Roasted cashew nuts are one of my favorite spicy snack. This home made popular  snack,  tastes hot and delicious  when served with  cold  drinks.  Make sure to prepare plenty as they vanish  quick  from the plate, once we start munching... ;)
In this recipe,  raw cashews are roasted with spices  in a heavy bottomed pan until golden and crisp. And  It can  be cooled and stored in a airtight container for 2 to 3 days.
Now, it is my pleasure to share this zippy  recipe..
Ingredients:
  • Cashew nuts                             - 1 cup
  • Olive oil                                    - 1 tbsp
  • Red chilly pwd                          - ½ tsp
  • Pepper pwd                              - ½ tsp
  • Salt to taste
Method:
  1. Take a sauté pan and heat a tbsp of olive oil.
  2. Add cashews and toss in medium flame.
  3. Add salt, chilli pwd and pepper pwd.
  4. Roast well till it turns golden brown.
  5. Remove from pan and allow to cool.
  1. Start munching the hot, crispy n spicy cashewnuts...!!!

Hy Friends,
Here is an excellent recipe of Choco Burfi, especially for all you sweet lovers. This can be prepared in very less time and very less ingredients. The burfi is cooked with milk pwd, coco pwd , sugar and ghee.
This delicious dessert is a perfect way to satisfy our sweet tooth. Hope you all would love these mouthwatering Indian mithai recipe..:)
Try out this yummy burfi recipe..!
Ingredients:
  • Coco pwd                                - 3 tbsp
  • Ghee                                        - 6 tbsp
  • Khowa / mava                           - 100 g
  • Grated coconut                         - 1 cup
  • Cashew                                    - 6
  • Raisins                                     - 10
  • Milk pwd                                   - ½ cup
  • Sugar                                       - 1 ½  cup
  • Cardamom pwd                         - a pinch
Method:
  1. Heat ghee in a pan.
  2. Roast cashews, raisins  to golden and keep it aside.
  3. Grate coconut to pieces and grind it to fine flowers.
  4. Add khowa, coconut flowers, milk pwd  and coco powder.
  5. Keep stirring in low flame for 5 mins.
  6. Add sugar and combine well.
  7. The mixture dilutes and again starts thickening with continous stirring.
  8. Drizzle some ghee to the sides and stir well
  9. When the mixture starts to leaves the sides, add roasted cashew nuts, raisins and cardamom pwd.
  10. Now grease a plate with ghee.
  11. Pour the mixture into the plate and allow to cool for 5 to 6 hrs.
  12. When firm cut into desired shape.
  1. Delicious choco Burfi ready to be eaten...:)

Healthy Carrot Rice & an Award

Healthy Carrot Rice:






Carrot rice is a yummy and healthy Indian variety rice dish. In this recipe fragrant basmati rice is sauted with groundnut, grated carrot &  cooked in spices like cinnamon, cloves etc. 

This nutritious  and mouthwatering dish can be prepared very quickly and easily. Also, this can be prepared with left over plain cooked rice in minutes. It serves great with any gravy side dish or crispy potato chips.


Here is the healthy and easy recipe...:)






Ingredients:












  • Basmati rice                              - 2 cups
  • Carrots                                     - 4 or 5
  • Peanut                                      - 2 tbsp
  • Oil                                            - ½ tbsp
  • Ghee                                        - 1 tbsp
  • Cumin                                       - ½ tbsp
  • Coriander                                  - ½ tbsp
  • Red chilly                                  - 2
  • Cloves                                      - 2
  • Cinnamon                                 - 1
  • Chana dal                                 - 1 tsp
  • Onion                                       - 1
  • Salt to taste
  • Fresh coriander leaves





Method:











  1. Wash and cook the rice.
  2. Allow to cool.
  3. Wash and grate the carrot ready.
  4. Grind peanuts to coarse pwd.
  5. Heat oil in a fry pan.
  6. Add cumin, coriander and red chillies and sauté for a minute.
  7. Allow to cool and grind to coarse pwd.
  8. Add a tsp of ghee in a fry pan.
  9. Add cloves, cinnamon, chana dal and sauté.
  10. Add chopped onion and fry to golden.
  11. Now add grated carrot and sauté in low flame till carrot is cooked.
  12. Add rice and mix gently.
  13. Take care not to break the rice grains.
  14. Add salt and ground masala pwd.
  15. Combine well.
  16. Add peanut pwd and stir and remove from flame.
  17. Serve hot with freshly chopped coriander leaves and golden roasted cashews.

Pepper Chicken Fry

Pepper Chicken Fry:




Pepper Chicken Fry is a very popular recipe and one of  my DH's  favorite dish. It combines excellent with Hot chapattis or hot hot rasam rice. Always this is a hit recipe at my home and adds spice to our dinner. 
This fry  is quite simple and delicious to make at home. Try out this tasty and spicy Indian style pepper chicken fry recipe...:)

Ingredients:
  • Chicken                      - ½ kg
  • Onion                           - 2
  • Tomato                         - 2
  • Turmeric pwd                - ½ tsp
  • Pepper pwd                  - 1 ½ tbsp
  • Lemon juice                  - 1 tbsp
  • Red chilly pwd              - ½ tbsp
  • Oil                                - 4 tbsp
  • Ginger garlic paste        - 1 tbsp
  • Garam masala pwd        - ½ tbsp
  • Cumin pwd                    - 1 tsp
  • Coriander pwd               - 1 tsp
  • Fresh coriander leaves
  • Salt to taste

Method:

  1. Clean the chicken pieces.
  2. Marinate with turmeric pwd, salt, pepper pwd, lemon juice & red chilly pwd for an hour.
  3. Heat oil in a fry pan, add chopped onion.
  4. Sauté till golden.
  5. Add ginger garlic paste and sauté till raw smell disappears.
  6. Mash tomato in blender and add to fry pan.
  7. Sauté well for 2 mins.
  8. Add garam masala pwd, cumin pwd, coriander pwd, pepper pwd and mix completely.
  9. Now add the chicken pieces and stir in low flame.
  10. Add ½ cup of water and cook covered in medium flame.
  11. Stir in frequent intervals.
  12. Cook until the chicken is tender.
  13. Drizzle oil to the sides and fry till the water is completely absorbed.
  14. Remove from flame and garnish with freshly chopped coriander leaves.

  1. Now the delicious pepper chicken fry  is ready to enjoy…!

Spicy Vegetable Sandwich

Spicy Vegetable Sandwich:

Spicy Vegetable Sandwich recipe I share here is one I prepared Today. This easy and nutritious sandwich made my kids wanting for more & more. ... :)

This sandwich  is a delicious and filling food , ideal for breakfast , evening snack or makes a great lunch. And this yummy sandwich is made with butter toasted bread with a spicy vegetable stuffing.

The basic ingredients for veg sandwich are to be found here..

Ingredients:
  • Sliced bread                 - 1 loaf
  • Onion                           - 1
  • Tomato                         - 1
  • Carrot                           - 1
  • Peas                             - ¼ cup
  • Potato                          - 1
  • Beans                           - few
  • Ginger                          - small piece
  • Garlic                            - 3
  • Oil                                - 2 tbsp
  • Butter                           - 3 tbsp
  • Turmeric pwd                - a pinch
  • Garam masala pwd        - 1 tbsp
  • Tomato sauce               - 1 tbsp
  • Coriander pwd               - ¼ tbsp
  • Salt to taste
  • Fresh coriander leaves

Method:

  1. Wash and chop the vegetables to small pieces.
  2. Cook with little salt till it is soft.
  3. Heat oil in a fry pan.
  4. Add onion pieces and fry to golden.
  5. Add ginger and garlic pieces, and sauté till raw smell disappears.
  6. Add chopped tomato, coriander leaves and fry for a minute.
  7. Allow to cool.
  8. Grind in a blender to smooth paste.
  9. In the same fry pan, add a tsp of oil.
  10. Add the ground paste, add turmeric pwd, garam masala pwd, tomato sauce, coriander pwd and combine.
  11. Add the cooked vegeatables and mix well.
  12. Stir in low flame till the filling attains thicker.
  13. Turn off the flame.
  14. Spicy veg filling is ready.
  1. Toast bread slices by smearing butter.
  2. Take one toasted bread, spread the  spicy vegetable filling.
  3. Sprinkle chopped onion and coriander pieces.
  4. Cover with another toasted bread.
  5. Press well.
  6. Serve with tomato ketchup.
