Spicy Hot Chicken Curry

Spicy Hot Chicken Curry:Like us on Youtube for more Video Recipes
This is a favorite recipe of our family....!!!  In this recipe the chicken is cooked in hot hot spicy condiments in thick curry. 
This hot curry with a really mouthwatering taste combines excellent with rotis, chapathi, parathas, naan or white steamed rice. The fennel seeds, masala paste and fresh coriander enhances the flavor and aroma of this delicious spicy curry. Chicken with or without bones can be used for this.
Here goes the recipe for quick and easy spicy hot chicken curry..Enjoy..!
Ingredients:
For Marinade:
  • Chicken                       - ½ kg
  • Red chilly pwd              - ½ tbsp
  • Turmeric pwd                - ¼ tsp
  • Pepper pwd                  - ½ tbsp
  • Ginger garlic paste        - 1 tbsp
  • Lemon juice                  - 1 tbsp
  • Salt
For Masala Paste:
  • Coriander seeds            - 1 tbsp
  • Saunf                           - 1 tsp
  • Cloves                          - 2
  • Cardamom                    - 2
  • Peppercorns                 - 1 tsp
  • Curry leaves                  - 5 to 6
For Curry:
  • Oil                                - 3 tbsp
  • Onion                           - 2
  • Red chilly                      - 5
  • Tomato                         - 3
  • Lemon juice                  - 1 tbsp
  • Oil to taste
  • Freshly chopped coriander leaves.
Method:
To prepare masala paste:
  1. Marinate the chicken in marinade for 30 mins.
  2. Heat oil in a fry pan.
  3. Sauté coriander seeds, saunf, clove, cardamom, peppercorns and curry leaves
  4. Sauté further for 2 mins.
  5. Turn off flame, allow to cool.
  6. Grind to fine paste.
  7. Masala paste is ready.
To prepare Curry:
  1. Heat oil in a pan.
  2. Add chopped onion and sauté till it turns light brown
  3. Add red chillies and fry.
  4. Add tomato and sauté for a min.
  5. Cover and cook until tomato is fully cooked.
  6. Mash the contents and add the masala paste.
  7. Allow to boil till oil separates.
  8. Add marinated chicken and stir well.
  9. Add a cup of  hot water and salt, mix well.
  10. Cover with lid and cook the chicken until it is done.
  11. Stir well and keep in low flame until the curry attains the required thick consistency.
  12. Turn off the flame.
  13. Add a tbsp of lemon juice, combine well.
  14. Garnish with freshly chopped coriander leaves
  1. Serve hot with rotis or white steamed rice.
  2. Enjoy your spicy chicken curry…

Sooji Ka Halwa / Rava Kesari

Sooji Ka Halwa is a classic Indian sweet dish that can be made in a jiffy. This dessert is easy to prepare and we can prepare during special occasions as kids love it. 
The Sooji or Rava is roasted and cooked with ghee and sugar. Then flavoured with saffron and cardamom pwd.
Here comes the ever popular tasty Rava Kesari recipe…:)
Ingredients:
  • Rava                 - 1 cup
  • Ghee                - 4 tbsp
  • Sugar               - 1 cup
  • Cardamom        - 1 or 2
  • Cashew            - 7
  • Raisins             - 10
  • Food color        - a pinch
  • Saffron             - few strands
  • Pistachio          - 5
Method:
  1. Add ghee to a fry pan and heat it.
  2. Roast rawa in low flame till it exudes a rich aroma.
  3. Keep it aside.
  4. Roast cardamom, cashew, raisins to golden. Remove and reserve it.
  5. Boil 2 ½ cups of water in a heavy bottomed pan.
  6. Add roasted rawa slowly and stir continuously to avoid lumps.
  7. Keep stirring till the rava is full cooked.
  8. Add the orange food color and stir.
  9. Add sugar slowly and combine well with continous stirring.
  10. Add saffron, cardamom, cashew and raisins.
  11. Mix well and keep stirring until the kesari start sticking to the bottom.
  12. Turn off the flame.
  13. Grease a plate with ghee.
  14. Pour the kesari in the plate and allow to cool.
  15. Cut into required shape.
  16. Garnish with chopped pistachio, almond and cashew

  3. Add to the juice.
  4. Add required chill water.
  5. Stir well and garnish with lemon slice.

Kaarthigai Deepam – Festival of Lights
Its amazing to see 
Rows of glittering earthen oil lamps outside every home, 
Full moon at the sky 
And the joyous burst of firecrackers . !   
 The lighted lamp is an auspicious symbol that is considered it brings Joy and Prosperity..!
I am happy to share the Pori Urundai recipe , which is a traditional sweet prepared for Kaarthigai.
Enjoy this delectable dessert now...:)
Ingredients:
  • Puffed rice / pori                                   -  2 cups
  • Jaggery  pwd                                         -  ¾ cup
  • Ghee                                                    - 1 ½ tbsp
  • Coconut pieces                                     -  ¼ cup
  • Cardamom pwd                                     -  ¼ tsp
Method:

  1. Heat ghee in a pan.
  2. Add coconut pieces, cardamom pwd and pori to it.
  3. In a separate vessel, add jaggery and little water.
  4. Allow to heat, until it turns thick syrup.
  5. Remove from heat.
  6. Pour this syrup to the pori mix and combine well.
  7. Grease your palms with ghee and start making the mixture to medium sized balls
