with the above prepared chettinad masala together.

  1. Cover with a lid & cook for 5 to 7 minutes. ( or till chicken is cooked tender )
  2. Take care not to add water in this step for the chicken to cook, it will get cooked in the masala & chicken itself will let out its own moisture, while getting cooked.
  3. Meanwhile crush peppercorns to coarse pwd. ( freshly ground pepper enhances the taste)
  1. Open the lid, you can see the chicken has oozed out so much moisture, without adding any water.
  1. Check if the chicken is cooked tender.
  1. Now add crushed peppercorns.
  1. Mix well.
  1. You can enjoy the rich spicy aroma lingering all over , rocking your home.
  1. Finally , garnish with freshly chopped coriander leaves.
  1. Awesome Pepper Chicken Chettinad curry is ready to taste.
  1. Enjoy the spicy taste with Chapatti, Naan, Dosa  and  Rice..

Ohooooo….it is too hot outside...!!!    The sweltering heat is here now & its time to get cooled by having some chilled thirst quenchers...!   When its homemade...sounds divine isn't it..:)

Yes,  I'm glad to share today  Grape  Squash  recipe,  which is easy & so tasty ..!!   

Grape  squash  is an easy and tasty preparation of making juice in to a concentrate & for storing it.  Once stored, we can have fresh grape juice ready to drink anytime and not have to  search for the store,  to purchase bottled or concentrate.  

Grapes are  rightly called  " Queen  of  fruits "  , as it serves as a storehouse of numerous health promoters.

Some of the health facts of Grapes:
  • Grape juice improves memory & decrease nervous exhaustion.
  • Helps in healthy cardiovascular function.
  • Increases the anti-oxidant level and helps developing immunity.
  • It serves as a great metabolism booster.
  • Helps to treat constipation, indigestion, fatigue & kidney disorder.
So, lets try out this easy recipe of  grape squash today & enjoy ..:)


Ingredients:
  • Purple Grapes                           - 1 kg
  • Sugar                                       - 600 g
  • Lemon juice                              - ½ cup
  • Cloves                                      - 2 to 3
Lets Start:
  1. Soak and wash grapes in running water. 
  2. In a pressure cooker, add grapes & cloves.
  1. Add  2 ½ cups of water to it.
  1. Pressure cook for 3 whistles and turn off the flame.
  2. Open the lid after the pressure releases.
  1. Allow to cool slightly.
  2. Mash the contents.
  1. Add to blender,  blend well & transer to a bowl with a filter.
  1. Sieve well .

  1. Add sugar and lemon juice to the sieved juice and turn on flame.
  1. Heat it slowly with stirring in medium heat.
  1. When it boils, simmer the flame and stir occasionally.
  1. When it becomes slightly thick and attain one string consistency, turn off flame.
  1. Don’t wait for the squash to turn thicker while on stove, as it becomes thicker while cooling. So, switch off the flame when it is slightly thick.
  1. Allow to cool.
  1. Transfer to a clean dry bottle.
  1. Keep refrigerated.
  2. To serve, fill 1/3 of serving glass with the grape squash and remaining with chill water and stir well.
  1. Enjoy the delicious taste of  grape  juice  from healthy  homemade  grape  squash..:)
