Soya Chunks Pulao / Healthy Lunch Box Menus

This is a healthy version of rice varieties  that is easy to cook & tastes awesome...!!!
 Soya provides vital nutrients that are essential for daily needs. The soya chunks, ( which are known as textured vegetable protein,)  added to this flavorful pulao, are rich in fiber, carbohydrates & vitamin B12 too. 
I have increased the usage of soya based recipes in my cooking recently, as my family is very fond of nutritious soya nuggets. You can add chopped vegetables and cashews along with soya chunks too.
Lets make  Soya  Chunks Pulao today and enjoy the wholesome nutritious taste..:)
Ingredients:
  • Soya chunks                             - 1 cup
  • Raw rice                                    - 1 ½ cup
  • Ghee                                        - 1 tbsp
  • Oil                                            - 2 tbsp
  • Cinnamon                                 - 1
  • Bay leaf                                    - 2
  • Star anise                                 - 1
  • Cloves                                      - 2
  • Cumin seeds                             - ½ tsp
  • Saunf                                       - ½ tsp
  • Mint leaves                               - handful
  • Green chilly                               - 1 or 2
  • Onion                                       - 2
  • Ginger garlic paste                    - ¾ tbsp
  • Tomato                                     - 2
  • Red chilly pwd                          - 1 tsp
  • Garam masala pwd                    - ½ tsp
  • Salt to taste
  • Fresh cilantro leaves
Method:
  1. Wash and soak soya chunks in warm water for 15 mins.
  1. Squeeze water completely and keep aside.
  2. Wash and soak rice in water for 5 mins.
  3. Drain and set aside.
  4. Heat ghee and oil in a pressure pan.
  5. Add cinnamon , bay leaf, star anise, cloves, cumin, saunf and saute till it crackles.
  6. Add mint leaves, green chillies slit lengthwise and stir well.
  7. Now add chopped onions.
  8. Toss it golden.
  9. Add ginger garlic paste and turmeric pwd.
  10. Fry for a minute.
  11. Add mashed tomatoes and cook well.
  12. Add red chilly pwd, garam masala pwd and mix completely.
  13. Add the soya chunks, rice and mix well.
  1. Add 3 cups of water, stir and check for salt & seasonings.
  2. Pressure cook for one whistle and simmer for 5 to 7 mins.
  1. Garnish with freshly chopped cilantro leaves.
  1. Healthy Soya Pulav is ready to be served with onion raitha or side dish of your choice.

If you are wondering as to what I have been doing all these days..I was a little busy with my kids EXAMS. Now, I am back, refreshed and excited to share more awesome recipes..:)
Today, I m sharing my very favorite  Cashew Masala Recipe  with you.  This is a thick gravy with lots of flavorful masala. Cashew nuts are simply divine & healthy that makes a luxury side dish for chapatti / roti.
This filling & delicious curry can easily be made. In this recipe, the cashewnuts are simmered in a spicy gravy with whole garam masala, which imparts a very nice aroma.
Cashew Masala
Try this healthy recipe and enjoy the rich tasty curry with a royal touch, a hit in any party..!!!
Ingredients:
  • Cashew                       - 100 g
  • Ghee                            - 3 tsp
  • Saffron                         - few strands
  • Onion                           - 2
  • Ginger                          - small piece
  • Garlic                            - 4 pods
  • Red chilly                      - 2
  • Cinnamon                     - 1
  • Cardamom                    - 1
  • Cloves                          - 2
  • Cumin seeds                 - ½ tsp
  • Tomato                         - 2
  • Red chilly pwd              - 1 tsp
  • Turmeric pwd                - ¼ tsp
  • Coriander pwd               - 1 tsp
  • Garam masala pwd        - ½ tsp
  • Fresh cilantro leaves
  • Salt to taste
Method:
  1. Soak ¾ of cashew in warm water for 20 minutes.
  2. Heat a tsp of ghee in a heavy skillet.
  3. Roast the remaining cashews to light golden brown in low flame.
  4. Drain, keep aside in a colander.
  5. Place the saffron in a small bowl, pour in boiling water and let soak for at least 10 mins.
  6. In the same pan, saute onion, ginger, garlic and red chillies until soft.
  7. Allow to cool and grind to fine paste.
  8. Keep it aside.
  9. Add soaked cashew nuts and grind further to fine paste to make masala.
  10. Now heat 2 tsp of ghee in a frypan.
  11. Add cinnamon, cardamom, cloves, cumin and saute for a minute.
  12. Add chopped tomatoes and saute till it is soft and cooked.
  13. Stir in the  red chilly pwd, turmeric pwd, coriander pwd and salt.
  14. Now add the yoghurt.
  15. Stirring occasionally, cook over moderate heat until the masala combines.
  16. Add ghee roasted cashews, prepared masala paste and half cup of water.
  17. Squeeze the saffron between your fingers, then stir it and its soaking liquid into the skillet.
  18. Reduce the heat to low, cover tightly and cook for 10 mins, stirring in between.
  19. Remove the lid, sprinkle garam masala pwd.
  20. Mix well and garnish with finely chopped coriander leaves.
Cashew Masala Recipe
  1. Serve hot with chapatti, roti or naan.

Shahi Paneer Recipe / Hotel Style Shahi Paneer

Shahi Paneer is a  spicy  Paneer  dish..!
It is undoubtedly one of the most popular dish liked by all and is available in almost all the Indian hotels and restaurants. 
It is considered to be a mainstay dish especially in North India. Shahi which means “Royal” and  Paneer  when translated is  “ Cottage Cheese”  gives  Shahi  Paneer  a  royal  feel  to  it..!
I love to cook this curry coz its very easy & tasty to prepare. In this  flavorful vegetarian recipe, paneer is cooked in rich gravy with tomatoes, butter and cream. Its bound to be heavenly with a combination of any Indian bread / Naan. 
So here's the recipe for Paneer in Creamy Gravy sauce  in typical hotel style of cooking..:)
Ingredients:
  • Paneer                          - 250 g
  • Butter                           - 1tbsp
  • Ginger                          - 2 inch piece
  • Garlic                            - 4 cloves
  • Turmeric pwd                - ½ tsp
  • Broken cashewnuts        - 3 to 4 tbsp
  • Red chilly pwd              - 1 ½ tsp
  • Onion chopped             - 1 cup
  • Paprika pwd                  - ¼ tsp
  • Shahi Paneer Masala     - ½ tsp
  • Nutmeg pwd                 - ¼ tsp
  • Cardamom pwd             - ¼ tsp
  • Ripe big tomatoes         - 2
  • Brown sugar                  - 1 tbsp
  • Kasoori methi                - 1 tbsp
  • Fresh cream                  - ¼ cup
  • Oil to shallow fry
  • Salt to taste
  • Fresh cilantro leaves
Method:
  1. Melt butter in a non stick pan.
  2. Add finely chopped ginger and garlic pieces.
  3. Saute for a minute.
  4. Add turmeric pwd, broken cashew nuts, red chilly pwd and  finely chopped onion.
  5. Cook all these ingredients in medium low flame very well.
  6. While onion is cooking, slice paneer to desired shape.
  7. Heat little amount of oil in a fry pan and shallow fry paneer to golden.
  1. Drain and reserve.
  2. Now add paprika pwd to the masala (optional, it gives nice flavor & color ) , shahi paneer masala ( or garam masala ) , freshly ground nutmeg pwd and cardamom pwd
  3. Stir well again and cook till onion and everything gets tender.
  4. Add little water and turn off the flame.
  5. Allow to cool and grind it to smooth paste.
  6. Pour the ground paste in non stick pan and give a quick stir.
  7. Mash the ripe tomatoes and make a puree of it.
  8. Add this to the masala paste and combine well.
  9. Add little water and bring it to boil.
  10. Give a good stir &  add  brown sugar (optional )  and kasoori methi ( dry fenugreek leaves).
  1. Now add heavy whipping cream. This makes the curry very gravy, rich & smooth.
  1. Add salt to taste.
  1. Then add shallow fried paneer and mix well.
  1. Garnish with freshly chopped coriander leaves.
  2. Aromatic, rich creamy shahi paneer is ready in no time.
  1. Serve hot with naan, roti , paratha, or even with rice it goes very well.
