This wonderful butter cookies are sweet and buttery with tasty crispy edges.  The preparation method is very easy with simple ingredients: butter, all purpose flour, milk pwd, icing sugar, vanilla extract and crushed cashew pieces  and it yields butterly, crumbly sweet cookies. 
This rich, melt in the mouth cookies makes a perfect evening snack with tea or coffee or a well deserved treat.  And no doubt this will disappear quickly from the plate…!!!
Ingredients:
  • Maida / all purpose flour                         - 250 g
  • Icing sugar                                            - 75 g
  • Milk pwd                                               - 75 g
  • Butter                                                   - 75 g
  • Vanilla extract                                       - 1 tsp
  • Crushed cashew pieces                         - 2 tbsp
  • Baking pwd                                           - 1 tsp
  • Salt                                                      - to taste
Method:
  1. Sift all purpose flour, icing sugar, milk pwd, baking pwd, salt together and mix well.
  2. Add the butter.
  3. Add vanilla extract and cream and stir thoroughly.
  4. Add crushed cashew pieces and combine.
  5. Wrap this dough into a foil and refrigerated for 1 hour.
  6. Preheat oven to 185 degrees.
  7. Now roll the dough to small balls and pat them flat.
  8. Place them on a greased tray and bake them for 12 to 15 mins
  1. Yummy, tasty butter cookies ready to enjoy...!

Coriander Chutney/ Green Chutney / Hara Dhaniya Chutney

I just made this hara chutney yesterday and it was wonderful. This is a very tasty recipe which can be served with rice or South Indian recipes like Idli or Dosa.
Also this is an excellent side dish as a dipping sauce for French fries, cutlets, chips or pakoras or as a spread for sandwiches.
If you like the flavor of coriander and Indian food, then you will certainly enjoy this eternal favorite…fresh coriander chutney..
Here is the easy to follow healthy recipe…:)
Ingredients:
  • Fresh coriander leaves                           - 2 cup
  • Coconut grated                                     - 1 cup
  • Green chillies                                        - 2 or 3
  • Ginger                                                  - ½ inch piece
  • Garlic                                                    - 2
  • Onion small                                           - 2
  • Cumin seed                                           - ½ tsp
  • Lemon juice                                          - 1 tsp
  • Sugar                                                   - 1 tsp
  • Salt                                                      - as required
Method:
  1. Grind coconut pieces in a blender.
  2. Add green chillies, ginger, garlic, onion, cumin and grind for a minute.
  3. Now add chopped coriander leaves and little water.
  4. Grind to smooth paste.
  5. Take it in a cup, add a tsp of lemon juice, salt and sugar.
  6. Combine well.
  7. Add little water if required.
  8. Serve it raw.
  1. Delicious and healthy coriander chutney ready to enjoy…!

Mutton Biryani / Easy Biryani Recipes

Mutton Biryani:
Mutton Biryani is one of the most exquisite, loved and favored dish in India. This is my Mom’s delicious recipe. The very thought of this biryani, will tickle the taste buds , which involves mutton pieces cooked in aromatic spices, ginger, garlic, mint leaves and yoghurd. 
This rice dish has  a prime place in most of the special occasions and get together parties…!!!
Here is the easy to follow recipe for you to giv a try…:)
Ingredients:
  • Mutton                          - ½ kg
  • Basmati rice                  - 2 cup
  • Green chilly                   - 2 or 3
  • Ginger                          - ½ inch piece
  • Garlic                            - 6 pods
  • Cashew                         - 5
  • Fried onion pieces         - ¼ cup
  • Yoghurd                       - 1 small cup
  • Onion                           - 2
  • Tomato                         - 2
  • Ghee                            - 2 tbsp
  • Oil                                - 3 tbsp
  • Turmeric pwd                - a pinch
  • Red chilly pwd              - 1 tbsp
  • Biryani masala pwd       - ½ tbsp
  • Fresh lemon juice          - 1 tbsp
  • Salt to taste
  • Chopped mint and coriander leaves    
Spices needed:
  • Cloves                          - 3
  • Cinnamon                     - 1
  • Carmamom                   - 1
  • Saunf                           - ½ tsp
  • Cumin                           - 1 tsp
  • Bay leaf                        - 1
  • Marathi moggu              - 1
Method:
  1. Wash mutton and drain water completely.
  2. Make a paste of green chillies, ginger, garlic, cashew and fried onion.
  3. Add ½ cup yoghurd to the paste and marinate the mutton pieces thoroughly for ½ an hour.
  4. Meanwhile, wash basmati rice and soak in water for 5 mins.
  5. Drain and keep it aside.
  6. Chop onion, tomato to pieces.
  7. Heat ghee and oil in a pressure pan.
  8. Add cloves, cinnamon, cardamom, saunf, cumin, bay leaves and marati moggu and allow to crackle.
  9. Add onion pieces and fry to golden.
  10. Add, mint and coriander leaves and sauté for 2 mins.
  11. Add turmeric pwd, red chilly pwd and combine well.
  12. Add chopped tomatoes and stir till oil separates.
  13. Now add the marinated mutton and sauté for 5 mins.
  14. Add 1 cup of water and pressure cook it, upto 3 whistles.
  15. Once the pressure goes, remove the lid and mix the contents.
  16. Now add the drained basmati rice, biryani masala pwd, yoghurd and salt.
  17. Add 2 ½ cups of water and combine well.
  18. Turn on the heat again
  19. Pressure cook upto 1 whistle and simmer the flame for 5 more mins.
  20. Turn off the flame.
  21. Once pressure is off, remove the lid, add a tbsp of fresh lemon juice and combine gently.
  22. Serve hot with onion raita or any gravy.

Here is the tasty healthy recipe for home made tomato juice.
There’s nothing like a glass of ice -cold, freshly made tomato juice, far better than, we’d ever buy in a bottle or can. It renders a mouthwatery taste and is able to reduce the fat below the skin.
As tomatoes contain lycopene, beta- carotene, Vit A , C and other nutrients,  it plays a major role in  lowering blood pressure and to boost immune function.
Try and enjoy this  delicious tomato juice now…:)
Ingredients:
  • Tomatoes                     - 3
  • Honey                           - 3 tsp
  • Pepper pwd                  - a pinch
  • Mint leaves to garnish
Method:
  • Boil 2 cups of water.
  • Drop the tomatoes in hot water.
  • Close for 5 mins
  • Now drop them in chill water for a minute.
  • The skin peels off easily.
  • Smash tomato in blender and strain with a not too fine strainer.
  • Add 1 cup of chill water and honey.
  • Stir well and serve chilled.
  • Sprinkle pepper pwd and garnish with fresh mint leaves.
  • Healthy and yummy Tomato juice ready to enjoy….:)

Chilli Chicken 65

Chilli Chicken 65 is a hot n spicy favorite for all non veg lovers. This is another famous dish from Indian Cuisine and seves great as an appetizer. Also this is a crowd pleaser and sure menu in special parties and get togethers.
There are two ways to prepare this. One is the authentic method to marinate the chicken pieces with home made spices and other to use masala packets available at shops. Usually, I prepare this easily and tasty with Sakthi masala packet.  And this time too, it turned out fantastic and very delicious…as you see...
Here is the simple and tasty recipe for you to enjoy…:)
Ingredients:
  • Boneless Chicken                       - ½ kg
  • Sakthi Chilli Chicken 65 masala - 1 packet
  • Curd                                         - 2 tbsp
  • Vinegar                                     - 1 tsp
  • Capsicum                                 - 1
  • Green chilli                                - 2
  • Lemon juice                              - ½ tbsp
  • Oil to fry
Method:
  • Cut the chicken to small pieces and dry it with a paper towel.
  • Take 4 tbsp chilli chicken masala, curd and vinegar in a bowl and mix well.
  • Soak chicken pieces and allow to marinade for 1 hour.
  • Heat oil in a fry pan.
  • Deep fry the chicken pieces in low flame till it becomes golden brown color.
  • Keep aside in a paper towel to remove the oil content.
  • Chop capsicum to triangular shapes and slit green chillies lengthwise.
  • Heat 1 tbsp of oil in a pan.
  • Sauté capsicum and green chillies for a minute.
  • Add the fried chicken pieces to it and sauté continuously.
  • Remove from flame.
  • Now add lemon juice and garnish with chopped coriander leaves
  • Tasty Chilli Chicken 65 is ready to enjoy...:)
