Hope U all Enjoying the Festival of Karthigai with lots of joy and happiness. I wish U all Happy Karthigai Thirunaal. May this another festival of lights bring in happiness & wealth into all our lives..! As we know Karthigai Deepam is celebrated on the full moon day of the Kaarthigai month, which coincides with Krithikai star . Karthigai is referred to the month of Purity & devotion. In this special day, we used to clean houses and in the evening, draw rangoli in the front of the house and place beautiful earthen lamps ( Agal ) on it. Check out the Karthigai Deepam Special Recipes here..! The lamps are placed on the pooja, lighted and deeparadhana is done & the lights are moved to different places of the house. The lamps are arranged near the doors, windows and also in the balconies. Its lovely to see the lamps glow all over the streets on this day…:) We are celebrating this auspicious day with our favorite dessert Palkova …! My kids looove this & I used to prepare this sweet quite often. Also, It is one of those comforting milk sweets enjoyed by all..! This mouthwatering Indian sweet is made up of milk, ghee and sugar. All we need is patience to prepare Palkova, since it takes hours to get reduced to creamy & thick consistency.

Ingredients

Full Cream Milk - 1 litre

Ghee - 4 to 5 tbsp

Cardamom pwd - ¼ tsp

Sugar - 1 ½ cup

Saffron strands - a few

Almond, pista and cashewnuts for garnishing.

Instructions

1.

Heat a thick bottomed pan.

2.

Add milk to it and bring to boil.

3.

Cook with stirring, until it reduces to half.

4.

Now add ghee, cardamom pwd and sugar, stir continuously.

5.

Once it reaches very thick consistency, turn off the flame.

6.

Toast sliced nuts in a tbsp of ghee.

7.

Garnish with kova with toasted nuts and saffron strands.

8.

Palkova is ready to give a taste..
